Strawberry Oat Bars



3/4 cup butter
1 cup brown sugar, firmly packed
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups steel cut oats
1 cup nuts, chopped (1/3 pistachio, 1/3 hazelnut, 1/3 almond)
~1/2 lb strawberries
dab of strawberry rhubarb jam
1/4-1/2 tsp cardamom
1/4-1/2 tsp ginger

Begin by hulling and slicing the strawberries thinly, setting them aside. Also crush the nuts (e.g. slam them a few times with a meat mallet while in a plastic bag) somewhat coarsely.
In the bowl of a stand mixer, cream the butter and mix in the brown sugar until fully mixed. Then, mix in the flour, baking soda, salt, and spices, mix, and finally, pour in the oats and nuts, mixing until everything is combined.
Preheat your oven to 350°F.
Grease a baking pan and press a fitted sheet of parchment paper on the bottom of the pan (makes removing the final result easier and less prone to breakage later). Then, spread about half of the batter evenly in the pan, pressing together.
Spread a thin layer of jam over the surface of this (or you could always just use more preserves and skip the fresh berries entirely if they’re out of season) and then arrange the strawberry slices on top of this.
Top this off with the rest of your batter, doing your best to spread it evenly and pressing it together. You might still see some strawberry through the top, but its ok. Just do the best you can.


Transfer this to the oven and bake for 30-35 minutes. Remove from the oven and let cool for an hour or so before you try to cut this block (with a sharp knife!) into bars of a size that appeals to you. Figure you could get somewhere around 15-18 bars (e.g. 5-6 columns, 3 rows) out of this, after which, you should set them aside in an airtight container in the fridge.

Have a Bowl of Chili #recipe

The fourth Thursday of every February is National Chili Day. Today, February 22nd is that day. National Chili Day honors America's favorite winter dish. The Spanish chili pepper is the inspiration behind the chili dish made up of tomatoes, chili peppers , meat, beans, and spices. One of the favorite dishes in cook-offs that can be made in a variety of different ways. Perhaps, today is the day that you should gather your family and friends together to enjoy the taste of chili.

The history of chili is one where the American frontier settlers brought together beef, dried Chili peppers and suet. Together the ingredients would be made into a brick that could easily be boiled in pots on the trail. In 1977 Chili con carne was designated as the official dish of the state of Texas



2 lbs ground beef, preferably 85% lean
2 medium onions, diced fine
1 large red bell pepper, 1/2 inch cube dice
6 cloves garlic, minced or pressed
1/4 C chili powder
1 1/2 tsp ground cumin (or roughly 1 3/4 tsp whole cumin toasted and ground)
1 tsp dried oregano
1/2 tsp red pepper flakes (to taste)
1/2 tsp cayenne pepper (to taste )
3 chipotle peppers packed in adobo, chopped
2 Tbsp adobo sauce
1 28 oz diced tomatoes, preferably Muir Glen fire roasted
1 28 oz tomato puree or tomato sauce
2 15 oz cans dark red kidney beans, drained and rinsed
Salt and pepper
Vegetable oil

Serve with:
Shredded Cheddar or Monterey Jack Cheese
Sour Cream
Avocado cubes
Chopped fresh tomato
Chopped green onion
Diced red onion
Cilantro leaves
Lime wedges

Heat a Dutch oven over medium high heat. Add a tablespoon of vegetable oil and brown half of the ground beef. Once the first batch of beef is browned, remove the meat keeping the fat in the pan and add the second half and brown the beef. Once all of the beef is browned, drain and reserve. Drain the rendered fat from the Dutch oven reserving two tablespoons of fat in the Dutch oven.

In the Dutch oven over medium heat, add the onions, red peppers, garlic, chili powder, cumin, oregano, red pepper flakes, cayenne, chipotle peppers and cook until the vegetables are soft, about 10 minutes. Add the beef, tomatoes, tomato puree, beans, adobo sauce, and bring it up to a simmer. Simmer with the lid ajar for an hour and a half. Remove the lid and simmer another 30 minutes, stirring occassionally, until the chili is dark and thick. If it starts to stick on the bottom stir in a little bit of water.

Ideally serve the next day with your choice of condiments.

