7-up grilled chicken

Summer may not officially be here for a few more days but I would say that heat of Summer has arrived. Is it hot where you are?? While we are not at triple digits there is at least one day this week where we will come mighty close. I did see a slight cool down (only a few temps but it will help) in our future. 
So far we have been staying cool with fans only. I wonder how long this will last before we turn on the A/C. Attitudes sure are a bit difference in the heat that is for sure. The clothesline and the grill are being kept busy as it is too hot for laundry or cooking inside.

I found this delicious sounding recipe and decided to give it a try. Chicken breast, thighs, or drumsticks can be used. The recipe writers say it also works great with beef. The longer the meat is in the marinade the more flavor it will have. Do not marinade more than overnight

The ingredients involved are simple. You may have them all on hand. The recipe calls for soy sauce, 1 can of lemon lime soda, olive oil, 2 minced garlic cloves and dijon mustard. 


  • 4 chicken breast halves, boneless/skinless
  • 1 (12 oz) can lemon-lime soda
  • ½ C soy sauce
  • ¼ C olive oil
  • 2 cloves garlic, minced
  • 2 tbsp Dijon mustard
  • salt and pepper

  1. Place chicken in a Ziploc bag and add soy sauce, soda, garlic, mustard, and olive oil.
  2. Seal bag and let marinade for 3 hours up to overnight.
  3. Remove chicken from marinade, season with salt and pepper and grill over medium-high heat for 15-20 minutes or until cooked through.
