COPD Awareness

It's that time of year where we often have coughs and colds. Some of these may be normal and others may not . =Chronic Bronchitis, Emphysema and COPD are all examples of when a cough is more than a cough. Inside the lungs are little air sacs known as alveoli. Whenever an individual with COPD those air sacs have been damaged all ready. Individuals suffering with emphysema more than likely have partially destroyed air sacs. Whenever the air sacs are limited the lungs struggle to do their job The organ responsible for transferring oxygen into the bloodstream are the lungs. Whenever diseases affect the lungs it is harder to do their job.



Individuals with healthy airways can easily move air in and out of the middle of the airway. Individuals with chronic bronchitis has swollen airway walls. Because of this more mucus is produced leading to a chronic productive cough.



COPD may first be noticed as the shortness of breath with strenuous activity. Because of the stren they feel when exercising many will stop. As COPD continues to worsen more signs such as shortness of breath with less activity will occur. At one time COPD was seen as hopeless but now it is treatable when diagnosed early and treated.



Today, when suffering from one of these respiratory illness it can be treated. Treatments include



  • steroids
  • mucolytic agents
  • oxygen therapy
  • surgical procedures
  • lung transplantation

  1. symptoms are often mistaken for other respiratory problems
  2. bronchodilator rehabilitation
  3. cardiopulmonary rehabilitation 
  4. long acting bronchodilators, long term oxygen therapy, possible surgery

What Do YOu KNow About Sweden

Geography Awareness Week is celebrated in the United States in November. It is a great chance to explore ideas that are connected to both the world and daily ideas. From foods we eat to products we buy the world has many outlets. Thus this week of Geography Awareness is important so individuals can make effective decisions, understand geo-spatial issues and even be able to recognize impacts as global citizens.


American Schools lack greatly in the subject of geography. Geography week is important to bring about discussions that will help bring awareness to places around the world. Each year more than 100,000 Americans will participate in Geography Awareness week. A presidential proclamation more than 25 years ago helps bring awareness to both the young and old alike.


Because my grandfather came to America from Sweden I thought I would share a bit about Sweden with you. First of all you may start the day off with some Swedish Pancakes. You may want to check out this blog post to read more about these pancakes
Swedish Pancakes
5 eggs
2 cups milk
1 cup flour
1/2 teaspoon salt
3 tablespoons butter, for the pan
For serving: lingonberry preserves, sugar, whipped cream, maple syrup
Whisk the eggs and milk in a large bowl, and then add the flour and salt. Whisk to combine but don't worry about the lumps. With the butter standing by, heat a 9 to 10-inch pan (a crepe pan works great) over medium heat. When it's hot but not smoking, put a little butter in the pan and swirl it around. Ladle in scant 1/4-cup pancake batter and swirl the pan so the batter spreads out evenly. Let it cook for a minute, until the underside is lighht brown. Use a spatula to flip the pancake over and allow to cook for another 40-seconds to a minute, until the second side is browned. Move the pancake over to a plate and repeat with the remaining batter. If you have two pans of the right size, using them both speeds up the process.
To serve, lay a pancake flat on your plate and sprinkle a little sugar onto the pancake. Then spread on lingonberry (or other) preserves or fruit. Roll it up and repeat with one or two more. Then top with whipped cream and maple syrup if you like, and dig in!




Sweden is ran by a monarchy. A new succession act that is gender neutral is in place. This is a grand difference as heirs of the past had to be male. Sweden is considered the world's most stable and egalitarian democracies. The monarchy has strong roots and public support. The King is Sweden's head of state as well as a standing unifying symbol. The monarch is not politically powerful as they have no formal power. The king's duties are ceremonial and representative. 

Next we may want to dress in the top fashions of Sweden and take a look around as well as get a bit to eat.
Some places we want to be sure to check out:
  • The capital of Sweden , Stockholm is the sight of a great museum The Vasa Museum is a popular place to visit and attracts nearly a million visitors annually. The museum opened in 1990 and inside celebrates the pride of Swedish Imperial fleet. In 1628 the Vasa battle ship sank on its maiden voyage. For more than 300 years the ship laid under the icy waters. In 1961 the ship was averaged and now many come to see the time capsule. 

