Great Garden Salads : Thunder & Lightning

This time last year I shared this recipe and because it had several hits recently I wanted to share it again. Hope you enjoy!!!




Thunder and Lightning
1 large tomato
1 medium cucumber
1 small onion, sliced & ringed
1/4 c white vinegar
1/4 c sugar
1/4 c water
salt & pepper to taste
Dice tomato, peel & slice cucumber, slice onion, pull rings apart, add vinegar, sugar , water, salt and pepper, Mix Let set 3 hours prior to serving. This can be doubled or tripled if desired.
To make a different dish just use cucumber and onions, salt and pepper and equal amounts of vinegar, sugar and water.

  2. Hi Annie, I like how you call it, Thunder and Lightning. We used to do this when I was in the Philippines but without the tomato. Of course you can always play with your imagination. Will try your version. Thanks for stopping by my site today.

  3. this sounds like a lovely dish to make in the heat of summer. The ingredients could be fresh from the garden or fresh from the farmers market.

  5. Sounds like something my MIL makes during the summer. Only she skips the tomatoes and we just call it cucumber salad. But I like your name better!
