PB cup cookies




1/2 cup butter, softened

1/2 cup peanut butter
1/2 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
2 cups all-purpose flour
36 mini peanut butter cups


Preheat the oven to 350 degrees F.
Cream together the butter, peanut butter and sugars.
Add in the eggs, vanilla extract and baking soda and mix until they are well combined.
Slowly mix in the 2 cups of the flour until it is well incorporated.
Press 1 tablespoon of the batter into each well of a mini-muffin tin. Bake for 8 minutes, until the cookies begin to rise but are still soft in the center.
Take the cookies out of the oven and press a mini peanut butter cup into the center of each cookie, making sure the top is level with the top of the cookie.
Bake for an additional 4 minutes until the cookies are golden brown.
Remove from the oven and allow to cool completely before taking the cookies out of the muffin tin.
