Sassy Green & Red Radish Salad

SASSY GREEN & RED RADISH SALAD

1 pound green beans
6 small radishes, halved, sliced
1 small tomato, seeded, sliced
2 green onions, sliced
1/3 cup spicy salsa
2 tbs reduced fat sour cream
1 tbs lemon juice

In saucepot, bring 4 quarts salted water to a boil. Add green beans. Cook until crisp tender. Drain green beans and immediately plunge into bowl of ice water. Drain and pat dry with paper towels.
(2.) On platter, arrange green beans, radishes, tomatoes and green onions.
(3.) In bowl, combine remaining ingredients. Drizzle salsa mixture over salad just before serving.
MAKES 4 SERVINGS OF SASSY GREEN & RED RADISH SALAD...
