Inside Out Carrot Cake


3 tablespoons unsalted butter, softened, plus more for cookie sheets
3/4 cup all-purpose flour 
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1/2 teaspoon cinnamon
1 teaspoon ground ginger
Pinch ground cloves
1/8 teaspoon freshly, finely grated nutmeg
1/8 teaspoon freshly, finely ground black pepper
6 tablespoons vegetable oil 
1/2 cup firmly packed light brown sugar 
1 large egg 
1/4 cup sour cream 
3/4 teaspoon vanilla, divided
1 1/2 medium carrots, peeled and shredded on the fine side of a box grater (to yield 1 cup)
1/4 cup unsweetened shredded dried coconut
5 ounces cream cheese, softened 
2/3 cup powdered sugar
1 teaspoon heavy cream or milk 

 Preheat oven to 350°. Put a dab of butter in each corner of 2 large baking sheets and line with parchment.  In a medium bowl, whisk together flour, baking soda, salt, and spices. In a large bowl, whisk together oil, brown sugar, egg, sour cream, and 1/4 tsp. vanilla; stir in dry ingredients with a wooden spoon until well combined. Add carrots and coconut, stirring until just combined.  Drop 1-tbsp. circles of batter onto baking sheets about 1 in. apart. Bake until cooked through and browned slightly, 14 to 18 minutes. Cool on baking sheets.  Using a stand mixer or hand mixer, beat cream cheese until very soft. Add butter and beat until smooth and well blended. Add powdered sugar a third at a time, beating until smooth after each addition. Beat in cream and remaining 1/2 tsp. vanilla.  Flip cakes over and spread about 1 1/2 tbsp. frosting on half of them. Top each with a remaining cake, flat side down, to sandwich the frosting.

Pumpkin Not Just For Halloween : Pumpkin Spice Cake


I want to make this delicious pumpkin spice cake. The delicious taste of pumpkin is perfect for autumn and even goes great with Thanksgiving.





1 cup (2 sticks) unsalted butter, at room temperature, plus more for the pan
3 cups all-purpose flour, spooned and leveled, plus more for the pan
5 teaspoons pumpkin pie spice
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
3 large eggs
1 15-ounce can pumpkin puree (1 1⁄2 cups)
1/2 cup whole milk
1/4 cup molasses
1 1/4 cups confectioners’ sugar
2 tablespoons fresh lemon juice 

Heat oven to 350° F. Butter and flour a 12-cup Bundt pan. In a bowl, whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt. Using an electric mixer, beat the butter and granulated sugar on medium-high until fluffy, 2 to 3 minutes. Beat in the eggs, one at a time. Beat in the pumpkin puree, milk, and molasses (the mixture may appear curdled). Reduce the mixer speed to low; gradually add the flour mixture and mix until just combined (do not overmix). Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, 55 to 65 minutes. Let cool in the pan for 30 minutes, then invert onto a wire rack to cool completely.  In a bowl, whisk together the confectioners’ sugar and lemon juice until smooth. Drizzle over the cake. Let set before serving.

Crispy Frankenstein



1/4 cup Land O Lakes® Butter
1 (10-ounce) package (40) large marshmallows
1 teaspoon green food color
6 cups crisp rice cereal
18 wooden craft sticks, if desired
Black or white decorator icing or gel
Assorted candies for decorating, such as, bright colored candy-coated chocolate pieces, small jelly beans, jumbo candy confetti, candy corn, pretzel sticks and/or mini marshmallows

Line 13x9-inch pan with aluminum foil, extending foil over edges. Butter foil generously; set aside. 
Melt butter in large 6-quart saucepan over medium-low heat; add marshmallows. Continue cooking, stirring occasionally until melted and smooth (5 to 7 minutes). Remove from heat; stir in food color. Stir in cereal until well coated. Place mixture into prepared pan. Press down firmly with buttered hands. Cool completely. Invert bars onto large cutting board; remove foil. Cut bars into 18 (3x2-inch) rectangles. Press craft stick into short side of each bar, if desired. Use icing to create hair and attach candies for face, as desired. Let set about 1 hour. Store in single layer in container with tight-fitting lid.

The Great White Pumpkin Cheese Cake Ball



2 (10-oz.) blocks extra-sharp white Cheddar cheese, shredded*
1 8-oz.) package cream cheese, softened
2 (4-oz.) goat cheese logs, softened
1/2 teaspoon pepper
Braided pretzel, muscadine vine and leaf
Crackers and assorted vegetables

Stir together first 4 ingredients. Shape mixture into a ball to resemble a pumpkin. Smooth pumpkin's entire surface with metal spatula or table knife. Make vertical grooves in ball, if desired, using fingertips. Press pretzel into top of cheese ball to resemble a pumpkin stem; place muscadine vine and leaf beside pretzel. Serve with crackers and assorted vegetables.

