Stay Safe Stay Well


We all want to go out and about and be together to the start the New Year but that is something that we have to be careful with. The covid virus is up in nearly all neighbor hoods. The best way to prevent illness is to avoid being exposed in the first place. Here are some steps you can take to do just that:



  • stay at least 6 feet away from others 
  • wear a mask and make sure to cover your mouth and nose when around others. 
  • wash your hands often with soap and water or use hand sanitizer that has at least 60% alcohol.
  • avoid crowded indoor spaces and ensure indoor spaces that are properly ventilated by bringing in outdoor air Outdoor areas with good ventilation helps to reduce the risk of exposure
  • If you are sick be considerate stay home and isolate away from others 
  • Have a routine to clean and disinfect surfaces that are often touched.

What to do with leftover ham?? Make Deviled Ham for sandwiches

 Deviled Ham Spread

From Cook's Country Magazine




12 ounces thinly sliced deli Black Forest ham, torn into 1/2-inch pieces
4 tablespoons unsalted butter, softened
5 tablespoons mayonnaise
3 tablespoons Dijon mustard
2 tablespoons sweet pickle relish
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon ground allspice

Directions:
1. Pulse ham in food processor until coarsely chopped, about 12 pulses.  Add butter and pulse until incorporated and ham is finely chopped, about 10 pulses.

2. Transfer mixture to bowl and stir in mayonnaise, mustard, relish, pepper, cayenne, and allspice until thoroughly combined.  Cover and refrigerate for at least 30 minutes before serving.  Spread will keep, refrigerated, for up to 3 days.

Makes about 2 cups

The Day The WOrld Met Donald


 

The beloved Donald Duck was first introduced to the world December 30th 1934. Donald typically appears in a sailor shirt that allows his tail feathers to peek out. His sailor hat may cover his head but he often gets irritated and blows his stack. As his semi intelligible speech is heard with his mischievous acts that often lead him to demonstrate his temperamental personality. Perhaps it is a good thing that Donald Duck has such good friends. 




Donald Duck has appeared in comedic roles in animated cartoons since his first debut in The Wise Little Hen in 1934. That was the start of a long career for Donald who was often pitted against Mickey Mouse. Donald Duck also brought with him his beloved girlfriend Daisy and his nephews Huey, Dewey, and Louie.  


Donald Duck has been featured in comics around the world. One artist who created Donald also created characters such as Donald's rich uncle Scrooge McDuck.

Keep Warm with Hot Chocolate #recuoe

 Looks like the weather outside will be a bit frightful. My personal favorite thing to do is to sit inside the house ... look out the weather and enjoy a cup of hot chocolate. Are you like me ?? If so you may want to try this delicious hot chocolate drink mix. 



  • 2 Tbsp Hershey’s cocoa powder unsweetened
  • 1/2 cup white sugar (use 1/4 cup sugar if you like your hot chocolate less sweet)
  • 3 3/4 cup milk
  • 1/4 cup milk (to be used separately from other milk)

1. Stir together the cocoa powder and sugar in a medium saucepan.
2. Add 1/4 cup of milk and stir constantly over medium-high heat until mixture begins to boil. Continue stirring constantly until all sugar is dissolved. Do not let it burn.
3. Add the remaining milk to the pan and bring the heat up to the desired temperature. 
Top with marshmallows or drink it straight up!

Teaching children the true Christmas story is a very important lesson in our family and can be very fun as well. A regular devotion time is a perfect time to share with your child about the first Christmas. Sharing stories, asking questions and holding discussions can help them understand even more. Share with your child the characters who were involved with the Christmas story from Mary and Joseph and Baby Jesus to the wisemen and shepherds and of course the angels that announced his birth. Ask them questions about the story and have them to tell you the story using their own words. You may want to include these two verses into your lessons



Isaiah 9:6 For a child is born to us, a son is given to us. And the government will rest on his shoulders. These will be His royal titles: Wonderful Counselor, Mighty God, Everlasting Father, Prince of Peace.

Easy Fudge Recipes

 




I just love fudge it is so good but oh so sweet When I was growing up I only thought there was one type of fudge and that was moms chocolate Now that I am older I realize that there are so many other different types I hope you enjoy this fudge recipe for Orange Dreamsicl Fudge

3/4 Cup Butter (1 1/2 sticks)

3 cups sugar

1 5 oz can evaporated milk (2/3 cup)

1 12 oz package vanilla chips

1 7 oz jar Marshmallow Crème

1 ½ tea. orange flavoring (extract)

Orange food coloring

Butter a 13 X 9 or 9 X 9 pan. On MEDIUM HEAT, melt butter in heavy 3 quart sauce pan. Add sugar and milk, stir until combined. Cover pan to wash down sides of pan. Remove lid. Stir often with a plastic or wooden spoon to prevent burning. Heat to a Soft Ball Stage, 234 degrees at sea level. ** Decrease recommended temperature 2 degrees for every 1,000 feet above sea level, or use a cold water test. Remove from heat, gradually stir in chips until melted, add marshmallow crème and flavoring. Stir until combined. Pour half of the fudge into the butter pan. Add orange food coloring to the remaining fudge, stir to combine. Pour orange fudge over white fudge. With a knife swirl the two colors together. Let cool at room temperature. Cut into squares to serve.


