Asian Turkey Salad with Crispy Wontons

ASIAN TURKEY SALAD WITH CRISPY WONTONS
1 tbs each sesame oil and honey
4 cups each shredded green cabbage and red cabbage
3 tbs vegetable oil
Salt and Pepper
1 pound pkg turkey breast tenderloins
1 tsp reduced sodium soy sauce
1/2 cup thinly sliced green onions
Sesame seeds for garnish (optional)
1 1/2 cups fried wonton strips
Heat oven to 350 degrees. Brush turkey with 1 tbs oil and sprinkle with salt and pepper. Place turkey on a baking pan, cover with foil and bake 30 min. Uncover and bake 20 min. more or until temperature reaches 170 degrees. Cool turkey and shred or cut into cubes.
(2.) In bowl, whisk together remaining oil, vinegar, sesame oil, honey and soy sauce. Add green and red cabbage, turkey and green onions, toss to coat with dressing.
(3.) Divide salad among 6 plates. Garnish with fried wonton strips. Sesame seeds can be used as an additional garnish, if desired, then serve.