Spiced Hot Cocoa



2 cups whole milk
1  cup heavy cream
⅓ cup  sugar
1 cinnamon stick
½ vanilla bean, split lengthwise
3 oz. bittersweet chocolate (at least 70% cacao), chopped
Preparation
Combine milk, cream, sugar, and cinnamon stick in a medium saucepan; scrape in seeds from vanilla bean and add pod. Bring to a simmer; remove from heat, cover, and let steep 15 minutes.
Remove cinnamon stick and vanilla pod; discard. Add chocolate and heat over medium-high heat, whisking constantly, until chocolate is melted and mixture is smooth, about 5 minutes. Remove hot chocolate from heat and add serve hot.

DO AHEAD: Hot chocolate can be made 1 day ahead. Let cool; cover and chill. Reheat and serve.

Cheesy Meatloaf Minis


1/2  cup  fresh breadcrumbs (about 1 ounce)
Cooking spray
1  cup  chopped onion
2  garlic cloves, chopped
1/2  cup  ketchup, divided
3  ounces  white cheddar cheese, diced
1/4  cup  chopped fresh parsley
2  tablespoons  grated Parmesan cheese
1  tablespoon  prepared horseradish
1  tablespoon  Dijon mustard
3/4  teaspoon  dried oregano
1/4  teaspoon  salt
1/4  teaspoon  freshly ground black pepper
1 1/2  pounds  ground sirloin
1  large egg, lightly beaten

Preheat oven to 425°.
Heat a skillet over medium-high heat. Add breadcrumbs; cook 3 minutes or until toasted, stirring frequently.
While breadcrumbs cook, heat a large skillet over medium-high heat. Coat pan with cooking spray. Add onion and garlic; sauté 3 minutes. Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients. Shape into 6 (4 x 2-inch) loaves on a broiler pan coated with cooking spray; spread 2 teaspoons ketchup over each. Bake at 425° for 25 minutes or until done.

Mexican Casserole #Recipe

Growing up I can recall my mother making a great variety of casseroles. One of the main reasons was because we were a large family but another reason was because casseroles are easy to prepare. By simply placing a mess of ingredients in a casserole dish together to create a wonderful one dish meal.



4  teaspoons  olive oil, divided
1  cup  chopped onion
1 cup chopped red/green bell pepper
2  garlic cloves, minced
1  jalapeño pepper, minced (optional)
1  teaspoon  chili powder
1/2  teaspoon  ground cumin
1/4  teaspoon  freshly ground black pepper
1  lb. leanest ground beef
48  baked tortilla chips
Cooking spray
2 cups white rice, cooked
1  tablespoon  fresh lime juice
1 15 oz. can diced tomatoes with green chiles, drained
2  tablespoons  minced fresh cilantro
1/4  teaspoon  salt
1  cup  (4 ounces) shredded Monterey Jack cheese
2  tablespoons  fat-free sour cream
2  tablespoons  chopped green onions
1/4  cup  sliced ripe olives
salsa

Preheat oven to 375°.
Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add onion and bell peppers to pan; cook 4 minutes or until tender. Add garlic and jalapeño (if you want more heat); cook 1 minute. Add ground beef and break up into crumbs – until nicely browned.  Stir in chili powder, cumin, black pepper; cook 3 minutes. Arrange half of tortilla chips in an 9 x 9 –inch (or 11 X 7 inch) baking dish coated with cooking spray; top evenly with ground beef mixture.
Mix rice with cilantro, lime juice and salt.
Layer rice mixture on top of the beef mixture, then top with the tomatoes and chiles. Top with remaining tortilla chips, pressing to slightly crush. Sprinkle evenly with cheese. Bake at 375° for 13 minutes or until cheese is bubbly. Cut casserole into 6 equal pieces; top each serving with 1 teaspoon sour cream, 1 teaspoon onions, and 2 teaspoons olives.  Serve with salsa

Celebrate Dog Biscuit Day #recipe

Carob Mint Dog Cookies 



Combine 1 cup flour, 1 cup baking mix (Bisquick or Jiffy), 5 drops mint flavoring, ¼ cup milk, 2 tablespoons margarine, 1 egg and 1 teaspoon corn syrup. Mix all ingredients and roll out onto a floured surface to approximately ¼ inch thick. Cut with bone shape or holiday cookie cutters and position on a cookie sheet sprayed with cooking spray. Bake at 350 for 25 to 30 minutes until lightly browned. Cool the dip cookies halfway into melted carob or spoon the carob icing over half of each cookie. Make sure cookies are cooled down before storing, gift wrapping or giving to your pup. Store these treats in a sealed, airtight container for freshness.

