Monday Menu Planning

Thanks to some rather great sales that I found at the supermarket Saturday my menu looks very interesting and teen pleasing I am sharing them on the menu plan monday at organized junkie .com

Monday: Doritos Taco Salad
3/4 pound ground beef, browned and drained

5 Roma tomatoes, finely chopped
2 small yellow onions, minced
2 garlic cloves, minced
1 large jalapeno pepper, seeded and finely chopped
1 cup chopped fresh cilantro
1 tablespoon cumin
1 teaspoon coriander
1 head iceberg lettuce, finely chopped
1- 15oz. can black beans, drained and rinsed
3/4 cup crumbled fresh white cheese (queso fresco, Cotija, Panela, Feta)
1 cup crumbled Doritos nacho cheese (more to serve on the side)
Olive oil
Salt & Pepper

FOR THE DRESSING:

1/4 cup canola oil
1 lime, juiced
1 teaspoon honey
1 teaspoon cumin
salt & Pepper

Coat the bottom of a skillet with some olive oil. Heat and add half of the minced onion. Cook, stirring occasionally, until onion starts to brown, about 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Add the browned beef, cumin and coriander. Mix well. Add half of the tomatoes, half the jalapeno pepper and half of the cilantro, mix well, and cook for and additional 15 minutes. Season with salt and pepper. Remove from heat and cool down completely. in a bowl mix together the black beans, remaining minced onion, remaining tomatoes, remaining jalapeno and remaining cilantro. Season with salt and pepper and mix well. Whisk together the oil, lime juice and honey. Add the cumin and season with salt and pepper. In a large bowl, mix together the lettuce and the bean mixture. Add the cheese, the cold meat and the crushed Doritos. Drizzle the dressing on the salad and toss well. Serve with extra Doritos on the side.

Tuesday: Chilli

1 Medium Onion Chopped

1-2 Bell Peppers Chopped
2 Cloves of Garlic Diced
1 Tablespoon Olive Oil
1 lb of Ground Beef Browned
1 can of Kidney Beans
1 can of Chick Peas
1-3 Tbsp of Chili Paste
1 Can of Diced Tomatoes
1 Can of Tomato Paste
1 tsp ground Cumin
1 Tbsp Molasses
Salt and Pepper to Taste

Heat olive oil in the bottom of a large pot, saute onions, bell peppers, and garlic until softened. Add in browned beef beans, tomato and tomato paste, chili paste, salt and pepper, cumin and molasses. Keep heat on medium until the chili comes to a simmer. Turn down heat to low, keep covered and cook for 1-2 hours. Enjoy.

Wednesday: meatloaf
2 eggs

1/2 cup tomato juice or V8
1/4 cup ketchup
1 Tbs Worcestershire sauce
1/2 tsp each salt and pepper
1 cup bread crumbs
1/2 cup quick cooking oatmeal
6 cloves garlic, minced
1/2 cup fresh parsley or 1/4 cup dried
1 carrot, minced
2 ribs celery, minced
1/2 green pepper, minced
1 onion, minced
1 pound ground beef

Preheat oven to 350 degrees. Mix together the eggs, tomato juice, ketchup, Worcestershire sauce, salt, and pepper. Stir in the bread crumbs and oatmeal. You can chop the vegetables by hand or in a food processor. Then mix them into the mixing bowl and stir well. Finally, add the meat and mix together with your hands. (If you’d rather use a mixer, just be sure not to overmix.) Spray a loaf pan with cooking spray and spread the meat in it. 
Top with your choice of toppings, like 2 Tbs brown sugar and 2 Tbs mustard, or 1/4 cup ketchup and 1 Tbs red wine vinegar.

Cheesy Potatoes:

Cheesy Potatoes


1 Package of Frozen Hashbrowns
1 (10 oz) can Cream of Potato Soup
1 cup of Sour Cream
1 bag (2 cups) of Shredded Cheddar Cheese
Salt an Pepper to taste

Mix all ingredients together in a large bowl. Spray a 9X13” pan with cooking spray. Spread potato mixture into pan. Bake for 1 hour at 350 degrees.

Thursday: sloppy joes and fries

1 pound lean ground beef

1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids. Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

Friday: hamburger goulash

•1 pound Hamburger

•1 whole Small Onion, Diced
•3 cloves Garlic
•14 ounces, weight Diced Tomatoes
•6 ounces, weight Tomato Paste
•2 cans Water (use Tomato Paste Can To Measure)
•¼ teaspoons Italian Seasoning
•Salt And Pepper, to taste
•1-½ cup Large Elbow Macaroni

Cook hamburger and drain. Dice onions and garlic and place in the skillet with the cooked meat. Cook on low for about 3 minutes. Add diced tomatoes, tomato paste and 2 cans of water (use the tomato paste can to measure). Add salt, pepper and Italian seasoning (you can add more Italian seasoning).
Simmer for 5 minutes. Add dry macaroni and simmer for at least 10 minutes, covered. When pasta is cooked, it is ready to serve. This recipe is also great as leftovers (you can always double the recipe).
