Crockpot Peach Crisp **** update

I found this recipe at bella online and I am cooking it as we speak I will let you know how it turns out. ***** Update this was delicious. The only thing I did was used real peaches and a bit of liquid.
Crockpot Peach Crisp

•1/2 cup sugar
•1/2 cup brown sugar
•1/3 cup baking mix, such as Bisquick®
•2/3 cup old-fashioned oats
•1/2 tsp. cinnamon
•2 large cans (28 oz. each) peaches, drained

Spray the inside of a slow cooker with non-stick cooking spray. Stir all the dry ingredients together in a large mixing bowl. Stir in the peaches. Pour the mixture into the pot. Cover and cook on low for 4 to 5 hours.

My quiet moment of peace

This morning as I sit here playing a game on the internet and blogging a bit I notice how quite it is in this house. I am the only one up and besides my T.V there is no other noise. I can hear the cars passing outside, the neighbor as he mows his yard, the people down the street as they begin to build their porch and my husband as he softly snores. Oh the peace in this moment is worth getting up a bit early even if I would not have been up if the alarm was not accidently set. I think how I used to get up at the crack of dawn and go to work. Those were great days and I always enjoyed the beauty in a sunny warm morning. So as I sit here and think of the six word phase I will share I come to the conclusion that it will be:

Take Your Child Fishing


Taking a child fishing starts an interest in the outdoors. A simple trip to the park fishing hole or out in the country to the creek bed will be an event that will never be forgotten. Teaching them to have fun while fishing will not set up any unachievable goals or make that time when no fish are caught seem like such a downfall. Even catching bait can be fun. I can remember my mother in law taking my children to look for worms and grubs and once in while cutting up hotdogs or using big red chewing gum. Sometimes the stories about the bait is as big as the fishing story itself. So this summer go fishing and have a bit of fun.

Freezing Fruits and Veggies

We are in the season where fruits and veggies are plentiful. With such a wide variety the only problem is that we may not be able to use it all up at one time. The one thing that we can do is to freeze the fruits and veggies and save them up for a later use.

Some tips to remember when freezing fruits and vegetables are:
  • Blanch vegetables first, then submerge in ice water. Dry thoroughly.
  • Freeze fruits and vegetables quickly.
  • Store in heavy-weight, air-tight containers or freezer bags.
  • Fill containers to the top and remove as much air as possible from freezer bags.
  • Vegetables that hold up well to cooking (corn, peas) generally freeze well, too.
  • For better texture, try eating previously frozen fruit before it’s completely thawed.
  • Fruits and veggies freeze best at 0-degrees F or colder.
  • Store frozen fruits for about a year; vegetables, about 18 months. (Storing longer is fine, but the quality may decline.)

When fruits and veggies freeze the water in fruits and veggies expand which causes ice crystals to puncture and break cell walls in the fruit and veggie. Because of the process some fruits and veggies can become mushy when thawed. To try to avoid this as much as possible freeze fruits and veggies as soon as possible. Colder temps produce smaller ice crystals that will do less damage to cell walls.It is also recommended to eat frozen fruits before completely thawed. Frozen fruits are often a special treat in the hot summer weather .

June 4th is Cheese Day celebrate with Summer Berry Cheese Pie

Summer Berry Cheese Pie


1 pint fresh strawberries, sliced, divided
1 tablespoon lemon juice
2/3 cup sugar, divided
1 package (8 ounces) cream cheese, softened
1 teaspoon grated lemon peel
1 graham cracker crust (9 inches)
2 tablespoons cornstarch
3 to 4 drops red food coloring, optional
1 pint fresh blueberries

In a large bowl, combine half of the strawberries and lemon juice; mash berries. Add 1/3 cup plus 2 tablespoons sugar; set aside. In a large bowl, combine the cream cheese, lemon peel and remaining sugar until smooth. Spread into the crust. In a large saucepan, combine cornstarch and reserved strawberry mixture until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in food coloring if desired. Cool slightly. Fold in blueberries and remaining strawberries. Spread over cream cheese mixture. Cover and refrigerate for at least 3 hours. Yield: 6-8 servings.

