Thank You Princess Diana


Lady Diana Spencer, Princess of Wales, Great Britain July 1, 1961 - August 31, 1997


In my day and time the great romance between America and England was still very much alive. One area this was most apparent was when it came to Princess Diana. Not accepted by everyone but loved by nearly everyone Diana Spencer captured hearts early on. When she wed Prince Charles she would and did become Princess of Wales.

Diana Spencer was born on an estate owned by the Royal family  that her family rented. The estate was known as the Sandringham estate. Diana's family grew up near the royal family and in fact it was Sarah, Diana's sister that first dated Prince Charles. Prior to being wed to Prince Charles and becoming a Princess Diana worked at a nursery school. Perhaps the courtship would seem a bit odd to many as Diana called Charles' sir and the courtship was very formal. Seeing each other less than a dozen times Prince Charles was pleased and proposed to Diana. Perhaps, she would have never guessed as a bride at the age of 19 that her life would never be the same.



Promising to do what felt good to her and helped others is primarily the way she lived her life.


In return people every where fell in love with Princess Diane. It seemed it was meant to be. 


However, the fairy tale would come to an end and eventually the newspapers would be filled with statements announcing issues in the wedding and a potential divorce


The divorce would become very public and the publicity would haunt Princess Di. On one such occasion Prince Charles would admit to cheating on Princess Diana with his now current wife. Many blame the press and the talk for what would come to happen in the future. At the age of 36 just 17 years after the fairy tale wedding Princess Diana would die. 

When the death of Princess Diana was reported it seemed the entire world went into shock.


Elton John then as now (If you have read the news) was a great admirer of Princess Diana and created this great song for her

Pickled Watermellon



9 cups water
1/2 cup salt
11 cups watermelon pieces (cut from rind, seeded, and cut into 1-inch cubes)
2-1/2 cups white vinegar
5 cups sugar
1 cinnamon stick
1/4 teaspoon ground ginger
2 tablespoons lemon juice

In a large bowl, stir the water and salt together. Add the watermelon and let stand overnight.
Drain the watermelon, rinse, and drain again. In a large saucepan, combine the vinegar, sugar, cinnamon stick, ginger, and lemon juice. Bring to a boil and add the watermelon. Return to a boil and simmer for 20 minutes. Remove the cinnamon stick. Loosely pack the watermelon into jars. Return the syrup to a boil and boil for 30 minutes. Pour over the fruit in the jars and seal. Process in a boiling-water bath for 15 minutes.

Yield: 

2 pints

Whats For Supper :: Taco Salad



    For the taco seasoned meat:
  • 1/2 pound ground beef
  • 1 small onion diced
  • 1 clove garlic chopped
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • For the salad:
  • 6 cups lettuce, sliced
  • 1 cup tomato, diced
  • 1 cup black beans
  • 1 cup corn
  • 1/4 cup red onion, diced
  • 1/4 cup guacamole or 1 avocado, diced
  • 1/4 cup sour cream
  • 1/4 cup salsa verde
  • 1/4 cup cheese such as cotija, feta, cheddar, crumbled or shredded
directions
    For the taco seasoned meat:
  1. Cook the meat, onion and garlic in a pan over medium heat until the meat is browned and drain off any excess grease.
  2. Mix in the taco seasoning and water and simmer until most of the liquid has evaporated, about 3-5 minutes.
  3. For the salad:
  4. Assemble salad and enjoy!
Option: Replace the taco seasoned meat with Mexican style chorizo.
Option: Use your favourite taco toppings!
Option: Use a dressing like ranch or a creamy avocado dressing (aka guacamole dressing), cilantro lime vinaigrette, cilantro lime ranch dressing, jalapeno ranch dressing, jalapeno popper dressing, etc.
Option: Serve topped with crumbled tortilla chips.

Back To School Safety Tips ::: Street Safety

Back to school time means that a lot of changes will occur. For one it means early morning wake ups for many when they may have been sleeping in a bit longer. This may mean that many may be in a bit more of a rush. Perhaps this may lead to making decisions that are also rushed and at times may lead to dangerous consequences.



One area that needs a bit more attention is when drivers are letting their kids off for school. I know that the school drop off is often congested. At times there are those drivers and kids that take a bit longer than normal in the drop off lane. Yet,,, all to often there are those that are in a rush and do not take their turn properly thus not paying attention to others.

August is designated as back to school safety month. One way we can all be safer is to ensure safety when driving. Here are some tips that will help parents and children alike to get to school safely:

Drivers:


  • slow down when driving through residential neighborhoods and school zones
  • take the needed time to look for kids at crossings, on curbs and even along the roadside as we all know sometimes kids do not cross correctly
  • When backing out of driveways and driving through alleys go slowly and drive carefully
  • Stay off your phone while driving
Tips for School Kids:

  • younger kids should cross the street with an adult 
  • follow the cross guard whenever possible 
  • cross the street at corners, using traffic signals and crosswalks
  • Never run out into the street or cross in between parked cars
  • Measure rule to remember is to cross in front of the bus so that the driver can see them
