Green Chille Posole Soup


I recently took part in a contest led by TwitterMom and recieved a cute little cookbook from the Candelight group. Here is one that I found especially appertizing:


Green Chille Posole Soup


1 T olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 cans (14 1/2 oz each) no salt added diced tomatoes, drained

2 cans (4 oz each) diced, peeled green chillies, drained

2 cans (15 oz. each) posole (whole white hominy), drained

1 t ground cumin

3cans (10 3/4 oz each) reduced sodium chicken broth

24 unsalted yellow corn tortilla chips, finely crushed

juice and finely grated zest of 1 lime

3 T chopped, fresh cilantro


heat olive oil over medium heat in large saucepan Add onion and saute til tender, (4 minutes) Add garlic and saute 30 seconds Add tomatoes, chilli, posole, cumin, brotha nd chips: simmer for 15 minutes til slight thick Stir in lime juice, lime zest and cilantro

  1. This recipe sounds delicious! And my favorite part is that it's meatless! If you wanted to go totally vegetarian on it, you could also substitute some veggie broth for the chicken broth. I am definitely going to try this. Thank you!
