3 cups seeded, chopped watermelon
1/2 medium onion, chopped
1/2 red bell pepper, chopped
1 tablespoon seeded, chopped jalapeno pepper
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon vegetable oil
In a medium bowl, mix all ingredients, and serve immediately or cover and refrigerate for up to one hour to allow flavors to blend.