**DO NOT substitute chocolate chips, chocolate is toxic to dogs instead go with carob a safe alternative for your barking chocoholic. Carob should be found in your stores baking department.

The Beginning of the Diesel Engine





Theodor Diesel a leather worker and manufacturer of small consumer goods from Augsburg Germany moved to Paris France in 1848. In Paris he would meet the daughter of a prosperous merchant that was also from Augsburg. The young lady named Elise and Theodor would fall in love and be wed in 1855. This young couple would start a family to which  young lad named Rudolf Diesel would be born to on March 18th 1858. Theodor would work nearly round the clock 6 days a week to provide for his family.

The young lad of the family , Rudolf would watch his father and ask  questions whenever possible. The mystique of it all inspired Rudolf to learn more. In 1855 he would set up his first shop in Paris where he would begin to develop a compression ignition engine. His work would lead to the first Diesel Engine




On February 23, 1893, Rudolf Diesel received a patent for his diesel engine. Instead of gasoline, this engine burns fuel oil and uses compressed air in the cylinder instead of a spark to ignite the fuel.

Banana Bread #recipe

One Bowl Banana Bread




2/3 cup (150 mL) softened butter
½ cup (125 mL) lightly packed brown sugar
2 eggs, beaten
1 cup (250 mL) mashed, very ripe banana, about 3
1 tsp (5 mL) pure vanilla extract
2 cups (500 mL) all-purpose flour
1 tbsp (15 mL) baking powder
½ tsp (2 mL) each baking soda and salt
1 cup (250 mL) chopped pecans, walnuts or chocolate chunks (optional)

Preheat the oven to 350 °F (180 °C). Place the butter in a large bowl and beat with a wooden spoon until light and fluffy (feel free to use an electric mixer if you prefer). Blend in the brown sugar and beat until light. Beat in the eggs, adding one at at time. Blend in the banana and vanilla until well incorporated.

Add the flour. Sprinkle the baking powder, baking soda and salt over the flour. Stir these smaller amounts of dry ingredients into the flour. Using deeper strokes, blend the dry ingredients into the butter mixture until almost fully combined. If adding nuts or chocolate, fold them in.

Scrape the batter into a lightly greased 9 x 5 –inch (2.5 L) glass loaf pan and smooth evenly to fill to the edges of the pan. Bake for 45 to 50 minutes on the center rack of the oven until the loaf springs back when lightly touched on top. Cool in the pan on a rack for 10 minutes. Turn loaf out and cool completely before slicing. Makes 10 servings.

Bee Humble

It takes many to make up a community. After all we can not all be the same. Some of us must like to tell all that they do and others are more humble. Which are you?? Those that are more humble may be proud of what they do or don't do but do not go on endlessly bragging. Perhaps more of us should be like the one that is more humble and should try to bee more humble.




Ways to be humble

  • treat everyone with dignity and respect remember we are all the same created by the same great creator
  • it is through actions that we earn trust of others
  • make friends of all types , having friends that only agree with you will only stroke your ego
  • strive to make yourself better everyday this will help keep you wanting to do more never thinking you have reached beyond others
knowing that every strength, talent, and ability is a gift to be used for God’s glory and every weakness is an opportunity to show God’s power to change.

Dental Care for Children



Dentist recommend that teeth are brushed at least twice a day. The best idea is to brush in the morning and before you go to bed. Each time your child brushes make sure they brush for at least 2 minutes. A fun way to try to ensure they are brushing long enough is to use a timer. Remind them to brush the inner and outer surfaces of your teeth include the chewing surface on your back teeth. In addition, brushing the tongue is important as well.



Following each brushing the toothbrush should be cleaned. Do not scrub hard as it will put more wear and tare on it making the life of it not last as it should have. Replacing the toothbrush ever 3 - 4 months is recommended. In the case that it should show signs of wear it should be replaced before the recommended time.



At around the age of 4 children should be taught to floss their teeth. Teeth should be flossed at least one time a day. Oral rinses used to prevent cavities should be done after brushing as well. The rinse helps kill germs that cause bad breath and protects teeth against plaque formation and stains. Rinses should be used after every brushing and flossing.



Tooth decay causes pain and discomfort. Eating ,speaking, and sleeping may all be affected by tooth decay. It is possible to avoid tooth decay by eating and drinking food that is good for the teeth. Good dental care is the best way to avoid dental issues. Professional dental help can help keep your child's teeth. How long has it been since your last checkup??

