Lasagna Rollups

In a large family one problem that exist is feeding them all. It takes a mess of food to feed me, hubby and five teens that all still live at home. Portion size is not always the same The cook learns whose appetite is the largest and who has a slimmer appetite. I love recipes like lasagna rollups simply because for once everyone can get the same size of portion as the one sitting next to them at the table.

Put an end to trying to figure out how to portion the lasagna! Roll and cook up
this easy recipe and serve everybody an individual rollup. Everybody gets an
equal serving -- that is, until we start dishing out seconds!

* 1 (28-ounce) jar spaghetti sauce, divided
* 1 (2-pound) container ricotta cheese
* 2 (8-ounce) cups mozzarella cheese, divided
* 1/3 cup grated Parmesan cheese
* 3 eggs
* 1 tablespoon fresh chopped parsley
* 1 teaspoon salt
* 12-14 lasagna noodles, prepared according to package directions

Preheat the oven to 375 degrees F. Pour half the spaghetti sauce over the bottom of a 9" x 13" baking dish. In a medium bowl, combine the ricotta cheese, 1 cup mozzarella cheese, the Parmesan cheese, eggs, parsley, and salt until well blended. Spoon the cheese mixture over the lasagna noodles, distributing evenly, and roll up tightly. Place the roll-ups seam-side down in the baking dish; top with the remaining sauce. Sprinkle with the remaining mozzarella cheese.
Bake for 35 to 40 minutes, or until heated through. Lighten Up! For lighter roll-ups, substitute reduced-fat ricotta cheese, part-skim mozzarella cheese, and reduced-fat spaghetti sauce.
