Peanut Butter and Banana Spirals
1/2 cup reduced-fat peanut butter
1/3 cup vanilla low-fat yogurt
1 tablespoon orange juice
2 ripe bananas, sliced
4 (8-inch) fat-free flour tortillas
2 tablespoons honey-crunch wheat germ
1/4 teaspoon ground cinnamon
Combine peanut butter and yogurt, stirring until smooth. Drizzle juice over bananas; toss gently to coat. Spread about 3 tablespoons peanut butter mixture over each tortilla, leaving a 1/2-inch border. Arrange about 1/3 cup banana slices in a single layer over peanut butter mixture. Combine wheat germ and cinnamon; sprinkle evenly over banana slices. Roll up. Slice each roll into 6 pieces.

Perfect Grilling Dessert : Smores Brownies
9 whole cinnamon graham crackers, halved crosswise
3/4 cup unsalted butter, cut up
4 oz. unsweetened chocolate, coarsely chopped
1 cup sugar
1 cup packed light brown sugar
2 teaspoons vanilla extract
3 eggs, lightly beaten
1 cup all-purpose flour
1 1/2 cups semisweet or milk chocolate chips
35 regular-sized marshmallows
Heat oven to 350°F. Spray bottom of 13x9-inch baking pan with cooking spray. Arrange graham crackers over bottom of pan, overlapping slightly or breaking to fit, if necessary.
Melt butter and unsweetened chocolate in medium saucepan over low heat, stirring frequently. Remove from heat; stir in sugar, brown sugar and vanilla until blended. Stir in eggs until blended and smooth; stir in flour. (Batter will be smooth, thick and shiny.) Stir in chocolate chips. Spoon and gently spread over graham crackers. Bake 35 to 40 minutes or until top is just set and toothpick inserted in center comes out with moist crumbs attached.
Heat broiler. Place marshmallows on their sides evenly over top of brownies. Broil 30 seconds to 2 minutes or until marshmallows are puffed and tops are golden brown. Serve slightly warm or at room temperature.

Spicy Red Eyed Baked Beans
One summer time food that is needed at picnics, bbqs and other summer time meals is a good old serving of baked beans. This recipe will keep you happy as well as kick it up a notch as well. Hope you enjoy this recipe I found on fine cooking website
1 lb. dried pinto beans
3 Tbs. unsalted butter
1 medium onion, chopped
2 large cloves garlic, chopped
1 Tbs. ancho chile powder
1 tsp. chipotle chile powder
1 tsp. ground cumin
1/4 tsp. ground allspice
Freshly ground black pepper
6 cups lower-salt beef broth
1 meaty smoked ham hock
1 cup brewed coffee
1/3 cup mild molasses, such as Grandma's Original
1/3 cup ketchup
1 Tbs. Worcestershire sauce
2 sprigs fresh oregano
1 Tbs. bourbon (optional)
Kosher salt
If you cant soak beans overnight then put them in a 4 quart saucepan and add enough cold water to cover them by 2 inches and bring to a boil. Remove from the heat and soak for 2 hours Drain beans and continue with the recipe.
Position a rack in the center of the oven and heat the oven to 300°F. Melt the butter in a 5- to 6-quart Dutch oven over medium heat. Add the onion and garlic and cook, stirring occasionally, until softened, 5 to 7 minutes. Add the chile powders, cumin, allspice, and 1/2 tsp. pepper. Cook, stirring, until aromatic, about 30 seconds. Add the broth and ham hock. Stir to combine. Add the beans and bring just to a simmer. Cover and bake until the beans are easy to bite into but still a little mealy in texture, 45 to 60 minutes.
Stir in the coffee, molasses, ketchup, Worcestershire, and oregano. Bake, uncovered, until the beans are fully tender, 30 to 60 minutes more. Cool to room temperature. Discard the oregano stems and the skin from the ham hock. Cut the meat off the bone and chop. Add the meat to the beans and discard the bone. Cover and refrigerate overnight.
To finish, bring to a simmer, uncovered, over medium heat. Reduce the heat to low and continue to simmer until the sauce is reduced to the consistency of thin gravy, stirring occasionally so the bottom doesn't burn, 40 to 60 minutes. Stir in the bourbon (if using) and season the beans to taste with salt and pepper.

Easy Ice cream Pie
1.Press ½ gallon (4 pints) softened vanilla ice cream into a 9-inch springform pan. Freeze until slightly firm, 10 to 15 minutes.
2.Top with 1 cup caramel sauce (slightly warmed, if too thick) and ½ cup toasted sliced almonds. Freeze until firm, at least 1 hour and up to 2 days. To serve, remove from pan and slice.

Cool Off With Fruited Ice Cubes
Summer is here and if you are like me you will be wanting to find a sweet way to cool off. Well these fruited ice cubes may do just the trick and they are easy to make. Simply drop some fresh berries, mint leaves, ginger bits and strips of citrus vest into empty ice cube trays. Add water to trays and freeze and you will be ready for that great summer time drink with some tasty ice.

Teach Our children About Memorial Day
With the world as fast paced as it is now sometimes important lessons are not taught to our children. Memorial day was always discussed in our family. Was it yours? Want to share the importance of this day with your child? Here are some tips to do that.
Share with your child that Memorial Day is an important day for the nation. It is the day to show respect and honor Americans who have died while defending the country as well as a day to remember all of our loved ones who have passed on as well whether they were in the armed services or not. Have them to share memories of the loved ones you honored if it is not too stressful on the child. You may also want to share your own memories with them.
Find a memorial day activity in your community and participate. It is also a good idea to take time to display a flag with respect and dignity. Share with them the meaning of a flag at half staff and the important steps it takes to raise or lower a flag.
In our family my husbands father is a veteran and loves to talk to children. See if you can find a veteran in your community would take the opportunity to talk to your child and find out how important Memorial Day is to them. I have worked in nursing homes where the veterans are proud of the service they gave and love it when groups come in to honor them. Making thank you cards for veterans is a great idea and a way to have your child show respect and honor.

Wupzey Review and Giveaway
We all know as parents that children make messes and do it very often. Without these little messes I am not sure where I would be in in live but I dare say that if there was anything that would help me make the mess less work I would have gladly welcome it. Well for those of us who have little ones who are learning how to feed their selves while sitting in the highchair the perfect product is available for us. The Wupzey was created by a mom who was a bit tired of having a large mess after her child fed herself. Unable to find anything on the market that really did the job she desired she invented the Wupzey the highchair food catcher.
The wupzey is lightweight, compact and durable. The wupzey is easy to attach and detach, clean and able to store on the highchair. We all know what sort of mess can be found under the highchair after the meal is over. Just imagine this mess in a contained area that is strong enough to catch sippy cups, toys and utensils. Cleaning is easy as well because the Wupzey is completely machine washable.
The mother who invented the Wupzey has also created a line of products for children. The line includes shopping/diner seat covers, bibs, coveralls, floor mats and car seat covers. All products were designed to reduce work and to save time and energy.
My thoughts: I love the wupzey easy to use and I love how easily it goes on and off and when needed easily is cleaned by the washing machine. With all the things that life throws at me it is nice to have one thing in life that helps to make it easier.
