Easter Monday =-==== Sweet and Sour Ham




Easter Monday will find Egg Rolling Races such as the one at the White House today. The last Easter Monday and egg roll for the Obama's presidency. Today found the President and his wife out on the lawn spending time watching the egg roll and other activities.

.While Easter Monday is not a federal holiday The day is still informally observed. While the work must continue and like any other Monday families head off to school and work there are some that still take an extra day off. States such as North Dakota, cities in New York, Michigan and Indiana all observe Easter Monday. 

Dyngus day is celebrated as well. It is a traditional Polish holiday. A party that was first hosted by a Judge and his wife. Recently Dyngus Day is a celebration returned to historic polonia District in form of large parties at the Buffalo Central Terminal, Churches and Libraries. In 2006 the first Dingus Day parade took place around the streets of the Polonia District. The Polka and the famous polka music  is a large part of the festival 

South Bend Indiana celebrates Dingus Day with the official starting day to launch the year's political primary campaign season. Famous politician who have celebrated Dingus day in this fashion include Robert F. Kennedy, former governor Joe Kernan and former president Bill Clinton among many others.
Terre Haute Indiana hosts a large Dyngus day for students of the Rose Hullman Institute of Technology where they offer students free polish sausage as well as a concert Bloomington Indiana will find electric hair wigs, flashing neon beer logos and shotskis at Yogi's Grill and Bar. Dyngus Day is celebrated there with polish foods such as pierogi, hard boiled eggs and polish sausage sandwiches. No matter who you are employee, customer or clown everyone loves the festivities.

Many think that the holiday of Easter Monday in North Carolina was promoted with the desire to have the day off to attend the annual baseball game between North Carolina State College and the once nearby Wake Forest College in the early 1900s.

Many schools in Texas and the Southwest close schools for both Good Friday and Easter Monday as part of spring break.

Here is a great recipe you can use Easter leftover ham and enjoy all new meal
Sweet and Sour Ham
  • 2 T. oil
  • 2 1/2 c. cubed ham
  • 1 green pepper, diced
  • 1 20oz. can pineapple tidbits or chunks
  • 2 T. apple-cider or plain vinegar
  • 3 T. brown sugar
  • 2 T. soy sauce
  • 1 t. ginger
  • 1/2 t. crushed red pepper flakes
  • 1/4 c. water
  • 1 T. corn starch
1. Heat oil in a large skillet. Add ham and green pepper. Drain pineapple juice into a bowl and add pineapple to the skillet. Cook for 5 minutes.
2. In the bowl with the pineapple juice, add vinegar, brown sugar, soy sauce, ginger, red pepper flakes, water and corn starch. Whisk together until smooth.
3. Add sauce to the skillet, bring to a boil and simmer until desired thickness, about 3 minutes. Serve over rice.