  • Sweden is also home to the world's oldest open air museum. Skansen is a historic village made up of houses and farmsteads from all over Sweden. The museum shares the culture of both rural and urban at various periods from 1720 to 1960. Churches, schoolhouses, manor houses, shops, mills, workers homes, artisan's shops, a bakery, a funicular railroad, and a number of complete farmsteads. Costumed interpreters carry on the everyday work, demonstrating the crafts and skills, performing household and farm tasks. Zoo animals that are native to Sweden are housed at a children's zoo





  • Fairytale Drottningholm Palace located on the island of Lovo is the location of the UNESCO World Heritage Site. It lies near the Stockholm and is the palace where the Swedish Royal Family. The theatre museum is a great location to see period stage costumes and stage scenery.

Now that you know a bit about my grandfathers great country where the language is Swedish and while there is a king there is also a democracy.

Pungent Cobbler #recipe

Foods that possess a pungent taste are the hottest of all 5 tastes and are found in various veggies. Chili pepper, garlic and onions to name just a few veggies Pungent spices include black pepper, ginger and cayenne. The pungent taste in small amount can stimulate digestion, clear congested sinuses, promote sweating and detoxification, help discharge gas, improve circulation and relieve some muscle pains. Among the foods with a pungent taste include garlic, ginger, mustard, turnips, scallion, radishes, and horseradish.

The recipe I share with you today is a pungent recipe of apples and pears with spice pie. Yummy!!! Enjoy




Sweetly Sautéed Fruit:
2 Pink Lady apples (I only used one but it wasn’t enough)
1 large pear (you can use more if you want, but it may not fit in the skillet!)
1 tbs fresh lemon juice
50g butter
2 tbs brown sugar
1 tsp cinnamon/mixed

Cobbler
1 cup plain flour (I had to use self-raising and there was no difference)
3/4 cup rolled oats
3/4 cup caster sugar
1/2-3/4 tsp Australian Wild Wattle Seed (I ground mine a little more with a mortar and pestle before using it---------------------
120g butter, softened


Preheat oven to 160 degrees C.
Wash, dry, peel and roughly chop up the pear and apples into small, thin pieces. Drizzle with lemon juice till coated through.
In a skillet measuring 16-17cm in diameter, place the pear and apple pieces, the butter, brown sugar and spice.
Cook over medium heat, stirring occasionally so the spice, butter and sugar hits all the fruit pieces. Lower heat slightly and then leave to caramelise and release delicious juices for 10-15 minutes (the fruit will be done when it can be pierced with a skewer with little force)
Move onto the cobbler and in a large bowl combine all of the cobbler’s ingredients. Using your hands (because forks are for the weak!), rub the mixture together till it begins to resemble breadcrumbs. It takes around 7-8 minutes for all the ingredients to combine and for the butter to get small and pebbly enough.
Spoon topping on top of the sautéed fruit generously, getting all the edges of the skillet. Wrap the skillet’s handle in aluminium foil.-
Bake for 40-45 minutes or till the cobbler is golden brown.--------

Devour immediately from the oven with vanilla ice cream (or apple pie ice cream!

Peanut Butte Bacon Candy



strips of bacon
2 slices of bread
2 tbsp peanut butter
2 tbsp butter

Cook bacon until desired crispness in a skillet over medium heat
Set bacon aside on a paper towel to soak up excess grease and drain grease from the skillet
Return the skillet to medium heat and melt 1 tbsp of butter in it
Take bread and spread remaining butter on one side, like you would do with grilled cheese
On the non buttered side, spread peanut butter and then place bacon, making a sandwich
Put the sandwich back in the skillet, butter side down and let it cook until golden brown on both sides, about 2 minutes each side
Remove from skillet and enjoy!

Turkey Sausage Buttermilk Biscuits



8 ounces turkey breakfast sausage
2 teaspoons garlic powder
1 tablespoon pure maple syrup
1 cup sliced green onions
1 cup white whole wheat flour
1 cup regular unbleached flour
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
8 ounces shredded cheddar cheese
1 ¼ cup buttermilk
4 tablespoons cold unsalted butter

Preheat oven to 425F.
Saute turkey sausage in a little olive oil and set aside.
In a large bowl, mix flour, baking soda, baking powder, garlic powder and salt together.   Dice the cold butter into 1/4 inch squares, then use your hands (or a food processor) to work the butter into the flour, until it’s broken up into little crumbs.
Add cheese, green onions, maple syrup and cooked sausage and mix together.  Finally, add buttermilk and mix well.
Line baking sheet with parchment paper and form into 10 evenly-sized discs, about four ounces each.
Bake for 12 minutes, then rotate baking sheet and bake for another 10-12 minutes. Remove when golden brown on top.

