Easy Chicken Parmesan Soup

Do you like Chicken Parmesan?? Then you should love this soup. This is a faster way to get your chicken parmesan fix. With a prepared pasta sauce or one that you have made yourself and is saved and ready to go this recipe takes only 30 minutes to fix. Croutons are needed as the chicken meat is not breaded. 



Easy Chicken Parmesan Soup
makes 4-6 servings

3 boneless skinless chicken cutlets - cut in bite size pieces
2 large cloves of garlic, minced
2 T olive oil
1/2 tsp. kosher salt
1/4 tsp pepper
4 cups prepared pasta sauce
1/3 cup fresh grated Parmesan cheese
1/4 cup ricotta
14 oz. can low sodium chicken broth
1 & 1/2 cups shredded mozzarella
1 & 1/2 cups croutons seasoned or unseasoned

In a Large soup pot on medium heat add olive oil. When oil has heated saute chicken pieces with minced garlic, salt and pepper Stir constantly til chicken is fully cooked and all of the liquid has evaporated
Then stir in pasta sauce, grated parmesan cheese, Serve  warm with shredded cheese and croutons on top.