Pork Chops with Cinnamon Apples



1 teaspoon dried rubbed sage
1/2 teaspoon salt 
1/4 teaspoon freshly ground black pepper
4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick) 
1/2 teaspoon vegetable oil 
cooking spray
1 teaspoon butter 4 cups (1/2-inch) slices peeled Granny Smith apples (about 4 medium)

1 tablespoon brown sugar 
1 teaspoon fresh lemon juice 
1/2 teaspoon ground cinnamon
Dash of salt

Combine first 3 ingredients, and sprinkle over the pork. Heat oil in a large nonstick skillet coated with cooking spray over medium heat. Add pork; cook 3 minutes on each side or until done. Remove the pork from pan. Cover and keep warm. Melt butter in pan over medium heat. Add apples and remaining ingredients, and cook 5 minutes or until tender, stirring frequently. Serve the apples with pork.

Layered Fiesta Casserole


1 lb.extra-lean ground beef
1 green pepper, chopped
1 red pepper, chopped
1 jar (16 oz.) TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (10 oz.) frozen corn
12 corn tortillas (6 inch)
1-1/2 cups KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided

 

HEAT oven to 375°F.
BROWN meat with peppers in large skillet; drain. Return to skillet. Stir in salsa, tomatoes and corn.
SPREAD 1 cup meat mixture onto bottom of 13x9-inch baking dish; top with 6 tortillas, overlapping as necessary. Cover with layers of half each of the remaining meat mixture and cheese; top with remaining tortillas and meat mixture. Cover.
BAKE 25 to 30 min. or until heated through. Top with remaining cheese; let stand, uncovered, 5 min. or until melted.

Easy Halloween Treat : Melting Witch Pudding Cup


1/3 cup semisweet chocolate chips
1 teaspoon shortening
8 Bugles® original snacks
1 box (4-serving size) white chocolate instant pudding and pie filling mix
4 cups cold milk
1 box (4-serving size) chocolate fudge instant pudding and pie filling mix
6 drops green food color
8 creme-filled chocolate sandwich cookies or chocolate covered mint patties
8 pretzel sticks
1 tablespoon Fiber One® cereal or chow mein noodles, pieces broken in half
16 gummi worm candies L

Line cookie sheet with waxed paper. In small microwavable bowl, microwave chocolate chips and shortening on High 1 1/2 to 2 minutes or until melted; stir until smooth. To make tops of witch hats, dip snacks, one at a time, into melted coating, letting excess drip off. Place point up on cookie sheet. Let stand until coating is set. Prepare white chocolate pudding with 2 cups of the milk as directed on box. Prepare chocolate fudge pudding with remaining 2 cups milk as directed on box. Stir green food color into white chocolate pudding until well blended. For each pudding cup, spoon 2 tablespoons of the green pudding into bottom of 4-ounce clear plastic cup or serving dish; top with 2 tablespoons of the chocolate fudge pudding. Repeat with each flavor to form four layers. With handle of spoon, gently swirl the two top layers. Insert cookie in pudding; top with chocolate-coated Bugle® to resemble witch hat. Insert tip of pretzel stick into pudding with a few pieces of cereal sprinkled at the base to resemble a broom. Insert ends of 2 gummi worm candies into pudding and hang over edge to resemble the witch’s legs.

Quick Supper Idea : 30 Minute Meatloaves

1/2 cup ketchup
2  tablespoons packed brown sugar                                           
1  lb lean (at least 80%) ground beef
1/2 lb ground pork
1/2 cup Original Bisquick® mix
1/4 teaspoon pepper
1 small onion, finely chopped (1/4 cup)
1  egg
Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.        Spray 13x9-inch pan with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.  Bake 18 to 20 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160°F.

Pumpkin Fudge



3 cups sugar
3/4 cup melted butter
2/3 cup evaporated milk
1/2 cup canned pumpkin
2 tablespoons corn syrup
1 teaspoon pumpkin pie spice
1 (12-ounce) package white chocolate morsels
1 (7-ounce) jar marshmallow crème
1 cup chopped pecans, toasted
1 teaspoon vanilla extract

Stir together first 6 ingredients in a 3 1/2-quart saucepan over medium-high heat, and cook, stirring constantly, until mixture comes to a boil. Cook, stirring constantly, until a candy thermometer registers 234° (soft-ball stage) or for about 12 minutes. Remove pan from heat; stir in remaining ingredients until well blended. Pour into a greased aluminum foil-lined 9-inch square pan. Let stand 2 hours or until completely cool; cut fudge into squares.