Vegetable Omelet



Egg whites of two eggs
Pepper and salt as per taste
A cup of veggies (tomatoes, onions, mushrooms, capsicum, bell peppers)
1 tablespoon of olive oil
1 tablespoon of skimmed milk

Mix these egg whites with one spoonful of milk, pepper, salt, and veggies in a bowl.
Heat a nonstick pan and then drop in one spoonful of olive oil.
Once this oil is heated, you add this egg mixture and evenly spread on the surface of that pan.
Leave it to cook for a while and afterwards turn sides.
Finally, serve hot.

Easy Vegan Ramen



1 Tbsp grape seed oil
5 cloves garlic, roughly chopped (5 cloves yield ~2 1/2 Tbsp or 18 g)
1 3- inch piece ginger (peeled and diced)
1 medium yellow onion (coarsely chopped)
6 cups vegetable stock (DIY or store-bought)
2 Tbsp tamari or soy sauce (plus more to taste)
0.5 ounces dehydrated shiitake mushrooms
1 Tbsp white or yellow miso paste (ensure vegan friendliness on package - I like this brand* available at Whole Foods)
1 tsp sesame oil (for flavor // plus more to taste)
8 ounces ramen noodles* (ensure gluten-free and vegan-friendliness on package - I like this brand available at Whole Foods)
TOPPINGS optional
1/2 cup chopped green onion (for garnish)
10 ounces extra-firm tofu (flash “fried”*)
Miso-glazed carrots*
Miso-glazed baby bok choy*


Heat a large pot over medium-high heat.
Once hot, add oil, garlic, ginger, and onion. Sauté, stirring occasionally for 5-8 minutes or until the onion has developed a slight sear (browned edges).
Add 1 cup  of the vegetable broth to deglaze the bottom of the pan. Use a whisk (or wooden spoon) to scrape up any bits that may have stuck to the bottom to enhance the flavor of the broth.

Add remaining 5 cups  vegetable broth, tamari or soy sauce, and dehydrated mushrooms - stir.

Bring to a simmer over medium heat, then reduce heat to low and cover. Simmer on low for at least 1 hour, up to 2-3, stirring occasionally. The longer it cooks, the more the flavor will deepen and develop.
Taste broth and adjust seasonings as needed, adding more soy sauce or sesame oil if desired. Add the miso paste at this time.

When you’re 30 minutes from serving, prepare any desired toppings (see notes for miso-glazed carrots, baby bok choy, and quick-seared tofu).
NOODLES: Fill a large saucepan or pot with water and bring to a boil. Once boiling, add ramen noodles (depending on size of pan you may need to do this in two batches // use fewer or more batches if altering batch size) and cook according to package instructions - about 4-5 minutes. Drain and set aside.

Strain broth and reserve mushrooms for serving. (Save onions and ginger for serving as well, if desired, though I discarded them).
To serve, divide ramen noodles between four  serving bowls. Top with strained broth and desired toppings, such as carrots, bok choy, green onion, or seared tofu. Serve with chili garlic sauce (found here) for added heat.
Best when fresh, though the broth can be stored (separately) in the refrigerator for up to 5 days and in the freezer for up to 1 month.

Take a Break for WIldlife

In my neck of the woods infrustructure has helped to take away land from those that normally run free. Adding new roads, demanding land for entertainment such as bike trails and other things and simply wanting to be out in nature has left nature a bit lost. In order for animals to get to where they need to get they must cross roads.

Animals are forced to cross roads and highways in search of food, water, coverage and mates. This in turn may put them in danger. Speeding vehicles are not always aware of what is out there. The first thing drivers should do is SLOW DOWN!!!



If an animal was to dart into the road it would be easier for you to stop if you were watching your speed to begin with. Young drivers between the ages of 15 to 24 are at the highest injury rate of any group in car accidents involving large animals. Many animals are hit simply because people drive too fast to avoid them. Not only will driving a bit slower be safer for the animals but the roads will be safer for other drivers and pedestrians as well.

The time of day also makes a difference as to when wildlife is more commonly found. Wildlife can often be found at near the road at dawn, dusk and during he early hours after darkness. If you see one animal, you can bet that there are more than likely other animals near by.



Two lane roads that are bordered by woods or fields, streams that cross under roads are areas where high caution must be used. Travel no more than 45 mph
Carefully watch the roadway for not only animals but bicyclists, children and slow moving vehicles. In addition drive with your high beams whenever possible.

Throwing trash out of car will pollute environment and create a hazard by attracting wildlife to roads.

TAKE A BREAK FOR WILDLIFE!!!!

