Cooing with Dried Plums


Dried Plums are good source of dietary fiber. They contain a considerable amount of insoluble fiber and are often used as a home remedy for prevention and constipation of constipation. Plums contain an assortment of healthy components of vitamins and minerals An excellent source of vitamins A,(ascorbic acid) folate and vitamin , vitamin B1 (thiamine) B2 (riboflain) B3 (niacin) B6 and vitaminE



Plums can be dehydrated whole. If you pit the fruit and cut it in half or into quarters the results will be better. Wash the plum, slice in half, remove the pit and pop back to expose more surface to air. Slicing into quarters can be done as well if desired. Place the fruit on food dehydrator trays with cut side up.

Plums can be dried in a 250 degree oven as well. Cut plums in half lengthwise and remove pits. Halves should be cut into 2 inch wedges. Plums should be arranged on parchment lined baking sheet, cut side up. an inch apart. Sprinkle with thyme and leave in oven 3 hours. 


Cooking with dried plums 



2 roasting chicken, cut into pieces
12 oz jar apricot preserves
15 medium dried plum, pitted
1⁄3 cup olive oil
1 tbsp white vinegar
3 pinch salt
20 grinds black pepper
10 clove garlic, peeled
20 to 30 sage leaf

Prep 10 min Cook 40 min Ready 50 min
Preheat oven to 400 degrees F.
Trim any extra fat from the chicken pieces and transfer them to a large roasting pan or broiler pan. If you don't have a roasting pan that's large enough, use 2 identical 13 by 9-inch baking pans.
Toss all of the ingredients together with the chicken until the chicken is evenly coated with the sauce. Arrange the chicken pieces skin-side up in the pan, spaced evenly apart.
If you're looking to prepare in advance, you can do everything up to this point and cover the roasting dishes and refrigerate until you're ready to roast the chicken.
Roast, uncovered, until the tops of the chicken pieces are browned and the chicken is cooked through, and the juices run clear, about 35 to 40 minutes.
