National Nacho Day and Healthier Nacho Recipe of Beef and Black Bean
It seems like there is a national day for everything. Maybe there is , today is national Nachos Day and it occurs November 6th every year. Nacho's can be as simple as tortilla chips that are covered with nacho cheese or another melted cheese and often served with salsa.Nacho chips were created to be served as a snack. The Mexican origination of these popular nacho chips can be served as an appetizer or part of a meal.
Many believe that the original nachos were created in the city of Piedras Negras, Coahuila Mexico. Not far from the border and Eagle Pass Texas. The tale involves a group of military wives who were stationed at Fort Duncan in Eagle Pass who traveled to Piedras Negras on a shpping trip one day. After a day of shopping the group arrived after the closing of a local restaurant. The group was served a snack invented from what was available in the kitchen. The ingredients consisted of tortillas and cheese. The tortillas were cut into triangles and topped with shredded cheese before it was heated. Jalepeno peppers were added on top of the melted cheese The group loved the dish and told others and before long the Nacho's "specials" became a loved treat of "special nachos" The story and original recipe could have been found in the 1954 St. Anne's Cookbook.
Today the popular nachos that spread through Texas and Southwest has since gained millions of fans across America. Whether you choose loaded nachos, super nachos or nachos supreme you will always be pleased with nachos and an abundance of toppings. Toppings such as refried beans, ground beef, shredded beef, chicken, seafood, shredded cheese, jalapeno peppers, green pepper, lettuce, tomatoes, black olives, onion, sour cream, and guacamole.
Parents and children alike should be able to sit down at the table and enjoy this recipe of Baked Beef and Black Bean Nachos. It is much healthier version of loaded nachos than others as it is baked. Enjoy!!!
3-4 cups tortilla chips
1 pound lean ground beef
3 tablespoons (1 packet) taco seasoning
1 cup salsa
1 (15 ounce) can black beans, drained and rinsed
2 cups 2% Mexican cheese, shredded
toppings: cilantro, tomatoes, green onions, avocado, sour cream
Preheat oven to 350°F. Spray a rimmed baking sheet with non-stick cooking spray.
Over medium heat, add ground beef and taco seasoning to a skillet. Cook ground beef until no longer pink.
Stir in salsa and remove from heat.
Spread tortilla chips out evenly on a rimmed baking pan.
Sprinkle cheese over top of tortilla chips.
Place in preheated oven for 3-5 minutes.
Remove and top with beef/salsa mix, and black beans.
Return pan to oven for another 5 minutes.
Top with additional toppings as desired.