Volunteer to Help Some Pets In Need

Want to help your local animal shelter but not for sure how?? Here are some great ideas that your shelter may be in need of:




  • Help let others know about the animal shelter by posting fliers announcing events the shelter may be hosting. Events such as for adoption or ways to help raise funds for the shelter. This is an easy way to support your local shelter but is very important one as well.
  • Use social media to help promote adoptions at the animal shelter. It is also a great way to let others know what items the shelter is in need of .  
  • Know how to drive?? Have a Car?? then helping a local shelter out with transportation may be perfect for you. From taking animals to vet appointments or from shelters to rescue facilities. It just takes a little time and good driving skills is all that is needed to help in this area
  • Like to walk then why not help the shelter take the dogs for a walk Shelters may be short on staff and need a bit of help here. Just one hour a week can drop by and take a dog for a walk. There are benefits for all from the shelter staff, the dog and yes you too
  • One chore that seems easy to me is stopping by to pet cats. Cat lovers will enjoy this and it does not take a lot of time to do this task either. By petting ,playing and spending time with cats they are getting ready for the new home. 
So why not take a bit of time to volunteer at a local animal shelter. It is great for the pets and you as well.

Good Nutrition via Food Pyramid


The goal of good nutrition is for the individual to receive essential vitamin, mineral and nutrient requirements. Individuals living in different areas throughout the world have guides that say what is considered good nutrition. Most importantly are the 4 main food groups consisting of Vegetables and fruits, Grain products (bread) , Dairy and Protein.

The United States has a daily food guide that was set up by United States Department of Agriculture. The daily food guide allows on to have an idea of the food needed each day.

Carbohydrates are found at the bottom of the pyramid. This indicates it is what is needed most. The size of serving that is recommended is very important in other words no "super-size" servings. Limiting sugar and high glycemic carbohydrates such as potatoes, rice and pasta should be limited as well. 

Fruits and vegetables are also a part of the recommended daily diet. Two to four servings of fruits and three to five servings of vegetables are the daily recommended goal. Two to four servings of fruits and three to five servings of vegetables are recommended daily. Among those fruit and vegetables taken in dark green and orange colored veggies should be in your diet. as these are the type that will provide your body with needed nutrients. 

Proteins are higher up on the pyramid and indicates that less of it is needed in a daily diet. Meals such as poultry and fish are rich in protein and should be taken in less than fruits, vegetables and other healthy carbs. Because proteins are responsible for cellular repair it is important to select teh correct proteins rich foods. 

Calcium is responsible for strong bones and teeth. Dairy is one important source of taking calcium in. Women traveling through puberty, pregnancy and menopause should play close attention to taking in correct amount of calcium. Daily intake of Calcium during childhood is important as well. Sources such as milk, cheese, yoghurt and fish such as sardines should be included in daily diet. 

Our diets also demand a bit of fat. Fat helps to absorb needed vitamins and helps one feel full. Fats also help protect against heart disease, improve brain health and against cancer. Omega 3 fatty acids from fish found in salmon, mackerel and albacore tuna Extra virgin oil and flaxseed oil help provide the right types of fat for your diet. 
Following the recommendations of the pyramid will lead you to good nutrition.

Surviving Daylight Savings Time

Daylight Saving Time ensures for longer hours of sunshine to help the agriculture world in the summer time. By moving the clock up one hour in the spring daylight lasts  bit longer allowing the farmers to work in the fields longer. Likewise in the fall, the time changes once again moving back one hour. 

Fall back an hour in fall and Spring up an hour in Spring. .





It has been a few days since the change of daylight savings time. How are you doing?? While the time change affects adults it often affects children. They were used to the longer days and even though the days were starting to get shorter the hour change might have truly affected them. So how do we help them???



Now while it is too late to wean them into the time change it may be something you want to make a note of for the next occurance. Before the time change slowly start to change the child's sleep time by 10 to 15 minutes a day. When the next time change occurs in the spring move it earlier leading up to spring time change and later leading up to the fall time change.

Regular bedtimes along with a bedtime routine can help your child be ready to drift off to sleep. A bedtime routine may start as early as after dinner time to end at bedtime. IT is important that routine is stuck to even during time changes. This way you and your child agree.

In the spring time the hours will be longer and the sun will also shine longer. Your child's bedtime may occur before it is dark. If this happens pull the shades make the interior of the house and room darker so they can prepare for bed.

Mike Dukakis A Favored Politician

On this great election day where America has the right to share not only our opinions but to vote for those who we feel strongly about. It is a great deed that we are allowed to do such a thing. I thought to celebrate this event I would share with you another wonderful politician who also had a birthday in November. Perhaps some will best remember him as governor of Massachusetts.