Lawn Mower Safety

Safety Alert: Lawn Mowing Safety
A few years ago a girlfriend of mine received word while we working together that her nephew had been in an accident. Her nephew was 10 years old and had been in an accident. It sounded pretty serious and she left at once to go find out what was wrong. What she found out was that her nephew had his foot cut off with a riding lawn mower. It would mean the next few years of him going through surgeres etc... Had they been careless with the lawnmower? No the parents were there yet an accident happened and this sort of accident happens to nearly 75,000 Americans each year with 10,000 injuries involving children. The American Academy of Orthopaedic Surgery and the American Academy of Pediatrics recommend that children under age 16 not opperate a lawn mower. Now I know what many of you are thinking I too was mowing before the age of 16. My father had a lawn mowing business and his children (me included) all helped out. The thing is that children need to be taught about the safety of lawn mowers and be under close supervision. Here are some safety reminders about lawn mowers:


  • Children should never ride as a passenger on a lawn mower. Children on riding mowers have the potential to fall and be run over by the mower, resulting in serious injury and/or amputation of the extremities.

  • Any time adults are using a lawn mower, they should make sure to keep children out of the yard and in a well-supervised area to avoid injury.

  • Lawn mower operators should wear protective gear including pants, steel-toed boots, goggles and ear protection, excluding portable music players.

  • Make sure all debris (rocks, sticks and toys) are removed from the yard before you begin mowing. Loose objects can project out of the lawn mower and cause serious injury.

  • Riding mowers have the potential to tip or roll over if used on slopes or steep hills, which can result in serious injury.

June is Candy Month: bottle cap candy


Do you remember the soda pop flavored candy known as bottle caps? My favorites were the cola and rootbeer.

Peanut Butter Cookie Ice Cream Sandwich



1 1/2 cups (3 sticks) unsalted butter, at room temperature
2 cups rolled oats
1 1/2 cups brown sugar
3/4 cup smooth peanut butter
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
2 pints vanilla ice cream

In a large saucepan, over medium heat, melt ½ cup of the butter. Add the oats and cook until golden, about 5 minutes. Spread on a baking sheet to cool. Using an electric mixer on high, beat the remaining butter and the sugar until light and fluffy. Reduce speed to medium and add the peanut butter and vanilla extract. Reduce to low and slowly add the flour. Stir in the oats. Cover and refrigerate for 30 minutes. Heat oven to 375° F. Form 16 to 20 large cookies, using about ¼ cup of dough for each. Place on parchment-or foil-lined baking sheets, 2 inches apart. Flatten slightly using the tines of a fork. Bake until golden but not quite set, about 20 minutes. Let cool on the sheets for 10 minutes. Transfer to a rack to finish cooling. Sandwich about 1/3 cup of the ice cream between 2 cookies. Serve immediately, or wrap in plastic and freeze.

Week in Reflection


This week has went by quite fast with teens leaving, heart ache and breakups for some and great deals I found at the store.
  1. The week started with me going shopping and I had so much fun there were so many great deals to be found
  2. My son packed for his mission trip this week and has left. I am so proud of him and he is having such a great time. I have to say that he is the only one in the family to go to a different country so that is so great. I pray that those he meets will be open to the message and that he will have enjoy his trip as well.
  3. I had a wonderful phonecall from Princess the other day . It seems that she is loving the outside. She is so much like her mommy always wanting to be outside
  4. My hubby hooked up the original Nintendo in the living room and the kids are loving it. Going back to games like donkey kong, mario brothers, centiped, and pac man seems so retro but always so much fun
  5. I am really thankful to hubby this week he has been so helpful. He is feeling so much better and if he can get is sugar under controll he will be doing great. Thank you babe I love you.
  6. The pool is not as big as the kids wanted but it saved money and will still get them wet. I hope to get it up later this week.
  7. Last but surely not the least is the fact that my youngest daughter had a life event. She broke up with her boy friend. She was upset about it but I think she is finally getting over it. She is so young (only 18) that I know that the right young man and her will be together one day.

