Minty Green Chocolate Chip Cookies for St. Patricks Day

 



2 cups butter, very soft
1 1/2 cups sugar
2 cups brown sugar
3 eggs
2 tsp vanilla
Green food coloring (I used gel food coloring)
6 cups flour
1 1/2 tsp salt
1 1/2 tsp baking soda
4 cups mint chocolate chips or andes mint chocolate candies chopped up

Cream butter and sugars in a large bowl till creamy. Beat in eggs, vanilla, and green food coloring. Add flour, salt, and baking soda. Stir till blended, then stir in the mint chocolate chips.
Drop by tablespoonfuls onto lightly greased or silpat lined cookie sheets.
Bake at 350° for 10-12 minutes.
