Country Fried Steak & Gravy

Country Fried Steak Recipe

1 cup all-purpose flour
2 teaspoons salt
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon onion powder
2 (5 ounce) Black Angus top round steaks
buttermilk
4 ounces butter
Country Gravy (recipe follows)
Mix flour, salt, garlic, pepper and onion powder together to make seasoned flour mixture. Tenderize steaks by running through a meat tenderizer or beating with a hand meat tenderizer. Soak in buttermilk briefly and then dip in seasoned flour mixture. Heat butter in sauté pan on medium high heat. Place breaded steaks in pan and cook until golden brown and tender, approximately 10 minutes per side.
Serve with Country Gravy

Country Gravy

2 Tablespoons of bacon grease
3 Tablespoons of flour
2 cups of milk
1 teaspoon black pepper
Salt to taste.

Combine fat with flour in a hot skillet, continuously stirring, cook on medium for a couple of minutes until a dark roux is formed. Add milk slowly to skillet, and mix with roux using either a whisk or wooden spoon. Turn heat to low and continue stirring until mixture is thickened, a couple more minutes. Add pepper and salt to taste. If gravy is too thick for your taste, you can thin it by adding either more milk a tablespoon at a time.
