Perfect for Mothers Day Afternoon




Here are a couple of recipes found on My Recipes that I thought would make for a great afternoon of visiting mom and having fun



Sparkling Punch


1 (12-oz.) can frozen pink lemonade concentrate, thawed
4 cups white cranberry juice cocktail
1 qt. club soda, chilled
Garnish: fresh mint sprigs

Stir together lemonade concentrate and cranberry juice cocktail in a large pitcher. Cover and chill at least 1 hour or up to 24 hours. Stir in club soda just before serving. Garnish, if desired.


Bacon Olive Party Sandwiches


16 white bread sandwiches

1 (8-ounce) package cream cheese, softened
8 bacon slices, cooked and crumbled
24 pimiento-stuffed olives, chopped
4 tablespoons chopped fresh chives
1/4 teaspoon pepper


combine all ingredients but white bread sandwiches. The mix can be covered and chilled for up to 3 days. To spread easy onto white bread let stand 30 minutes or til soft Bread can be cut into 1/3s and served party style.

Be Creative When Decorating


Be creative when decorating. Use an earring when you cant find a push pin and if you have some old decorative earrings even better.

Six Word Saturday



Last weekend saw us doing prom in our town. Tonight we will see my girls go to the prom with boys from a different town. Fun to be had all around and this time I have no responsibilities. So for my six word saturday phrase I want to say:

Today, another prom in another town

Delicious Rhubarb Pie with less than 300 calories per slice

This is my favorite flavor of pie. Delicious and oh so good. The best thing is this pie has only 276 calories a slice. If you are looking for other delicious pies under 300 calories per slice visit here
Lattice Topped Rhubarb Pie


1 3/4 cups all-purpose flour
3 tablespoons sugar
1/8 teaspoon salt
1/4 cup cold unsalted butter, cut into small pieces
3 tablespoons vegetable shortening
5 tablespoons ice water
Cooking spray

Filling:
6 cups (1-inch-thick) slices rhubarb (about 1 1/2 pounds)
1 cup sugar
3 tablespoons cornstarch
1 1/2 teaspoons grated orange rind
1/4 teaspoon ground nutmeg

Remaining ingredients:
1 1/2 teaspoons 1% low-fat milk
1 tablespoon sugar

To prepare crust, lightly spoon flour into dry measuring cups; level with a knife. Combine flour, 3 tablespoons sugar, and salt in a large bowl; cut in butter and shortening with a pastry blender or 2 knives until mixture resembles coarse meal. Sprinkle surface with ice water, 1 tablespoon at a time; toss with a fork until moist and crumbly (do not form a ball).

Gently press two-thirds of dough into a 4-inch circle on heavy-duty plastic wrap, and cover with additional plastic wrap. Roll dough into a 12-inch circle. Press remaining dough into a 4-inch circle on heavy-duty plastic wrap, and cover with additional plastic wrap. Roll dough into a 9-inch circle. Freeze both dough portions 10 minutes or until plastic wrap can be easily removed.
Preheat oven to 425°. Remove 1 sheet of plastic wrap from 12-inch dough circle; fit dough, plastic-wrap side up, into a 9-inch pie plate coated with cooking spray, allowing dough to extend over edge of plate. Remove top sheet of plastic wrap; fold edges under, and flute.

To prepare filling, combine rhubarb and the next 4 ingredients (rhubarb through nutmeg), tossing well to combine. Spoon filling into crust.

Remove top sheet of plastic wrap from remaining dough. Cut dough into 12 (3/4-inch) strips. Gently remove dough strips from bottom sheet of plastic wrap, and arrange in a lattice design over rhubarb mixture. Seal dough strips to edge of crust. Brush top and edges of dough with milk; sprinkle with 1 tablespoon sugar. Place pie on a baking sheet covered with foil. Bake at 425° for 15 minutes. Reduce oven temperature to 375° (do not remove pie from oven). Bake an additional 30 minutes or until golden (shield crust with foil if it gets too brown). Cool on a wire rack.