Flavor choices


** Strawberry and Cream, just use strawberry extract and red food coloring

** Chocolate Fudge, just use semi-sweet chocolate chips instead of vanilla chips. Use 1 tsp. vanilla extract instead of flavoring. Add 1 cup chopped nuts, if desired.

** Candy Cane Fudge – Add 1/3 Cup crushed "soft" candy cane, then use peppermint extract and red food coloring.

Rice Krispy Wreaths


1 package (10 oz., about 40) regular marshmallows 

- OR - 4 cups miniature marshmallows
3 Tbsp butter
1 teaspoon green food coloring
6 cups Rice Krispies®
Canned frosting or decorating gel
Assorted candies

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in food coloring. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated. Using 1/4-cup measuring cup coated with cooking spray portion cereal mixture. Using buttered hands each portion into small wreath. Decorate with frosting and/or candies. Best if served the same day.

MICROWAVE DIRECTIONS:

In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.

Cookie Bow #Recipe

 Buttery Bow Cookies




3 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup cold butter, cubed

1 egg, lightly beaten

1/2 cup heavy whipping cream

3 tablespoons butter, melted

Red and green colored sugar

In a large bowl, combine the flour, baking powder and salt; cut in butter until crumbly. Combine egg and cream; gradually beat into crumb mixture until a ball forms. Cover and refrigerate for 30 minutes or until easy to handle.

Divide dough into three portions. On a lightly floured surface, roll each portion into an 8-in. x 6-in. rectangle. Brush with melted butter; sprinkle with colored sugar. Cut into 8-in.-long x 1/4-in.-wide strips. Place 2 in. apart on ungreased baking sheets; form into bows.

Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Remove from pans to wire racks. Yield: 6 dozen.

Buffalo Chicken Muffins

  •  8 Eggs
  • 6 oz. Chicken – Cooked and Chopped
  • ¼ Cup Blue Cheese Crumbles
  • 3 Tbs. Buffalo Wing Sauce
  • 2 Green Onions – Chopped
  • 1 Rib Celery – Chopped
  • 1 Clove Garlic – Minced
  • Sea Salt and Pepper – To Taste



Preheat oven to 350°. 
In a large mixing bowl, fork whisk eggs. To the eggs, add chicken, blue cheese crumbles, buffalo wing sauce, green onions, celery, garlic, sea salt and pepper. Mix until all ingredients are well incorporated.
Pour mixture into muffin tin. This should be enough to fill 8 spots.
 Bake 20 minutes or until fluffy and golden brown on top.

Cranberry / Oatmeal Breakfast Muffins

 

CRANBERRY AND OATMEAL BREAKFAST MUFFINS





YIELD: 16-18 MUFFINS TOTAL TIME: 40 MINUTES


2 ripe bananas, mashed

1  organic egg

1/4 cup coconut oil, melted

1/3 cup milk of choice

1/3 cup unrefined sugar

1 cup whole wheat pastry flour

1  3/4 cup rolled oats

3 tsp aluminum free baking powder

1/4 cup walnuts, chopped

1- 1 1/2 cup fresh cranberries

Pinch cinnamon




Preheat oven to 350F degrees. Line muffin pan with muffin paper cups.

In a bowl, with a wire whisk, combine bananas, milk, oil, sugar and egg. Add dry ingredients, flour, oats, cinnamon and baking powder and whisk until well incorporated. Fold in cranberries and walnuts.

With a medium cookie scoop, fill each muffin cup 3/4 of the way. Bake for 25-30 minutes or until tester comes out clean.

Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

Cookie #Recipe Peppermint Cream Cheese

 One of my favorite smells at Christmas time or really any time is the aroma of cookies baking in the oven. December 18 is National Bake Cookies Day and is a great time to bake up your favorite cookies or try a new recipe. Whichever you choose to do it is a great time to make your house full of sweet smells during the holidays. 