Notes: Line pan with aluminum foil before you begin to cook the fudge. Once the candy thermometer reaches 234° and the remaining ingredients are added, quickly spoon the fudge into the pan.

always a lover don't think I could ever be a hater Halloween is a time of  year that some can go over board but to me is a time of fun, a time to even shine our light. It all depends on how one shares the holiday as for me we will be taking place in a few different Christian activities and having lots of fun sharing with others

3. Can you respect someone you do not trust, and can you trust someone you do not respect?

hard to  do but I think you can give respect without trust and I also think that someone can be an honest person and not be respectful

4. . Apples or oranges? Yes, you have to choose.

they are to different things to me and at times I may want one over the other but I must say apples as there are many more things I can do with apples

5. What is something you wish was in your town? (shop, restaurant, attraction, etc)

while we have a Wal-Mart and a McDonalds as well as other fast food restraunts and great places to shop in our town our young people are without anything to do and that is what I wish we had for them

6. What non-food item is in your refrigerator or freezer?

coffee filters believe it or not hubby keeps them in the freezer

7. Are you at all superstitious?

about somethings yes not as bad as others but I do throw salt over my shoulder when I spill it, cross the street when I see a black cat coming and never walk under a ladder

Tonight I will be taking part in a wonderful activity at our church. Judgement House and I ask that all those that can to keep us in your prayers. It is a worthwhile event that we do every year to share the story of salvation through actions

Treat of a Sandwich : Mushroom and Provolone


1 pound ground sirloin
Cooking spray
1 tablespoon olive oil
1/4 cup thinly sliced yellow onion
1/8 teaspoon salt
1/8 teaspoon black pepper
1 (8-ounce) package sliced cremini mushrooms
1 1/2 teaspoons all-purpose flour
1/4 cup dark beer (such as porter)
8 (1.1-ounce) slices rye bread
4 (3/4-ounce) slices reduced-fat provolone cheese 

Heat a large nonstick skillet over medium-high heat. Shape beef into 4 (4-inch) patties. Coat pan with cooking spray. Add patties; cook 4 minutes on each side or until done. Heat oil in a medium skillet over medium-high heat. Add onion, salt, pepper, and mushrooms; sauté 3 minutes. Sprinkle flour over mushroom mixture; cook 1 minute, stirring constantly. Stir in beer; cook 30 seconds or until thick. Remove from heat; keep warm. When patties are done, remove from large skillet. Wipe pan clean; heat over medium-high heat. Coat 1 side of each bread slice with cooking spray. Place 4 bread slices, coated sides down, in pan. Top each with 1 patty, 1 cheese slice, and one-fourth of mushroom mixture. Top with remaining bread slices; coat with cooking spray. Cook 2 minutes on each side or until browned.

Chilli Bake

source : Pillsbury
1 1/4 lb lean (at least 90%) ground turkey
1 can (16 oz) spicy chili beans in sauce, undrained
1 1/2 cups shredded Cheddar cheese (6 oz)
1 can (8 oz) Pillsbury® refrigerated reduced fat crescent dinner rolls
1 tablespoon cornmeal 
 
Heat oven to 375°F. In 10-inch skillet, cook turkey over medium-high heat 7 to 9 minutes, stirring frequently, until no longer pink; drain if necessary. Stir in beans; heat until hot. Pour hot mixture into ungreased 11x7-inch or 8x8-inch (2-quart) glass baking dish. Sprinkle with cheese. Unroll dough onto flat surface; firmly press perforations to seal. Using small Halloween-shaped cutter, cut 2 or 3 shapes out of dough. Place dough sheet evenly over top (for 8x8-inch dish, fold under short sides to fit). Sprinkle cornmeal all over dough, except on cutout area.   Bake 18 to 20 minutes or until golden brown.

pajamas and slippers would not be a good idea unless it has something to do with being a professional sleeper

a man with hairy knees

the thong hanging out of the top of their pants but then that is only my opinion

4. What fashion trend for men should be outlawed?
same type of deal I like the song "Pants on the ground" give an idea what I am talking about?
5. The worst fashion trend for kids/teens would be what?
not for sure on this one I think most of the looks are cute but then the looks that make them look older or sexy are a bit not my style

6. Is it ever okay to dress a pet in clothes?
if that is your thing and you think your pooch is cold why not?

7. What was the worst fashion disaster of the 80's?
I loved them then but maybe parachute pants?

    Spooked Up Spice Cake



    1 1/2 sticks (6 oz.) unsalted butter, at room temperature
    1 1/2 cups sugar
    2 eggs, at room temperature
    1/2 cup sour cream
    2 tablespoons unsweetened Dutch-process cocoa powder
    1 1/2 teaspoons baking soda
    1 teaspoon ground allspice
    1 teaspoon ground cinnamon
    1 teaspoon ground ginger
    1/2 teaspoon salt
    3 apples, peeled and grated (2 cups)
    1 3/4 cups flour
    1 cup raisins
    1 cup coarsely chopped pecans
    2 sticks (1/2 lb.) unsalted butter
    1 cup (packed) dark brown sugar
    1/4 cup whole milk
    2 1/4 cups confectioners' sugar
    1 teaspoon vanilla extract
    Orange food coloring
    1 tube black icing
    Peanut or almond M&M's

