The Ultimate Recipe swap hosted by Fish Mom on the blog Life As Mom is starting the new year 2011 off right with a salute to whole grain recipes. I decided to share a cookie recipe which is healthier than many other types of cookies I hope you enjoy




Peanut Butter-Honey Oatmeal Cookies

1 1/2 cups old fashioned oats

3 tablespoons unsalted butter

1/2 cup all purpose flour

1/2 cup whole wheat flour

3/4 teaspoon baking soda

1/3 cup creamy natural peanut butter

1/2 cup lightly packed light brown sugar

2 tablespoons honey

1 large egg

1 teaspoon vanilla extract

1/2 cup coarsely chopped honey roasted peanuts

3/4 cup dark chocolate chips



Preheat oven to 350 degrees F. Scatter oats on a large sheet pan and bake for 10-12 minutes, or until light golden brown; remove from sheet pan. Coat sheet pan with cooking spray, etc. Melt the butter in a small saucepan, over medium heat. Cook the butter for about 4 minutes, stirring frequently, until lightly browned, and foamy. In a medium sized mixing bowl, sift together flours and baking soda. In a large mixing bowl, using an electric mixer on medium speed, beat together browned butter, peanut butter, brown sugar, and honey, until creamy, about 30 seconds. Beat in egg and vanilla until well combined. Beat in flour mixture until combined. Beat in toasted oats, peanuts, and chocolate chips, until combined. Shape the dough into balls, using about 1/4 cup of batter per ball; place on sheet pan and flatten slightly using the palm of your hand, leaving about 1 1/2 inch space between cookies. Bake at 375 degrees F, for 10-12 minutes, or until light golden brown. Cool 2 minutes on pan before transferring to wire racks to cool completely.
Yield: 18 cookies