Cream Cheese Peppermints 
  • 4 oz cream cheese, softened
  • ½ teaspoon peppermint extract
  • 4 ½ - 5 cups powdered sugar
  • Red gel food color, optional
For filling:
  • 1 cup white chocolate chips
  • ½ cup heavy whipping cream
For garnish:
  • Crushed peppermint candies or crushed candy cane, optiona

  • To make peppermints buttons:
    1. Line a large baking sheet with parchment paper, set aside
    2. In a large mixing bowl, combine cream cheese and one cup powdered sugar
    3. Add peppermint extract and red gel food color and mix until combined
    4. Gradually add the rest of the powdered sugar and mix until combined
    5. Scoop out a teaspoon of the dough and form into a ball
    6. Place it on prepared baking sheet and repeat with the rest of the dough
    7. Use the end of a small measuring spoon to create a well (dust the measuring spoon with powdered sugar if it sticks)
    8. Chill the peppermint buttons until firm about 1 hour
    To make white chocolate filling:
    1. Add white chocolate chips to heat resistant bowl, set aside
    2. Bring heaving whipping cream just to a simmer and pour over the top of the white chocolate chips
    3. Let stand for 1-2 minutes and then stir until completely smooth
    4. Spoon a teaspoon of filling into each peppermint button
    5. Chill for about an hour or until filling has set up
    6. Sprinkle with crushed peppermint candies, if desired
    7. Store in refrigerator

Christmas Bells

A popular tradition at Christmas time includes church bells. Both the Angelicin and Catholic churches often have bells and bell ringers during services. Christmas Day services are no exception in that it is tradition that bells are rang during the service. In fact Midnight Mass in the Catholic Church will feature altar bells rang during the song "Gloria"





Christmas midnight mass dates back to the early church. Many historians believe that Jesus was born at midnight and while there is no proof many churches have service at midnight on Christmas Eve for this very reason. 





Handbells are often played to the tunes of Christmas carols. One of the most popular Christmas songs that features bells is the song 'Jingle Bells' Did you know that this song was also recorded from space on December 1965 by Tom Stafford and Wally Schirra.

Maple Syrup Day

 


Sugar maple trees are commonly found in the United States. The trees can not thrive in aareas where the summer temps frequently reach over 100 degrees or where the winter temps stay below zero degrees. Sugar Maples often reach more than 125 feet high tall and possess beautifully grained with aromatic sap. One of my favorite thing about these amazing trees is the beautiful fall colors that they offer. 




  • 4 ripe but firm D’Anjou pears
  • 3 tablespoons butter*
  • 2 tablespoons maple syrup
  • Optional topping: chopped pecans

  1. Preheat the oven to 450 degrees.
  2. Peel the pears and cut them in half length-wise. Carefully scoop out the core and seeds from each half.
  3. In a cast iron or other oven proof skillet, melt the butter over medium heat.
  4. Place the pears in the skillet, cut side down, and cook them until they are starting to get browned, about 2-3 minutes.
  5. Transfer the skillet to the oven and bake for 15 minutes. Using a fork, carefully flip pears to cut side up and continue to bake another 10 minutes.
  6. Remove the pears from the oven and carefully transfer them to a platter.
  7. Put the skillet back on the stove over low heat, and whisk in the maple syrup with the butter and juices in the skillet.
  8. Spoon the maple syrup sauce over the pears. If desired, sprinkle with chopped pecans. Enjoy!

Time for Tea Party Cookies


 December 16, 1773 was the day of the Great Boston Tea Party. First of all let me share with you that it was not the day that those in Boston sat around with their teacup and cookies to have a great party to chat but rather it was a date that has been chatted about since that time. Colonist located in Boston primarily originated from Great Britain where tea was enjoyed. The East India Company was the shipping company that brought the supply of tea to the colonist. In order to protest the great taxes that was being placed on the tea American patriots dressed up as Mohawk Indians went about the ships and threw the tea crates into Boston harbor. Thus the Boston Tea Party went down in American History. 



                  Christmas Russian Tea Cake Cookies

Russian Tea Cakes
Printable Recipe
1 cup unsalted butter, softened
½ cup powdered sugar
1 teaspoon vanilla
2 ¼ cups all purpose flour
¾ cup finely chopped nuts (I use pecans or walnuts)
¼ teaspoon salt
powdered sugar

Beat butter and ½ cup powdered sugar and vanilla in a large bowl. Stir in flour, salt and nuts until dough holds together. Chill the dough for at least an hour.

Preheat oven to 400°F. Shape dough into 1-inch balls, and place about 1 inch apart on ungreased cookie sheet. Bake for 10 to 12 minutes or until set but not brown. Remove from cookie sheet. Cool slightly on wire rack. Roll the warm cookies in powdered sugar. Cool on a wire rack and then roll in powdered sugar again to coat.