Hummus Sammy Sandwich

Parents online featuring recipes for lunch around the world take a look and have some fun
Hummus Sammy

3 Tbsp. low-fat mayonnaise
2 tsp. chopped kalamata olives
2 tsp. finely chopped scallions
5 Tbsp. hummus
4 slices pita bread
6 cucumber slices
2 tomato slices
2 Tbsp. shredded carrots
2 pieces romaine lettuce
Pitted olives, cherry tomatoes, cucumber for garnish


Mix together the mayonnaise, olives, scallions, and a pinch of black pepper in a small bowl and set aside. Spread the hummus on two slices of pita bread and the mayonnaise mixture on the other two. Layer the cucumber, tomatoes, carrots, and lettuce on top of the hummus. Top each hummus slice with a mayonnaise one. Cut in half. Skewer together the olives, tomatoes, and cucumber and serve on the side

Mini Cheese Burgers recipe

Mini Cheeseburgers
great for lunches with little hands

1-1/2 pounds ground beef (90 percent lean)
1 tablespoon dried minced onion
1 tablespoon Worcestershire sauce
3/4 teaspoon garlic salt
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
12 small round dinner rolls (such as potato rolls or dollar rolls)
24 leaves fresh arugula or other leafy green, cleaned
12 slices sharp cheddar cheese (about 3 ounces total)
12 slices plum tomato

Heat gas grill to medium-high or prepare charcoal grill with medium-hot coals. In a large bowl, mix together the ground beef, onion flakes, Worcestershire sauce, garlic salt, Italian seasoning and black pepper. Mix until well combined. Shape seasoned beef into 12 small patties, about 1/4-cup mixture for each, forming patties that are 2-1/2 inches across and 1/2 inch thick. Split the rolls in half and toast the cut side on the grill, about 1 minute.Transfer to a large platter. Top buns with arugula leaves. Transfer hamburger patties to the grill and cook 2 minutes. Flip and cook 2 additional minutes or until cooked through. Top burgers with cheese. Slice should be roughly the size of the burger; if not, cut or fold it to fit. Grill until slightly melted, 1 to 2 minutes. Transfer burgers to lettuce-topped buns and place a plum tomato slice on each. Serve warm. Makes 12 mini burgers

Oh, The Places You'll Go!

With two of my children graduating this year I wanted to share with you a book that means the world to me. The book is by Dr. Seuss and the title of this book is Oh, the places you'll go! and as my children get ready to embark on a life of their own not as guided with restriction and love but instead guided with friendship and guidance from parents that love them and their own common sense I wonder where they will go and what places they will see. I can tell you the journey of motherhood from their births to watching them graduate has a been a journey of its own. A journey of love, struggle, mystery and yes wonder. This book shares a story of the many roads that one will travel in their life. We all have our own roads to travel, sites to see and paths to cross. Where will your road lead today?

Vanilla Ambrosia



1 jar (24 oz) refrigerated citrus salad in extra light syrup, drained
2 cups fresh pineapple chunks
1 cup seedless red grapes, halved
1/2 cup orange juice
1 tsp vanilla extract
1/2 cup miniature marshmallows
1/3 cup sweetened flaked coconut
Garnish: maraschino cherries

Put first 5 ingredients in a large bowl; toss gently to mix. To serve: Add 1/4 cup marshmallows and 2 Tbsp coconut to fruit; toss to mix. Spoon into glasses or dessert bowls. Top with remaining marshmallows and coconut, then cherries.

I have been blessed with many great ladies in my life from my great grandmas to my mother they have all been strong ladies. My great grandma was a school teacher and was a very smart lady. I can remember having great conversations with her and then watched her as she slowly declined. My great grandma noni was a special lady that I have fond memories of. My grandmother H. my moms mom was a strong lady as well as being very smart. She enjoyed nature and being a farmers wife was where she took pride. Active in the church I will never forget how pretty she sang. My grandmother S. on my daddy's side was a special lady as well. She loved to look her best, was a person that taught me a lot about working hard and how to be a lady. My mother was a person that I love very much but our relationship was not always great. I can remember many years of being rebellious and having a distant relationship with her. My mom never gave up though she kept trying and was always there. The year I was so busy with sick children I forgot my own birthday, the year I was in the hospital with my daughter and she showed up with cupcakes for my sons party at school. Yes you can say I feel very lucky that I was blessed with all these wonderful ladies in my life.


With all that said my Aloha Friday question to you is:

The List That Never Ends

The list that never ends, the one that everyone knows. You know the one that keeps growing and never ends. The list I refer to is the Honey Do List. Now I love honey dew mellon but my hubby does not like the honey do list. You can quite imagine that parents of five teens living at home, busy aunt and uncles and taking time whenever we can to dote over our grand daughter we have little time to get things done. We have lived in this house for eight years and while a couple of things have gotten done there are more that need attention. The top 5 things on the list are:

  1. carpet removed and put down new in my bedroom. I hate my carpet worn quite well and would so good if there was new carpet in there
  2. bathroom remodeled this is hopefully going to be done this summer new tub, etc... would look really nice
  3. garden area this is going to be done by me this year I think I ask and ask and yet does not get done so this one will be done this year by me
  4. clothesline up I have wanted one for quite a while yet in the yard is no clothes line as of yet. This would help cut electric bills for sure because the dryer goes non stop year round
  5. paint or wallpaper in living room I would consider anything just looking great.

