Beef and Broccoli with Soba Noodles

1 teaspoon vegetable oil




1 pound Laura’s Lean Beef 96% Lean Ground Beef



1 onion, sliced



2 carrots, julienned or grated



3 cloves garlic



1 tablespoon grated ginger (find it already grated in a jar or grate your own)



1 head broccoli broken into florets or 4 cups frozen broccoli florets



1 cup beef stock



2 tablespoons soy sauce



2 teaspoons sesame oil



1 package soba noodles



Lemon peel, sliced into thin pieces







1. Bring large pot of water to boil. Cover and simmer until ready to cook soba noodles.



2. Heat oil in nonstick or cast-iron skillet over medium high heat. Add beef and cook until no pink is left. Add onions and carrots to skillet and cook until softened, about 5 minutes. At this point, bring pot of water to boil and add soba noodles. They need only about 4 minutes to cook; have colander waiting for them so they don’t overcook.



3.Stir garlic and ginger into beef and cook another minute. Add broccoli and beef stock and continue cooking until broccoli is tender and bright green. Stir in soy sauce and sesame oil. Make sure all is hot.



4. Drain noodles when they are done and place about 1 cup noodles in each of 4 bowls. Divide beef and broccoli mixture evenly among bowls. Garnish each plate with lemon zest and serve immediately