Frozen Iced Tea


June is the month to celebrate Iced Tea and no better way to celebrate than with a frozen treat inspired by Iced Tea.

3 family-sized tea bags
6 cups boiling water
1 cup sugar
1/2 cup water
2 tablespoons light-colored corn syrup
6 tablespoons fresh lemon juice
Lemon slices (optional)
Mint sprigs (optional)

Place tea bags in a large bowl. Pour boiling water over tea bags; steep 10 minutes. Remove and discard tea bags. Combine sugar, 1/2 cup water, and light-colored corn syrup in a saucepan; bring to a boil over medium-high heat. Remove from heat; let stand 5 minutes. Add sugar mixture and fresh lemon juice to tea; stir to combine. Let cool to room temperature. Pour cooled tea mixture into a 13 x 9-inch baking dish; cover and freeze for at least 6 hours or until firm. Remove tea mixture from freezer; scrape entire mixture with a fork until fluffy. Spoon into a container; cover and freeze for up to 1 month. Garnish with lemon slices and mint sprigs, if desired.

Saving Money with Coupons, watching for store sells, buying in bulk


With a house full of teens and hefty appetites buying groceries on a budget can often be difficult. There are always the little things that they want and then there are the meals that will please hubby and still suffice the teens. How do you get all this on a budget? Well, there are coupons that help out Coupons can be found in Sundays paper, in magazines (all you is a great source), on the Internet (facebook has been great resource). Free Sample Freak and Coupon Dad are a couple of great resources on the Internet


Watch out for store sales whether advertised or unadvertised. Sometimes I will walk into a grocery store and find that something is at a tremendous sale but was an unadvertised sale. Kroger's is one of my favorite stores to find this type of sale. I have found cleaners at close outs at .49 a bottle, produce marked downs are always great as they will slash prices before they expire and milk and dairy products are another great place to find unadvertised sales. Check those shoppers and printed ads before heading to the store and making a list will help you to find the best buys and price check against other stores. You may be lucky enough to have a store in your area that will price match advertised sales.


You may find that buying in bulk is also a great way to shop. However you need to be aware to see which is the better buy the bulk buy or the smaller package. You may be surprised to see this as I have found it both ways. If you do buy in bulk I love to break it down into meals as I shop, you can freeze fruit that you get a great buy in that you will not be able to use with in the perishable time period. You can even freeze cheese which is a tip that I just learned from a fellow blogger. when freezing browned meat or the meat you will use for the meal that you will also need cheese with freeze them together so when it comes time to prepare the meal you have it all on hand.

Aloha Friday: Can you Spell?


Aloha Friday is the day in Hawaii where they take it easy to prepare for the weekend. So the meme Aloha Friday follow suits and is where bloggers ask each other easy to answer questions.


With all the excitement I have been seeing on T.V. over the spelling bee I started thinking how I would do. Now I can not spell worth anything and I am so happy to know that I can have spell check on the computer. I miss it when ever I need to write with pen and paper. My son on the other hand was the spelling champ at his school. He is a wonderful speller but there are talents that he lacks as well. My daughter spells like me but is majorly talented at art and yet another child of mine is terrific at math. We all have our own talents which leads me to my question.
What was your favorite subject in school or where is your talent?

With six (6) children and volunteering as a scout leader, Sunday school teacher as well as other positions you would think I would have a knack for crafts but you would be wrong. I love to search out perfect crafts to make to fit the need I have at the time. I learn from others and use those same moves, get ideas shared with me by those who are creative and use the Internet to find the perfect (normally easy ) craft. Recently I found out about a wonderful resource the Out of Office blog from Fed Ex Online.