Teens Self Esteem







Do you recall being a teenager?? I sure do, had lots of fun during that time period. But while there was lots of fun to be had it was also a life challenging The teenage years offer more issues to deal with more than many other times of life. Nearly every teen has felt a bit afraid, lacking confidence and self esteem. It's a period of time that you no longer feel or look like a child but you are not quite an adult either. In addition it is a time of life that big changes are taking place in life and decisions of where your life will go next. 

A life of trying to maintain grades, continue in hobbies, and meet the approval of friends and parents is a lot of stress. Some teens may simply feel as if they simply don't fit in and struggle with finding out where they belong. The stress of this time period often leads to anxiety. which may lead to making less than desirable decisions. However, there are a few ways that you can help your teen find their way.

  • Encourage teens to find and follow their own interest. This can be done through cubs and organizations that offer opportunities for self expression. These opportunities can provide a way to express their selves. By helping our teens build confidence in their selves they can begin to release a bit of stress and anxiety. 
  • Allow our teens a chance to develop self confidence by tackling obstacles on their own. When we are there to help our teens if and when they get into trouble we can allow them to take on the challenge of learning how to guide through life. Small changes such as a bit later of a curfew or bed time If you show your teen a bit of understanding and room to grow then they will often be more likely to believe in their self..
  • While we want our teens to be successful we also want them to be able to face rejection and failure when they may come up. Teens that know that rejection is not personal and is not always a result of something that may have done wrong. Having a plan B can help make it all a bit better. As one of my old bosses said always have a b, c, d, e,.... back up plan so you can always face life. The truth is being able to adjust to life is something that many individuals may never learn be sure that they know that if ever needed you are there to offer help.

NO Bake Strawberry Cheesecake

delicious sweet berry decorated cake is simple and delicious. Perfect for a valentine treat or a simple weeknight treat.



 8 oz. cream cheese, softened
1/3 cup sugar
1 cup sour cream
2 tsp pure vanilla extract
8 oz. prepared whipped topping, thawed
1 prepared graham cracker crust (6 oz.)
1 lb. fresh strawberries, hulled and halved lengthwise

Beat the cream cheese until smooth with an electric mixer. Gradually beat in the sugar. Beat in the sour cream and vanilla until just combined. Fold in the whipped topping. Scrape mixture into the piecrust. (There may be some filling left over. If so, reserve it to be decoratively piped onto the top of the pie.) Chill in the refrigerator for 4 hours.
Starting in the center, arrange the strawberries in a circular pattern. Pipe with extra filling, if desired.

Frugal Recipe ----- Hamburger Pie

Hamburger Pie is one of the easiest recipes that can be made. I remember having it in elementary school lunch room many years ago and my family still loves it. I made it up not knowing what else to make one day and the family devoured it.



Hamburger Pie

1 lb hamburger, browned $3
2 c shredded cheese $2
1 can corn, drained .50
2 c instant or regular mashed potatoes all ready prepared .99

Layer hamburger, corn, cheese top with potatoes bake in oven 375 degrees for 30 minutes oooh soo good

Barley

Did you know that the English measurement system was built upon a grain?? That grain would be barley. In 1324 King Edward II of England standardized the inch as equal to "three grains of barley, dry and round, placed end to end lengthwise" Upon this scenario of an inch as we all know the foot, yard, and mile all came to be. While the measurement system may not be as popular as in older days Barley still remains popular as the fourth leading cereal crop.



In the world of whole grains Barley is the highest in fiber. Unlike other grains where fiber is primarily located in the outer bran layer of most whole grains the fiber is barley is found through out the whole grain. Whole grain barley is rich in antioxidants, vitamins and minerals. However, much of the barley eaten in the U.S. is pearled or pearl barley which is not as healthy as whole grain.



 Pearl barley may be a tool in the battle of the bulge as it helps reduce visceral fat and the waist. Cooked as a side dish, baked into bread, enjoy it in porridge or even used barley flour to bake your favorite cookies.

Rabbits Make Great Pets

Is it time to adopt a rabbit?? Nope, it is not that famous bunny that appears whenever a certian box of cereal is open and no it is not the bunny that brings colorful Easter eggs. Rather, February is the month to adopt bunny rabbits. 