Michael Stanley Dukakis was born November 1933. As I said he served as the Governor of Massachusetts for 3 terms. First in 1975 to 1979 and then again from 1983 to 1991. The second ever Greek American received the nomination from the Democratic Party for president in 1988. However he would lose to then Vice President George H.W. Bush.

Mike Dukakis was one of the most popular governors and helped bring back the democrats voting rate. Even after had left office he continued to serve on the board of directors for Anitrak. Mike also taught a class at the Northeastern University and UCLA.

Beet, Fig , Feta Autumn Salad



4 medium beets, peeled and cubed
2 teaspoons olive oil
salt and pepper
1 navel orange, peeled and sliced or segmented
4-5 fresh figs, halved
1/3 cup crumbled feta
6-7 cups spring mix (or your favorite greens)
For the pecans
1/2 cup pecans
1/4 teaspoon cinnamon
1 tablespoon pure maple syrup
pinch of sea salt
For the dressing
1/4 teaspoon orange zest
juice of 1 navel orange
1 tablespoon apple cider vinegar
1 clove garlic, minced
1 tablespoon pure maple syrup
2 tablespoons olive oil
salt and pepper

Preheat the oven to 400℉. Line a rimmed baking sheet with parchment paper and add the beets. Add the olive oil, salt, and pepper, and toss. Roast for 20 minutes or until tender.
While beets are roasting, make the pecans. Add pecans and cinnamon to a dry skillet and toast for 3-4 minutes over medium heat. Raise the heat to medium-high and add the maple syrup. Cook for 1 minute, stirring constantly, until maple syrup cooks down and the pecans become sticky. Remove from heat. Set aside.
Make the dressing. Combine the orange zest, juice, apple cider vinegar, garlic, maple syrup, and olive oil in a medium bowl and whisk to combine. Season to taste with salt and pepper.
To assemble the salads, top your greens with the roasted beets, sliced oranges, figs, feta, candied pecans, and desired amount of dressing!

Be Careful What You Eat

It is estimated that 1 in every 100 people have epilepsy. With epilepsy it is very important to be aware of your diet. There are food you should eat and others that you should not. There are quite a number of foods linked to increased epileptic episodes and seizures. Foods to avoid include :




  • white flour. The process of making wheat to white flour renders it nutritionally empty White bread and rice - convert rapidly to sugar and spikes insulin levels. Too much white flour and refined grains can lead to diabetes, heart disease, obesity, gluten intolerance and vitamin deficiencies 
  • "Health" Foods and Snacks are not always healthy for you Make sure they are not health food imposters where the package looks appealing and healthy but reading the fine print will find that is not as healthy as you thought it may be Some breakfast cereals advertise as good source of fiber, vitamins and minerals. Don't just take it at face value instead read the label find out what is in it as well as what it offers. 

Read, see whats out there, help bring awareness to what you want to know. You never know there may be someone else needing the same information

Lung Cancer Awareness

The leading cause of cancer deaths for both women and men in the United States for the past 30 years is lung cancer. Lung cancer kills more individuals each year than colon, breast, and prostate cancer. Many believe that lung cancer is the direct result of smoking. This is not totally a fact since it is a major risk factor it is not the only cause of lung cancer.



Research for lung cancer does not receive as much awareness or financing since most money is placed on quitting smoking to prevent and eradicate lung cancer. Survival rate for lung cancer is very low, many believe it is because not enough money is spent on research. While there are non-smokers that have lung cancer with no real explanation. Some symptoms that should be watched for whether a smoker or not include:

  • frequent respiratory infections or coughs
  • pain in the chest or ribs
  • hoarseness or shortness of breath

 Knowing what to look for makes it easier to detect.

Besides smoking there are other risks for developing lung cancer:

  • asbestos and other carcinogens. Asbestos was used in isolation in buildings. 
  • family history of lung cancer. Close family such as parent, sibling or child 
  • Radon gas is created by natural breakdown of uranium in soil, rock and water Unsafe levels may accumulate in buildings and homes 




Lung Cancer Awareness month was created in 1995. An entire month of festivities both on and offline bringing awareness and asking you to get involved.

Did You Know ;;;; Charles Bronson

You may know the name Charles Bronson but do you know his story??


Born the 11th of 15 children Charles Dennis Buchinsky to a Roman Catholic family. Later to be known as Charles Bronson the star was born in coal country Pennsylvania. His father and mother was from Lithuania Bronson learned to speak English as a teenager. His first language was that of his parents Lithuanian and Russian. Perhaps it was learning english that also helped him be the first in the family to graduate from high school.