The Out of Office Blog from Fed Ex Online has been in existence since December of 2009. So in reality it is a rather new source of information. Here you will find ideas, templates and tools to use so that you can accomplish a variety of projects. Helping you out are five corporate blogger who will help you with create a variety of projects. Wow when you only thought of FedEx as that little truck that brought you stuff to a wonderful resource online you will be delightfully surprised. There are tips for crafts to do this summer, ideas to help celebrate events and holidays and even ideas to help build your busy. In the future the bloggers at The Out of Office blog would love to add how to videos, themed series, contests and giveaways as well as have guest bloggers and customers to share their input.

Stuffed Pork Burgers



1/2 cup chopped fresh mushrooms
1/4 cup sliced green onions
1/4 teaspoon garlic powder
1 tablespoon butter
2 tablespoons Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds ground pork
4 kaiser rolls, split
4 lettuce leaves
4 slices red onion
8 thin slices tomato
Prepared mustard

In a small skillet, saute the mushrooms, onions and garlic powder in butter until vegetables are tender. Remove from the heat. In a large bowl, combine the Worcestershire sauce, mustard, salt and pepper. Crumble pork over mixture and mix well. Shape into eight patties. Spoon mushroom mixture into the center of four patties to within 1/2-in. of edges. Top with remaining patties; pinch edges to seal. Grill, uncovered, over medium heat for 5-7 minutes on each side or until a meat thermometer reads 160° and meat juices run clear. Serve on rolls with the lettuce, onion, tomato and mustard. Yield: 4 servings.

Grilled Everything Salad

Its grilling season and everything taste good off the grill during grilling season so try this salad for supper

2 tablespoons prepared horseradish
3 tablespoons red wine vinegar
5 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
1 10-ounce package (or 2 bunches) fresh spinach, stems removed
1 1/2 pounds grilled flank steak, thinly sliced (6 cups)
1 large onion, thickly sliced and grilled (3 cups)
3 carrots, thinly sliced and grilled (3 cups)
3 plum tomatoes, halved and grilled

To make the vinaigrette, whisk together the horseradish, vinegar, olive oil, salt, and pepper in a small bowl. Set aside. Arrange the spinach on a serving platter. Slice the steak and arrange it atop the spinach, along with the grilled vegetables. Drizzle with the vinaigrette and serve.

Sea Star Butter Cookies



1 cup butter, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1/4 teaspoon salt

Beat butter at medium speed with an electric mixer 2 minutes or until creamy. Gradually add sugar, beating well. Add egg and vanilla, beating well. Gradually add flour and salt, beating until blended. Divide dough in half; cover and chill 1 hour. Roll each portion of dough to 1/4-inch thickness on a lightly floured surface. Cut with cookie cutters. Place on lightly greased baking sheets. Bake at 350° for 8 to 10 minutes or until edges of cookies are lightly browned. Cool cookies 1 minute on baking sheets; remove to wire racks to cool completely

Vintage Recipe Iced Tea


June is iced tea month and I thought I would share a couple of vintage recipes for iced tea. You can find other great recipes for iced tea here




This recipe appeared in a cookbook "Aunt Babette's Cook Book, Foreign and Domestic Receipts for the Household" by Aunt Babette, published by Bloch Publishing and Printing Company, Chicago, in 1889.


Allow a teaspoonful of tea for each cup, put the tea in a porcelain-lined or china teapot, and pour as much cold water on it as you require for your tea. Set this in ice-chest for twelve hours or more. You will find this tea more delicate in flavor than when prepared with the boiling water. It will not have any bitter taste at all, which tea made with boiling water always has, if allowed to stand any length of time


Another recipe for Natural Iced Tea found in the cookbook "Buckeye Cookery and Practical Housekeeping" published by Buckeye Publishing Company, Minneapolis, in 1877.