Did you know that  bunnies can be litter box trained Well, they can and many rabbits including one that my brother had are kept inside of well maintained homes. Rabbits are playful pets and make great pals. They love to play with toys and would make a great pet for anyone who is looking for someone who will listen to them. Simply look at those ears that the rabbit has and you will find a couple of big ears a great sign that they listen well.

Cherry Muffins



CRUMB TOPPING
    •    1 cup all-purpose flour
    •    3 tablespoons light brown sugar
    •    2 tablespoons granulated sugar
    •    1 teaspoon baking powder
    •    Pinch of salt
    •    6 tablespoons unsalted butter, melted
    • 
MUFFINS
    •    1 3/4 cups all-purpose flour
    •    2 1/4 teaspoons baking powder
    •    1/2 teaspoon salt
    •    1 cup granulated sugar
    •    2 large eggs
    •    1/2 cup canola oil
    •    3/4 cup whole milk
    •    1 teaspoon pure vanilla extract
    •    1 1/2 cups pitted sweet cherries (try to use 2 cherries per muffin)
    • 

    1.    Preheat the oven to 375°. Line 18 muffin cups with paper or foil liners or spray 2 muffin tins with cooking spray.
    2.    MAKE THE CRUMB TOPPING: In a medium bowl, combine the flour with the brown sugar, granulated sugar, baking powder and salt. Stir in the melted butter, then pinch the mixture until it forms pea-size clumps.
    3.    MAKE THE MUFFINS: In a medium bowl, whisk the flour with the baking powder and salt. In a large bowl, combine the sugar, eggs and canola oil and beat with a handheld electric mixer at low speed until combined. Beat in the whole milk and vanilla. Add the flour mixture all at once and beat at low speed until the batter is smooth. Stir in the cherries.
    4.    Spoon the batter into 18 of the cups, filling them about three-quarters full. Sprinkle the crumb topping on top of each one and bake for about 30 minutes or until the muffins are golden and a toothpick inserted in the center comes out with a few moist crumbs attached. Let the muffins cool in the pan for 10 minutes before serving

Angel Hair Pasta with Red Pepper Pesto Sauce #Recipe



medium red bell peppers or bottled roasted red peppers
1 tablespoon pine nuts
1 small garlic clove, smashed
1/4 cup basil leaves, plus 2 tablespoons chopped basil
1/4 cup extra-virgin olive oil
Salt and freshly ground pepper
1/2 pound angel hair pasta
1/2 cup grated pecorino cheese

Roast the red peppers over a gas flame or under the broiler, turning occasionally, until charred all over. Transfer the peppers to a bowl, cover with plastic wrap and let cool. Peel, core and chop the peppers.
In a small skillet, toast the pine nuts over moderate heat until golden, about 4 minutes. Let cool.
Transfer the peppers and pine nuts to a blender or food processor. Add the garlic and whole basil leaves and blend until coarsely chopped. Add the olive oil and cheese and puree to a chunky pesto. Season with salt and pepper.
In a large saucepan of boiling salted water, add the pasta and cook until al dente. Drain and cool slightly under running water. Transfer the pasta to a bowl and toss with the pesto. Season the pasta with salt and pepper. Top with the chopped basil and pecorino and serve at room temperature.

Chocolate Drop Bread Pudding



1/2 Cup Dark Cocoa
3 Cups Milk (or sub all non-dairy coffee creamer, plain/vanilla)
5 Eggs
1 Cup Sour Cream
1 Cup Belgian Chocolate Coffee Mate
1 1/2 Cups Sugar
5 Tbs. Melted Butter
1 tsp. Salt
1 Tbs. Cinnamon
1/2 tsp. Nutmeg
1 tsp. Vanilla
1/2 tsp. Almond extract

Wisk all of those above ingredients together really well.
Take 8 really large Sub rolls or one loaf of french bread and cube up into 1 inch cubes. Toss bread and 6 oz. Chocolate Chips into a large bowl. Pour the wet ingredients all over and stir gently. Spray a deep 13″ x 9″ pan with cooking spray and pour the pudding in your pan. Bake at 350 degrees for about an hour. Enjoy warm or cold with whipped cream!

