Zucchini Bread

3 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1/4 tsp baking powder
2 cups sugar
3 large eggs
1 cup vegetable oil
2 tsp vanilla
1 cup chopped walnuts (optional)
2 cups grated zucchini


Directions:
Sift together first 4 ingredients. Mix together with remaining ingredients. Bake at 325 degrees for 1 hour.
Makes 2 standard-size loaves. Freezes well.
