Roasted Carrots with Coriander & Mint

ROASTED CARROTS WITH CORIANDER & MINT

(These carrots are yummy, low in fat, easy to make and good for you).

1/4 cup unsalted butter
1 tbs sugar (I used Splenda)
1 1/2 tsp ground coriander
1/2 tsp salt (I left this out)
2 pounds small carrots, trimmed, peeled, cut in half lengthwise
1/3 cup coarsely chopped mint
Pepper to taste

Heat oven to 450 degrees. Spray 2 rimmed baking sheets with cooking spray. Melt butter in a bowl in microwave. Stir in sugar, coriander and salt.
(2.) Put half of the carrots on each pan. Drizzle each pan with half of the butter mixture. Toss to coat, spread carrots on pan.
(3.) Roast 30 min. tossing once until tender and lightly browned. Sprinkle with mint and pepper. Transfer to a serving bowl.
MAKES 8 SERVINGS OF ROASTED CARROTS WITH CORIANDER & MINT