     

    • Make cake: Preheat oven to 350°F. Lightly grease 2 (8- or 9-inch) round cake pans; line with parchment, grease again and dust with flour.
    • Beat butter and sugar with an electric mixer until fluffy. Add eggs one at a time, beating well after each addition. Beat in sour cream, then cocoa, baking soda, allspice, cinnamon, ginger and salt. Reduce speed to low; beat in apples and flour until blended. Stir in raisins and pecans (batter will be thick).
    • Spoon batter into pans, smoothing top. Bake until a toothpick inserted in center comes out clean, about 45 minutes. Cool on a wire rack for 10 minutes, turn out onto racks; remove wax paper; cool. Refrigerate until ready to use. (Cakes can be made a day ahead, wrapped tightly in plastic and refrigerated, or up to 3 weeks ahead and frozen.)
    • Make brown-sugar frosting: Melt butter over medium heat; stir in brown sugar and cook over low heat, stirring, until sugar and butter are blended, about 5 minutes.
    • Stir in milk and cook over medium heat just until mixture comes to a boil, stirring often. Let cool, about 1 hour.
    • Add confectioners' sugar, about 1/2 cup at a time, whisking until smooth and spreadable. Whisk in vanilla. Add food coloring in small increments until icing is desired shade of pumpkin. Use immediately.
    • Assemble cake: Spread about 3/4 cup frosting evenly on top of a layer. Place second layer on first and frost top and sides with remaining frosting.
    • Using black icing, pipe on a spiderweb (see photo). Make spiders with M&M's, adding eyes and legs with icing. (Cake can be loosely covered and kept at room temperature for up to 2 days or refrigerated for up to 5 days. Bring to room temperature before serving.)

    Stained Glass Spooks

    Halloween cookie cutters such as pumpkin, ghost, cat, and bat
    Heavy-duty aluminum foil
    Canola or safflower oil
    Small hard candies in assorted colors, such as Jolly Ranchers (the best) or LifeSavers
    Wooden skewer
    Satin baby ribbon, 1/8-inch wide

    Preheat an oven to 350 degrees.
    Line the bottom and interior sides of the cookie cutters with aluminum foil and brush the foil lightly with the oil. Set on a baking sheet.
    Arrange the hard candies in a single layer on the foil bottom of the cookie cutter. Bake until the candies melt, about 10 minutes.
    Remove from the oven, let cool for 1 minute, then poke a hole in the top with the wooden skewer. Cool; then pop out the stained glass shapes from the cookie cutter and peel off the aluminum foil. Thread the ribbon through the hole. Hang in a sunny window.

    Bacon Delight Dip



    1 (8-oz.) pkg. cream cheese softened
    6 green onion(s) chopped
    1 (4-oz.) carton sour cream
    1 (1-lb.) round loaf sour dough, rye, pumpernickel or Hawaiian bread                   
    1 (16-oz.) pkg.Farmland® Hickory Smoked Bacon
    1 (4-oz.) can chopped green chiles                   

    Heat oven to 350°F. Cook bacon until crisp. Drain, crumble and set aside. Cut top off bread to form a cover. Remove bread inside loaf, leaving a 1/2-inch shell of bread. Cut removed bread into 1-inch cubes. Beat together cream cheese, sour cream, chiles and onions. Stir in bacon. Spoon mixture into bread and replace bread top. Wrap bread in heavy foil and bake 1 1/4 hours at 350°F. Serve bread with bread cubes for dipping.

    Freschetta Proud To Support Pink and Giveaway


    I was in my mid 20s when I met a lady who would stay in my mind forever. It was this lady and her strength that helped to leave an impression in my memory. Her husband had passed on when she was young and alone she had raised her young family and then a grand-daughter. Her name was Dixie and believe me she was something to remember. You see Dixie battled breast cancer twice in her life. Once when her grand-daughter was a young girl and later when she was in high-school. The first time she battled cancer with all she had making a deal with God that she would share with others. She wanted to live to see her young grand-daughter old enough to take care of herself. She battled breast cancer and it went into remission only to return years later. It was the second time around that she shared with those that she worked with that it was time to pay up for the time her Lord had blessed her with. Her battle was long and hard and believe me I do feel she fought for all the time she was blessed with but in the end would pass shortly after seeing her precious grand-daughter graduate from high-school. There are too many stories like this for those of us who have known individuals who have had their lives touched by breast cancer. 

    October is breast cancer awareness month and I am so happy that I am able to share with you about what FRESCHETTA is doing to help bring awareness to Breast Cancer through the Proud to Support Pink program.
