Fancy Scrambled Eggs Recipe


Fancy Scrambled Eggs

1 cup Ham
12 Eggs, beaten
3 ounces Sauteed mushrooms
***SAUCE***
1 tablespoon Butter
2 tablespoons Flour
1/2 teaspoon Salt
1/8 teaspoon Pepper
2 cups Milk
1 cup Velveeta cheese, cubed
***Topping***
1 1/2 cup Bread crumbs
1/8 teaspoon Paprika
3 tablespoons Butter

Fry the ham in a skillet; add in the beaten eggs. Scramble until just set. Make The Sauce: Melt butter. Blend in flour, salt and pepper until smooth. Add milk slowly, stirring until combined. Cook and stir. Stir in Velveeta cheese until melted. Fold sauteed mushrooms and eggs into cheese sauce. Place in greased 9 x 13 inch dish. (Recipe up to this point can be refrigerated overnight.) Make Topping: Combine bread crumbs, paprika and butter; stir over medium heat until butter is melted and mixture is combined. Sprinkle on top of eggs. Bake at eggs at 350degrees F for 30 minutes (more if refrigerated overnight).