Prepare tea in the morning, making it stronger and sweeter than usual; strain and pour into a clean, stone jug or glass bottle, and set aside in the ice chest until ready to use. Drink from goblets without cream. Serve ice broken in small pieces on a platter nicely garnished with well-washed grape leaves. Iced tea may be prepared from either green tea or black tea alone, but it is considered an improvement to mix the two.
Lemon Iced Tea
Tea made like that for iced tea (or that left in the teapot after a meal), with sugar to taste, a slice or two of lemon, a little of the juice, and some pieces of cracked ice, makes a delightful drink. Serve in glasses.

June is Candy Month

Can you believe they actually have a national day to celebrate candy? Many of the candies that we around when I was a kid are not on the market any more while others are as popular as ever. I will take this month of June and share some of my all time favorites.

Have Fun with Bubbles


There are many ways to have fun with bubbles. I have an aunt who is a school teacher and every summer during summer school she would have fun with bubbles. There are so many lessons that can be taught through bubbles.



  • Using a piece of paper create a cone tape the small opening so it keeps its shape. Allow the wide end to sit in bubble solution for a few seconds. Then blowing on the cone like a horn blow the bubbles You may have to flick the paper a bit to allow the bubbles to fly.

  • Make super strong bubbles using this recipe from Grandparents.com
    1 package unflavored gelatin
    1 cup just-boiled water
    1 1/2 to 2 ounces glycerin (available in the skin care aisle or at health food stores)
    8 1/2 ounces Johnson’s Baby Shampoo
    Stir the gelatin into the hot water until it’s dissolved. Mix in the glycerin and shampoo, gently stirring. The solution will gel as it cools.

  • Make your own bubble wands. Look around the house and find things that would be fun to make bubbles. For example a six pack holder can make multiple bubbles, your hand making an o.k. sign, create a bubble blower out of pipe cleaners.

Egg Salad Sandwich


June 3rd is considered egg day and while there are many ways to prepare eggs here is one that I love.

•6 hard-boiled eggs
•1 tablespoon of mayonnaise
•1 tablespoon of Dijon mustard
•½ a red onion chopped fine
•Salt and pepper to taste

Mash everything together. Spread on a slice of bread. Top with another slice of bread. Eat.

Thankful Thursday


Well I was up on this early Thursday morning as my son left on his mission trip at 4 a.m. I was able to see the world my God created in a new perspective. The birds were chirping that early and the peacefulness of it all was wondrous. So in a way I could say I am thankful for being up that early and enjoying the early morning. I am also thankful that the storm that blew in early in the morning was quick and left without damage. If all storms in life were like that we could all be really thankful. I am thankful that my son has a heart for missions. He loves to tell others about the story of Jesus. The other day he sat down and read a devotional style book and was so eager to share with me. He learns so much and these learning experiences seem to want to bounce out of him. One odd thing that happened is that he found his jacket at the church this morning. I am so thankful for that. It is his letter men jacket and we had not been able to find it. We had looked around the church but with no luck til this morning. It all seems to be coming together and that is something that we can take so much comfort in and be thankful for.

My mama loves pecan pie, my hubby loves pecan pie and while not my favorite pie of all it ranks up on the list of favorites very high. Here is a recipe that we have used before and love.


Pecan Pie

1 c brown sugar

1 c white syrup

1 c pecans

3 eggs beaten

1/4 c butter

pinch of salt


Stir together and pour in the shell. Bake at 350 degrees for about 40 minutes Check to see if filling is set nutsh should have rised to top.

Fishers of Men



Tomorrow my son will leave on a mission trip with his youth group. They are going to an area where the church is not looked highly upon. The week they will be in their location he will be part of a large group putting on a gigantic block party. I pray that those that he meets are welcome to the fun and the message that is being sent. That they are receptive and a seed is planted, one that will grow and be led by our heavenly father. The lord has called upon this group to be fishers of men.