Charles Bronson witnessed his father pass when he was only 10 years old. Charles would also go to work at that time to help the family. Starting at the young age in the mining office and later in the mines. He would work the mines til he entered World War II.

When he was done serving in the military and the war was over Charles returned back home. He would work many different odd jobs before becoming part of a theatrical group in Philadelphia, Pennsylvania. In 1950 Bronson married and moved to Hollywood where he enrolled in acting classes and playing many small roles. Eventually Charles Bronson would seen in the movies that he dreamed of

Bronson first was an unknown in the movie You're in the Navy Now in 1951. Other early movie scenes included The Mob (1951) Battle Zone (1952), and many others. Charles Bronson would box in a ring with Roy Rogers in 1952 during the show Knockout. Red Skelton would invite Bronson to be a guest in a skit where Charles was a boxer In 1954 Bronson would appear in a support role in the movie Apache as well as in Vera Cruz. His career would continue to grow making Bronson not only a leading role but a household name

During the 1990's Bronson would appear in some non action movies. The first would be a Sean Penn movie called The Indian Runner in 1991. He would then appear in some t.v. based movies such as Yes, Virginia, there is a Santa Claus 
His last starring role in a theatrically released film was 1994 Death Wish V: The Face of Death. He also appeared in a few last T.V. based films including a series of Family of Cops

His private life was filled with love and failed marriages. His first wife was to a woman named Harriet that he met when both of them were striving to get acting careers. Bronson fathered 2  children during this marriage. The couple was supported by Harriet's father during the marriage as Bronson was poor.



The first marriage lasted 10+ years but ended shortly after. Bronson then married an English actress named Jill in 1968. The couple would stay together only ending when the bride would pass from this earth. The couple raised a total of 7 children consisting of his, hers and theirs. The couple together played together in 14 different movies. The family was close traveling to different scenes together as well as staying in wonderous spots throughout the world. 

Bronson himself would suffer from deteriorated health and be forced to retire from acting August 30, 2003 Charles Bronson would give his last salute to the world as he passed from it.

Have A Sandwich

Whether you have it on white or wheat with crust on or off or maybe you like it with a bit of mayo or mustard. However you like it you can have it...... a Sandwich.

The only thing needed to eat a sandwich is your hands and mouth. The sandwich has been around for centuries but popularized during the 1700s. It was John Montagu the fourth Earl of Sandwich that ordered beef between slices of bread. Montagu wanted to both play cards and eat. While that was the beginning the sandwich explosion it is still very popular.

A sandwich is anything placed between two slices of bread. Many times we think of meat in a sandwich but it can be a number of different ingredients. By definition the qualifiers of a sandwich include:

  • 2 exterior pieces of bread or bread like product
  • primarily horizontal in structure
  • portable
  • contains more than just one condiment 




24 white dinner rolls
 24 pieces honey ham
 24 small slices Swiss cheese
 1/3 cup mayonnaise
 1/3 cup miracle whip

Poppy seed sauce:
 1 Tablespoon poppyseeds
 1 1/2 Tablespoons yellow mustard
 1/2 cup butter , melted
 1 Tablespoon minced onion
 1/2 teaspoon Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together.
In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm. Note: Sandwiches can be assembled ahead of time. I don't like to do it more than a day ahead because they can get soggy from the mayo mixture.

It ended up Being Heart Issues

The 29th President of the United States, Warren Harding celebrated his birthday in November. Harding was not allowed to complete his full term dying of a heart attack before his term ended. At the end of his presidency he was considered one of the most popular U.S. Presidents. However, that would soon change when scandals would be demonstrated after his death.



Harding was from Ohio A newspaper man, purchasing the Marion Star as just a young man Using his experience as a successful newsman he was elected to the Ohio State Senate in 1899. In 1914 he was elected to the United States senate. In 1920 he then ran for U.S. president but was considered a long shot. However, he became the first sitting senator to become president.

July 27, 1923 would see President Harding going to bed a few hours after giving a speech at the University of Washington. During the night the whitehouse Dr. Charles Sawyer would be summoned. Harding was complaining of pain in the upper abdomen the dr. thought it was something in his diet that had upset his stomach but another dr. suspected a heart issue. Nonetheless Harding would go back to bed and awake in the morning.

On the train ride to San Francisco Harding was feeling a bit better on arrival on July 29, 1923. At the hotel, however, he would suffer a relapse. Upon investigation by the doctors it was noted he was having heart issues as well as he had pneumonia. Therefore, Harding was put to bed in the hotel room where he would stay for a rest. After rest, caffeine and digitalis Harding began to feel a bit better. Perhaps, they are right when they say it always gets better before it gets worst.



