Iced Pumpkin Spice Cake



PAM® Baking Spray
3 cups Ultragrain® All Purpose Flour
4 teaspoons pumpkin pie spice
2 teaspoons baking powder
1 cup Parkay® Original-stick, softened (1 cup = 2 sticks)
2 cups firmly packed brown sugar
1 cup Egg Beaters® Original (1 cup = 8 oz)
1 can (15 oz each) solid-pack pumpkin
1-1/2 cups golden raisins
1-1/2 cups confectioners' sugar
2 tablespoons water
1 cup chopped pecans or walnuts
Reddi-wip® Fat Free Dairy Whipped Topping, optional

Preheat oven to 350°F. Spray 13x9-inch baking pan with baking spray. Combine flour, pumpkin pie spice and baking powder in medium bowl; set aside.
Mix together Parkay and sugar in large bowl on medium-high speed of electric mixer until creamy. Add Egg Beaters; mix until blended. Turn mixer to low; add pumpkin. Gradually blend in flour mixture. Stir in raisins by hand.
Bake 40-45 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.
Blend confectioners? sugar and water; drizzle over cake. Sprinkle nuts evenly over top. Cut into 12 servings. Just before serving, dollop with Reddi-wip, if desired.

Piggy Paint Review


I am the nana of a little princs who loves to look pretty all the time. One of her favorite things to do is to have time with her mommy and have her piggy toes painted. Memories of Home and A Cornbread Recipe

My mother was very frugal in the manner in which she did things. She always provided a good home for us and delicious meals. One of her favorite fall recipes to make for us was beans and corn bread. Now while my husband and his family preferred the brown beans my mother always prepared old navy butter beans or white beans. Corn bread , a bit of butter and oh my those tasty beans that mama cooked would send me to that happy place. Do you have any memories of your favorite meals as a kid? 1 2/3 cups all-purpose flour
1/2 cup sugar
2/3 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup Margarine, melted, cooled
1  Egg


Heat oven to 400°F. Combine flour, cornmeal, sugar, baking powder and salt in large bowl.
Combine milk, margarine and egg in medium bowl; beat with wire whisk. Add egg mixture to flour mixture; stir just until combined.
Spoon batter into greased 8-inch square baking pan. Bake for 20 to 25 minutes or until light golden brown and toothpick inserted in center comes out clean.

Kids In Kitchen Mashed Potato Hills



2 pounds Yukon Gold potatoes
2 cubes reduced-sodium chicken bouillon water
1/4 cup skim milk
4 ounces fat-free cream cheese, at room temperature
1/2 cup low-fat shredded sharp cheddar cheese
2 teaspoons chopped fresh parsley

 
Together: Preheat the oven to 450 degrees F. Spray the baking sheet with cooking spray.

Adult: Peel the potatoes and cut them into small cubes.

Together: Place potatoes in a saucepan. Put bouillon cubes in the pan with the potatoes. Add water until it barely covers the potatoes. Put the lid on. Turn heat to medium and cook until the water begins to boil. Cook for about 30 minutes, or until the potatoes are very soft when you poke them with a fork.

Adult: Drain the potatoes and put them back in the pan.

Kid: Mash the potatoes with a potato masher.
Together: Add milk, cream cheese, sour cream and cheddar cheese to potatoes. Mix well.

Kid: Scoop the mashed potatoes into 6 hills on the baking sheet. Smooth the hills into ovals, using a wooden spoon.

Adult: Put the baking sheet in the oven. Bake for 10-15 minutes, or until the hills are golden brown. While the hills are baking, snip the parsley into little pieces using kitchen shears. Using potholders, take the baking sheet out of the oven.

Kid: Sprinkle the hills with chopped parsley and serve
