Grandma Daisy's Shoe Peg Salad

There was a lady in our town that had the name of Marietta Briddick. Marietta grew the reputation of cooking delicious food in a local diner. This recipe came from a collection of hers that she created from recipes she used over the year. Grandma Daisy was her grandmother who taught her to cook.




Grandma Daisy's Shoe Peg Salad

1 can white shoe peg corn, drained
1 can peas, drained
1 can french cut green beans, drained
1 (4 oz.) jar chopped pimentos, drained
1 c green pepper, chopped
1 c celery, chopped
1 c onion, chopped

Dressing:
1/2 c cider vinegar
1 T water
1/4 c oil
1/2 t salt
3/4 c sugar
1/4 t paprika
dash of pepper

Mix drained vegies together, mix in chopped pimentos, green pepper, onion and celery MIx well and set aside Mix all ingredients for the dressing and bring to a boil and let cool Pour over vegetable mix Mix well Chill for at least 6 hours before serving Will keep well for 2 weeks