The afternoon on August 2, 1923 Harding could start sitting up in bed and by 7:30 his wife was reading articles that others had written about him. She fluffed his pillows he commented "That's good, read some more" and as she read he passed away. At the age of 57 President Harding had passed His death was a shock to the United States. As he was returned to the train in a casket to travel across the nation there were large groups of people who greeted the train as it traveled from San Francisco to Washington D.C.



The body of Harding would lay in state at the United States Capital rotunda. Following the services the body would then be returned to his beloved Marion Ohio for burial. Those attending the grand funeral were his wife and father, Thomas Edison, Henry Ford and Harvey Firestone.

Ohio Buckeyes



National Ohio Day is observed in November. The day recognizes the 17th state to join the United States Known as the Buckeye State was the first state to enter the country from the Northwest Territory The state where prehistoric remains of a civilization that created mounds to where modern day presidents have been elected is all a part of Ohio.

  • Benjamin Harrison (23rd President)
  • William McKinley (25th President)
  • William H. Taft (27th President)
  • Warren G. Harding (29th President)

  • Past civilizations of Kickapoo, Erie and Shawnee all populated the area where Ohio is. One of the reasons may have been the 312 miles of Lake Erie  shoreline. The shoreline still means great things both economical and recreational for Ohio. Considered a natural resource the Lakes consumable food and water are considered as invaluable.



    The state of Ohio was named after the 'Ohio' river' It is nicknamed the Buckeye State as there are buckeye trees that are commonly found throughout the Ohio River Valley

    Ohio was not only the first state to issue a speeding ticket but to also have the first stop lights. But that is not all that they may be famous for as they are also

    • Rock n Roll Hall of Fame in Cleveland Ohio
    • Pro Football Hall of Fame in Canton Ohio
    • First soccer specific stadium in U.S. in Columbus Ohio

    In honor of Ohio the Buckeye State and the anniversary of their statehood I share a great buckeye recipe to celebrate





    1-1/2 cups peanut butter
    1/2 cup butter, softened
    4 cups confectioners’ sugar, sifted
    1 teaspoon pure vanilla extract
    2 cups semisweet chocolate chips, melted
    1 tablespoon shortening
    Optional: 1/3 cup crushed cookies, like speculoos cookies
    Instructions

    Line a cookie sheet with parchment or waxed paper and set aside.
    Add the peanut butter, butter, and vanilla in a large bowl and mix until combined. Gradually add the sifted confectioners’ sugar, blending until combined.
    Roll the mixture into 1-inch balls and place on the cookie sheet so they don’t touch.
    Add toothpicks into the center of each ball. Place in the freezer for 15-30 minutes.
    Remove from the freezer. Add the chocolate chips and shortening to a microwave-safe bowl. Heat for about 20-seconds until melted. Stir to make sure the chips are completely melted.
    Place the crushed cookies in a shallow bowl. Add another sheet of parchment or waxed paper to another cookie sheet.
    One at a time, dip the balls into the melted chocolate, so just a portion of the peanut butter is exposed at the top, and let the excess chocolate drip back into the bowl. If the balls begin to soften so it’s hard to keep the toothpick in the center, you can freeze them again for 10 minutes or so until firm again.
    If using the crushed cookies, dip the balls into the cookie crumbs after coating in the chocolate. Place on the cookie sheet.
    Carefully remove the toothpicks and use your finger to smooth over the hole.
    Refrigerate until the chocolate has set.

    Tracing a Heritage

    Does your family have Native American blood but you are unsure to prove it?? You have heard the stories for years. Stories like the ones I have heard of uncle Jack being able to cut a fly in half as it flew around or the food that your great grandmother would prepare. Story upon story like these are favorites of mine as they belong to my family. Perhaps you have stories like this as well but like me you are not sure how to go about to prove your relation

    Why would an individual want to verify Native American (American Indian or Alaska Native) heritage??

    • a way to learn more about your ancestry
    • trace back to someone who may have been enrolled member of tribe. 



    Genetic testing can not prove that one is a Native American descent. With no genetic markers set aside unique to Native American but it can be compared to genetic makeup against that of another individual or database It may be able to use genetic testing to reinforce or disprove the fact of Native American descendent or not.

    Trace ancestry through parents, grandparents, or other relatives to locate a directly related ancestor who is or was a member of a Native American tribe. Look for family records, old possessions, records such as birth, death and marriage as well as scrapbooks including pictures, newspaper clippings, letters and diaries.



