Smothered farm Chicken


 

  • 2 servings of chicken (we used boneless skinless breasts)
  • ½ tsp sea salt
  • ½ tsp fresh ground black pepper
  • 2 tsp Dijon mustard
  • 2 tsp mayonnaise
  • 2oz grass-fed cheddar cheese, shredded (optional)
  • 4 slices thick cut bacon
  • 1 cup thinly sliced onion
  • 1 medium-sized tomato, diced
Preheat the oven to 350 degrees F. Make sure the chicken is of uniform thickness (pound it down if you need to). Place the chicken onto a baking pan and season with the salt and pepper. In a small bowl mix together the Dijon mustard and mayonnaise and then spread it evenly on the chicken. Bake for 25-30 minutes, or until cooked through
If using the cheddar, sprinkle it right onto the chicken as soon as it comes out of the oven; the residual heat will melt the cheese.
In the meantime, fry the bacon in a heavy skillet until crisp. Remove the bacon from the pan and drain all but 1 Tbs of the drippings. Add the thinly sliced onion to the pan with bacon drippings and cook on medium heat for 10-15 minutes, or until onions are translucent and browning.
Roughly chop the crisp bacon and prepare to assemble the chicken.
Place a piece of chicken onto a plate and top with a portion of the fried onions, followed by the crumbled bacon, and then the fresh tomatoes. Garnish with fresh chives or parsley if desired.

Butterscotch Trifle Recipe


 

This tasty dessert is easy enough for any night of the week and tasty enough for special Sunday dinner 


  • 1 box butterscotch pudding mix
  • Crushed Vanilla Wafers
  • Cool Whip
  • 2 C milk

n a mixing bowl, whisk together the milk and pudding mix. Allow to firm up, about five minutes.
Layer the bottom of two dessert glasses (or more, depending on the size of your glasses. Mine were 12 fl oz glasses) with some of the crushed vanilla wafers. Spoon a layer of the pudding over the crushed wafers and smooth out. Spoon a layer of cool whip over the pudding and spread out. Repeat this process one more time, ending with a layer of cool whip.

Peanut Butter Apple Crumble




Filling

6 granny smith apples , peeled, cored, and diced

1/2 cup creamy peanut butter

3/4 cup light brown sugar , packed

1 tsp. ground cinnamon

1 T. all-purpose flour

Topping

1/2 cup light brown sugar , packed

3/4 cup quick cooking oats

3/4 cup all-purpose flour

1/4 cup (1/2 stick) butter, cold

1/2 cup creamy peanut butter

Instructions

Crumble

In a large bowl, add flour, oats, and sugar. Whisk together until incorporated and there are no lumps.

Add in the butter and peanut butter. Using a fork, cut in the butter/peanut butter until it resembles small pebbles. Set aside.

Filling

In a large bowl, add in brown sugar, flour, and cinnamon. Whisk together until combined and no lumps 

are left.

Add in the peanut butter and stir with spatula until it's incorporated into the dry mixture.

Add in the apples and stir until the apples are completely coated.

Pour the apples into a 10-inch pie plate. Pile the crumble topping on top of the filling.

Place into a 350 degree oven for 40 - 45 minutes or until golden brown and bubbly.

Bit of History on Uncle Sam Day





Today is Uncle Sam Day. NO!!! Not your uncle Sam but the Uncle Sam that represents the United States. 




Where and How did Uncle Sam come about?? Well to tell you what I know there are more than one story behind the name. One story is about soldiers near New York and the meat that was delivered to them The meat was delivered in barrels stamped with the letters "U.S." The meat may have belonged to the United Stats but the man meeting the supply demand was Samuel Wilson. The soldiers started jokingly calling him "Uncle Sam" The second story has to do with Irish Immigrants and their native tongue abbreviation for the United States was "SAM" I like the first story what about you. Uncle Sam Day is said to occur on the 13 of September the same date as Sam the meat man would have celebrated his birthday. 

Did you know that there are other human symbols that represent the United States??? 
  • Brother Jonathan and I truly have a brother named Jonathon but this Brother was a symbol to the United States prior to Uncle Sam. He was first introduced by George Washington as a symbol that represented one of his governors Later it was costumed as a strong young man in striped britches that was in the prime of his life and often stood to show the rocky relations between the United States and Great Britain. Eventually before disappearing Brother Jonathan would come to symbolize the Union during the Civil War 

Brother Jonathan celebrates the American centenary by straddling the towers of the main building at the Philadelphia World's Fair of 1876.
