Celebrate Meat === Meatloaf
2 pounds ground beef
1/2 medium onion, grated
1/2 teaspoon thyme
3/4 cup ketchup, divided (1/2 cup, ¼ cup)
1/2 cup dried breadcrumbs
1 large egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon black pepper
Preheat oven to 400° F.
In a large bowl, combine beef, onion, thyme, 1/2 cup ketchup, breadcrumbs, egg, salt, and pepper. Using your hands, gently mix until all the ingredients are combined.
Place meat mixture onto a baking sheet lined with parchment paper or aluminum foil. Shape the meat into a loaf about 9 inches long and 4 inches wide. Top with remaining ¼ cup ketchup. Bake 45-50 minutes. Let stand 10 minutes before slicing.
Meatloaf is a very individualized taste. Experiment with the seasoning amounts to your own preference.