Mostaccioli Pasta Salad


This is just the right type of weather for delicious pasta salad recipes. So I thought I would share a recipe from my favorite go to cookbook


Mostaccioli Pasta Salad


16 oz box mostaccioli pasta, cooked and rinsed

1 cucumber, chopped

1 red pepper, chopped

1 green pepper, chopped

8 green onions, chopped

4 0z. can black olives, sliced


Mix all together Pour dressing over top and mix


3/5 c sugar

3/4 c vinegar

3/4 c vegetable oil

1/2 T garlic powder

1/2 T onion flakes

1/2 T salt

3/4 t pepper

1 T mustard


Mix all together well and pour over pasta and veggies Chill

These two girls have been friends from early on I just look how pretty they both look in this picture. They will soon graduate and go their own way my hope is that they stay best of friends


Mothers Day Coloring Sheets

1 cup acini de pepe or pastina
1/3 cup finely diced carrots
1/3 cup finely diced red bell pepper
1/3 cup frozen baby peas
1/3 cup finely chopped broccoli
1/3 cup frozen whole-kernel corn
1 tablespoon olive oil
1/8 teaspoon pepper

Cook pasta in lightly salted boiling water for 7 minutes. Stir in veggies and cook 5 minutes; drain. Mix in oil and pepper.

Prom Foursome


Prom night 2010 is one of the many things that I liked. I did not realize til now how great they all look together. The colors look great. My hopes is that they will all remain great friends. I am sharing this with the meme Things I Love which is hosted at Mama Mia this week
4 large day-old croissants
3/4 cup milk
2 large eggs
1 teaspoon vanilla extract
2 tablespoons butter
3 tablespoons powdered sugar
whip cream
strawberry syrup

Whisk together milk, eggs, and vanilla. Pour into a shallow dish. Dip croissant halves into egg mixture, coating well.

Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add four croissant halves, and cook about 2 minutes on each side or until golden brown. Repeat procedure with remaining butter and croissant halves. Sprinkle with powdered sugar; top with Sweetened Whipped Cream, if desired, and Fresh Strawberry Syrup.

Flower Pot Bread recipe for Mothers Day



Flower Pot Bread




2 clay flower pots (6 inch)
1 c milk
1 c water
2 tbs butter
4-5 c flour
2 pkg active dry yeast
2 tbs sugar
1 tbs salt
1 1/4 c Cheddar cheese, shredded
1 egg
2 tbs minced parsley
1 tsp caraway seeds
1/4 tsp tarragon


Wash flower pots, bake dry (15 minutes at 350 degrees), let cool. Line pots with foil very generously. Bring milk, water, butter to a boil, cool to 110 degrees. Mix 2 cups flour with sugar and salt. Add warm liquid and beat 2 minutes. Add cheese, egg and herbs, beat 2 more minutes. Stir in enough additional flour to make stiff
batter. Cover and place in warm spot, let rise until doubled (about 1 hour). Punch down batter and put into flower pots. Bake at 375 degrees until golden, about 50 minutes. Remove from pots and cool on wire racks. Once cool, remove the foil, slice and return to the pots for an unusual and attractive servings.

Monty Cristo Salad


6 cups salad greens
2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes, drained
or 2 (14.5 ounce) cans Red Gold® Diced Tomatoes, drained
1 cup seasoned croutons
1 (9 ounce) package shaved smoked turkey turkey, cut into strips
4 slices Swiss cheese, cut into strips
2 hard cooked eggs, quartered
1/4 cup honey Dijon salad dressing

Combine greens, RED GOLD® PETITE DICED TOMATOES and croutons in a large serving bowl. Add remaining ingredients and toss lightly.

Our Boy Is Turning 18








May 6, 1992 saw the birth of a young man, our son. It was a birth like none other. The doctor was on vacation, our local hospital sent me home having UTI and gas pains, but that would not be the end of it. A few after midnights our son would be born as it was not gas pains but faint labor pains that never came to full blow. He would stay in the hospital for about a week and be brought home as my Mothers Day gift , what more could a mom ask for?
