Kicked Up Beans

KICKED UP BEANS

(These beans are yummy, low in fat, a colorful dish, easy to make).

1 small pickled jalapeno, minced
14.5 oz can diced tomatoes
2 cans 15.5 oz each black beans, drained
1 tbs each minced garlic and oil (I used vegetable oil)
2 tbs each minced cilantro and lime juice
1/2 tsp ground cumin
2 tsp dried oregano
1/2 cup diced onions

In saucepot, cook onions and garlic in oil 2 min. Stir in beans, tomatoes, jalapeno, oregano and cumin. Increase heat. Bring to a boil.
(2.) Reduce heat, let simmer 15 min. Stir in cilantro and lime juice, then serve.
MAKES 8 SERVINGS OF KICKED UP BEANS...