Jam Bars 



1/2 cup/110g unsalted butter or coconut oil (vegan!), at room temperature
1/3 cup/85g smooth almond butter
2 Tbsp brown rice syrup or maple syrup
1 1/2 cups/150g rolled oats
1 cup/120g almond flour
1 cup/120g oat flour
6 Tbsp/90g granulated sugar
1 tsp baking powder
1 1/2 teaspoons kosher salt 
1/2 tsp almond extract
1/2 tsp ground cinnamon
1 cup plus 2 Tbsp/340g jam (I used Bonne Maman Raspberry)
1 tsp lemon juice
Pinch of sea salt
sliced almonds (optional)

Preheat the oven to 350°F/180°C. Line a 9 by 13-inch/23 by 33cm baking pan with parchment paper. Combine the butter or coconut oil, almond butter, and brown rice syrup or maple syrup in a large bowl and, using a wooden spoon, mix well.
Add the rolled oats, almond flour, oat flour, sugar, baking powder, salt, vanilla and almond extracts, and cinnamon to the butter mixture and stir until a soft dough forms. Divide the dough into thirds. Press two-thirds of the dough into the bottom of the prepared pan and reserve the remaining one-third for the topping.
Stir together the jam, lemon juice, and salt and then spread the mixture evenly over the bottom crust.
Crumble the remaining one-third dough over the jam filling. Optional: I scattered some sliced almond on top.
Bake the jam bars until golden brown around the edges, about 35 minutes (push it a little bit, you don’t want them pale). Let the pastry cool completely in the pan on a wire rack before cutting into bars.
The jam bars will keep, well wrapped, at room temperature for up to 4 days (or in the fridge, which is kind of nice too).

The Invention of the Disposable Diaper

Marion Donovan it seemed was meant to be an inventor from the time she was born. Several men in her family including her brothers, dad and uncle all had proven to be ingenious inventors. Many of their inventions were based around factory machines. However, Marion Donovan inventions would be based more around the domestic way of life.


One issue that has been around for quite some time is the babies dirty diapers. No wonder that one of Marion Donovan's first inventions had to do with a new way to take care of this task. The Boater as it was known may have came before it's time but was a worthy invention. At the time cloth diapers and rubber baby pants were the "in" fashion. However, the issue that often came up was a bad diaper rash.

It seemed that the boater that would help relieve the rash part of diapering would be the way to go. Manufacturers did not agree and refused to  back this new plan. In 1951 she sold the idea and plan to these disposable briefs. It would be the Europeans to first manufacture disposable diapers but in 1956 Pampers would begin to sell the disposable diapers. The world of caring for the babies wetness has changed thanks to the invention of Marion Donovan.

Potatoes Do them Your Way


If you have been searching for a sneaky way to get more calcium rich dairy products into your children's diet then you will love this recipe. Scalloped Potatoes is a great recipe that can be suited to fit your taste and palate.



                    Scalloped Potatoes

Grease a 9 x 13 inch baking pan
Heat oven to 375º F

Thinly slice
3 pounds potatoes
1 large onion

Chop
3 slices bacon (optional)

In a large bowl combine
1 10 ounce can of condensed cream of mushroom soup
1 Cup shredded cheddar cheese
1/2 cup sour cream
1 teaspoon black pepper

Add the sliced potatoes and onion Toss to evenly coat. Scrape the mixture into the prepared pan. Sprinkle the chopped bacon pieces over the potatoes and cover with aluminum foil. Bake 30 minutes. Remove the foil and bake another 30 minutes, or until the potatoes are tender.

Make the potatoes the way you want them. Here are a few ideas:

  • add onions whether green or yellow or leave them out entirely.
  •  Add a bit of spice to your taste so the recipe truly becomes your own. 
  • Potatoes are the same way whether you choose to use whole potato whether sweet or russet or perhaps you have frozen hash brown potatoes. Simply stir them into the sauce and for the later cut baking time 30 minutes. 
  • another great way to cut time is to microwave the potatoes 1/2 way done. Slice potatoes and stir into sauce where they cook 30 more minutes.
  • Swap out condensed cream of mushroom or broccoli soup
  • add a bit of meat by topping the potatoes with whatever you have on hand. Pork chops or ham slices work well

Bikers Against Animal Abuse and Neglect


In the past when bikers were mentioned minds may have turned to the large gangs of bikers and the trouble that may or may not have accompanied them. As many of us know the world is much more different than it was then and bikers have lives just like you and me and care about the world as well. One organization that bikers are involved in is the care of animals. In addition, the organization Bikers Against Animal Abuse and Neglect is comprised of bikers that ride, support members and volunteer members.



