Oven Fried Chicken

1 stick butter or margarine
2 cups bread crumbs
3/4 cup grated Parmesan cheese
2 tbsp fresh parsley
1 garlic clove, minced
2 tsp salt
1/4 tsp pepper
10 boneless chicken breasts

Directions:
Preheat oven to 350 degrees. Melt butter. Mix all dry ingredients together in separate bag or bowl. Dip chicken in melted butter and then in bread crumb mixture, coating thoroughly. Bake in greased 9x13" dish for 1 1/2 hours.
My Notes:
Optional cream sauce: Heat together 1 can cream of chicken soup and 1/4 cup milk; serve with chicken.

This recipe makes plenty of dry mix - enough to store in a Ziploc bag in the fridge for a couple of weeks. Make sure to separate out the dry mix you're going to save before you start dipping the chicken though! Any mix used with the raw chicken should be thrown out immediately afterward.
