Crockpot Brownies
3/4 cup flour
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup semi-sweet chocolate chips
In a small bowl, whisk together flour, cocoa powder, baking powder and salt.
In a medium microwave safe bowl, melt butter in microwave for 60 seconds at 50% power, then in 30 second increments at 50% power until completely melted. Whisk in sugar, then eggs and vanilla until combined.
Gradually stir flour mixture into butter mixture until just combined.
Fold in chocolate chips.
Line the stoneware of a 4 quart crock pot with a large piece of aluminum foil, allowing the foil to come up the sides a few inches. Spray with cooking spray. Transfer batter into crock pot.
Cover and cook on low for 2-3 hours. When edges are dry and center is set, remove lid and cook on low for another 30 minutes.
Turn crock pot off and let cool for about an hour. Use foil to lift from the stoneware and cut into bars or pieces. Serve with ice cream if desired.
Makes 12 bars.