As those in the biking world know each of us play an important role in determining success. The goal of the Bikers Against Animal Abuse and Neglect is to work with local animal rescue groups, animal shelters, law enforcement and the public to be able to help neglected animals, locate abusers and assist in rescues when needed. Bikers want animals to provide the same unconditional love they give us



about B.A.A.C
In September of 2007 a focus on shelter animals and financial assistance for animals without owners or owners who had cruelty victimize these pets. Take for example the 2007 Michael Vick animal cruelty case that was being talked about everywhere.



The group B.A.A.C has helped dogs, cats, horses, pigs and many other pets. The members are expected to follow the state animal cruelty laws when working with local authorities and Animal Control officers. Fundraising takes place to help shelter and rescue organizations to provide urgent medical care to animals that have fallen prey to animal cruelty. The group helps to:

  • provide food and material support for non profit organizations, shelters and pet food pantries
  • offer outreach and educational materials to increase public awareness to animal cruelty funding to families to help with cost of spay / neuter surgery 
  • support other reputable organizations by supporting pre adoption home checks and filling transportation needs. 
  • help bring awareness to animal cruelty through special events, and social media sites

Animal cruelty comes in many forms including direct (deliberate) to indirect (neglect)  Individuals of all ways of life may abuse an animal. Some may be simply cruel individuals and others just not be educated in what it takes to be a pet owner. Animal abuse covers many different animals and stories which often makes it seems that the issue will never go away. However, working together will hopefully make the issue better.

Cherry Pie



Crust:
2 1/2 cups unbleached all-purpose flour
1 tablespoon sugar
3/4 teaspoon salt
1 cup (2 sticks) chilled unsalted butter, cut into 1/2 inch cubes
5 tablespoons ice water
Filling:
1 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
5 cups whole pitted sour cherries
1 teaspoon fresh lemon juice
1/2 teaspoon vanilla extract
2 tablespoons unsalted butter cut into 1/2 inch cubes
1 tablespoon milk

Crust:

Whisk flour, sugar, and salt in large bowl to blend. Add butter and rub in with fingertips until small pea-size clumps form. Add 5 tablespoons ice water; mix lightly with fork until dough holds together when small pieces are pressed between fingertips, adding more water by teaspoonfuls if dough is dry. Gather dough together; divide into two pieces. Form each piece into a ball, then flatten into disk and wrap in plastic. Refrigerate at least 30 minutes. Can be made up to two days ahead. Keep chilled. Let soften slightly before rolling out.

Filling:

Position rack in lower third of oven and preheat to 425° F. Whisk sugar, cornstarch, and salt in medium bowl to blend. Stir in cherries, lemon juice, and vanilla. Set aside.

Roll out 1 dough disk on floured surface to 12-inch round. Transfer to 9-inch glass pie dish. Trim dough overhang to 1/2 inch. Roll out second dough disk on floured surface to 12-inch round. Using large knife or pastry wheel with fluted edge, cut ten 3/4-inch wide strips from dough round. Transfer filling to dough-lined dish, mounding slightly in center. Dot with butter. Arrange dough strips atop filling, forming lattice; trim dough strip overhang to 1/2 inch. Fold bottom crust up over ends of strips and crimp edges to seal. Brush lattice crust (not edges) with milk. Sprinkle lattice with 1 tablespoon of sugar.

Place pie on rimmed baking sheet and bake for 15 minutes. Reduce temperature to 375°. Bake pie until filling is bubbling and crust is golden brown, covering edges with foil collar if browning too quickly, about 1 hour longer. Transfer pie to rack and cool completely. Cut into wedges and serve with vanilla ice cream.

Peach Dump Cake



6 to 8 ripe peaches, pitted, peeled and sliced
1 can (354 mL) evaporated milk
3 whole eggs
1 cup white sugar
3 teaspoons cinnamon
1 box Betty Crocker™ SuperMoist™ white cake mix
1 cup sliced almonds (optional)
3/4 cup butter, melted
8 cups vanilla ice cream, for serving if desired
1 cup caramel sauce, for serving if desired

Preheat oven to 350°F and grease a 9x13-inch baking dish.
In a large bowl, mix peaches, evaporated milk, eggs, sugar and cinnamon until well blended. Spread peach mixture in prepared baking dish. Mixture will be very wet. Sprinkle dry cake mix evenly on top of the batter. (Do not prepare cake batter.)
If adding pecans, sprinkle them over the top of the dry cake mix. Pour melted butter evenly over the top of the cake mix. Bake 50 minutes. Let cool.
Top with ice cream and caramel sauce as desired.

