Apple Orchard Chicken Salad

This past weekend we were able to enjoy spending time outside with some friends. It was a great time to have a picnic sandwich and to enjoy the sites that we saw. It is becoming apple picking weather here and the sandwich recipe from Taste of Home idealy named Apple Orchard Chicken Salad

1-1/2 cups cubed cooked chicken breast
1 celery rib, thinly sliced
1/2 cup chopped red apple
1/4 cup dried cranberries
1/3 cup fat-free mayonnaise
2 lettuce leaves
1 bacon strip, cooked and crumbled
2 tablespoons crumbled blue cheese
2 tablespoons chopped almonds

In a small bowl, combine the chicken, celery, apple and cranberries. Stir in mayonnaise. Serve on lettuce; sprinkle with bacon, blue cheese and almonds

  2. This sounds wonderful! I have tons of apples this year and need a lot more ideas for using them. I've already done apple butter, applesauce, and apple pie filling. The larder is full!