Cinnamon Biscuits #Recipe



2 cups sifted all-purpose flour
~1 tbsp. baking powder
~1 tsp. salt
~1/4 tsp. baking soda
~1/4 c. vegetable oil
~3/4 c. buttermilk
~8 tbsp. butter, softened
~3/4 c. granulated sugar
~1 tsp. cinnamon

~Combine flour, baking powder, salt & baking soda in a medium bowl and mix well.
~Stir in vegetable oil.
~Add buttermilk and stir just until blended.
~Knead dough on a lightly floured surface until smooth.
~Roll dough into a 15x18-inch rectangle.
~Pre-heat oven to 400'F.
~Grease a 9-inch round baking pan lightly.
~Spread butter over dough.
~Combine sugar & cinnamon in a small bowl and mix well.
~Sprinkle over butter.
~Roll up rectangle, jelly roll fashion, starting from one long side. Pinch seam to seal.
~Cut the roll into 1 1/2-inch slices.
~Arrange the slices, cut side up, in prepared baking pan.
~Bake until lightly browned, about 15-20 minutes.
~Enjoy!!!

Gardening Inside with Houseplants

When it is cold outside we often bring the plants that we can inside. Indoor plants are not everyone's favorite but for those that love this informational post is for you. One thing you may want to know is that there are houseplants that may emit carbon dioxide. However, this should not be a worry for pets or humans.



Houseplants help to improve indoor air quality significantly. Indoor plants emit oxygen, humidity and negative ions. These plants can also absorb dust, mold, bacteria and allergens from the air. In addition houseplants help add beauty to the room.

Here are a few common houseplants that you may want to invest in:



  • Snake Plant can take a lot of wear and tare. It can tolerate low light and neglect as well. The snake plant helps the home by filtering toxins such as formaldehyde, benzene, trichloroethylene, xylene and toluene. Offering this plant a place with moderate to low light and water a couple times a month will keep it happy

  • The Rubber Tree is a common houseplant that enjoys moderate to bright light. The tree will filter out toxins such as formaldehyde from the indoor air. Simply watering the plant at least 1 time a week is all that is required.

  • The Philodendron is one of my favorite houseplants partly because of the heart shaped leaves and trailing vines it offers. This plant grows fast with vines that can grow to 10 feet long. Don't worry it is small in size only standing about 8" tall so will be perfect in a small space as well. The only care needed is a moderate to low light area and being watered 2 times a month.

  • A houseplant my mother loves and had many when I was a child as well is the spider plant. The noted arching green and white striped leaves make it the perfect hanging planter. The plant is resilient and easily to make more of by taking a simple cut This plant grows well in most areas with a once a week watering.

Moroccan Coconut Cookie #Recipe



1 ½ cup dried unsweetened coconut
1/3 cup semolina
½ cup icing sugar
1 tsp. baking powder
2 ½ tbsp. vegetable or coconut oil
1 large egg
A pinch of salt
½ tsp. lemon zest
Orange blossom water (optional)


Preheat oven to 350 degrees F(175 C) and cover a baking sheet with parchment paper.
Combine the coconut, semolina, baking powder and salt. Set aside.
In a medium bowl, beat the egg with the icing sugar until light and fluffy. Add the lemon zest and the oil. Mix until well combined, and then gradually blend in the dry ingredients.
Cover the dough and let it rest for about 20 minutes.
Wet your hands with some water or orange blossom water and roll the dough into small balls, dip one side in icing sugar, flatten slightly in your palm and place on the prepared baking sheet, about 3 inches apart. Repeat the process until all the dough has been shaped.
Bake for no more than 8 to 10 minutes in the preheated oven. These cookies are so soft when hot, so you need to let them cool down on the baking sheet.
When cookies are at room temperature, dust with icing sugar and transfer to a plate or store in airtight container for up to one week.

January and February were the last two months to be added to the Roman calendar. The Romans considered winter a monthless period of time. Around 713 B.C. the two months were added to the calendar with February the last month of the year. THis changed in and around 450 BC when it became the second month. However, the number of days in the month changed from 23 - 27 days because of the strive to realign the year with the seasons. Names offered to February included the old English term Solmonath meaning the mud month and Kale month meaning cabbage month.

The PTA was created to improve the lives and future of all children Women who were full of imagination and courage came together to form the organization.