    It may seem odd to look online for past documents and records but the are becoming freely available on the internet. Place your ancestors name into a search engine to do a quick look. Social networking sites can help connect you with distant relatives and people who may be related to you.

    Local, federal, and tribal records are all great resources

    The story goes that my Great Grandmother was a Full Blooded Black Cherokee. By the time my grand-dad and his brother reached the small town of Whitehall their mother had been kidnapped by white men. The brothers settle down and lived there as farmers til their deaths. In the years between he was married and had a family. My dad was Bob Stewart's son I have little to go on besides the stories but the stories are more than nothing.

    Pancreatic Cancer Awareness

    November helps bring awareness to Pancreatic Cancer. By raising awareness the hope is that new knowledge of the risk factors, symptoms, and treatments for pancreatic will help make others aware of it. In addition, awareness can help encourage people to fund vital research.


    In  years time an average of 53,000 individuals will be diagnosed with pancreatic cancer. Out of that number almost 42,000 will die from the disease. Pancreatic cancer is most common among those who use tobacco, experience exposure to certain chemicals, have diabetes or are overweight. Being a man, over the age of 45 or family history of pancreatic cancer the higher chance of being diagnosed with pancreatic cancer.



    Pancreatic cancer can form in two different types of cells located in the pancreas.

    • The Exocrine cells that form the majority of the pancreas and are responsible for creating pancreatic enzymes, that are released into the intestines to help digest food. 
    • The endocrine cells make up fewer cells in the pancreas. These cells make vital hormones like insulin and glucagon that help control blood sugar levels  

    Both exocrine and endocrine form a different type of cancer and have different treatments and outcomes Exocrine cancers are the most common form of pancreatic cancer. Pancreatic neuroendocrine tumors are less common.



    Pancreatic cancer is often present before any symptoms show up. When the symptoms do show up they must be taken seriously. Seek doctor attention no matter what signs arise Some symptoms include:

    • Jaundice
    • belly or back pain
    • weight loss or poor appetite
    • nausea, vomiting, pain after eating
    • blood clots
    • Liver or gall bladder enlargement
    • Fatty tissue abnormalities
    • Diabetes
    • Low blood sugar
    • Stomach ulcers
    • Rash with swelling and blisters
    Doctors will do additional tests and exams to find out what is going on. They will take your medical history as well as your family history. Early detection is key so that treatment can be done. Pancreatic cancer is normally treated with surgery, ablation/embolization, radiation, chemotherapy and other drugs. In general, those treated with surgery survive longer.

    Tips for Protecting Our Children

    As the weather starts to get colder the outdoor work comes to an end and it seems we all start spending more time inside. November is a great time for family togetherness The holidays will be here soon and no greater time than to think about how we love our families and friends. The youngest among us seem to bring delight to our lives with their excitement. Perhaps, it is a great time to take a good look at how to protect the youngest among us.

    Young people in our lives may be our children, grand-children, students you may know, your neighbors or friends children. Each and every child has a right and reason to be able to grow up safe and secure



    November is National Child Safety and Protection Month. It is a time to plan for safety concerns such as fires, home safety, as well as more important issues such as what to do if your child is kidnapped or a living will if something was to happen to you. Each of these safety issues from mild to more important should all be talked about with the family to ensure safety.

    Parents should have each child's photo ID. A photo you keep on your phone can help if your child was to come up missing. Look for places that will capture your child's fingerprints. While children may age and appearance change finger prints stay the same. Know your child's schedule as well as where they may go to visit friends etc... If your child would ever go missing the first thing to do is to contact the local police department. With the information you have on hand the police may have an easier time of finding your child. While most children are recovered quickly there are over 2000 children a day that are reported missing. Having an action plan will help should your child go missing



    Other Safety Issues include :

    • Use safety gates not only for babies but tots that like to explore as well. 
    • At bedtime all soft, fluffy and loose bedding should be removed from the baby's sleep area When my children were babies I would dress them in a warm sleeper no blanket the sleeper was enough
    • Check out the plants that will be in your house, yard and surrounding area. Knowing if they are toxic or non toxic will help protect little ones from getting sick.
    • Safety locks should be placed on anything and everything that can be opened 
    • Hot water should be kept to 120 degrees or lower. This will help prevent a child from being scalded.

    3 Ingredient Peanut Butter Cookie #Recipe




    Preheat the oven to 350 degrees. In a large mixing bowl, stir together 1 cup creamy peanut butter, 1 cup sugar, and 1 egg until smooth.
    Scoop the dough onto a parchment or Silpat lined baking sheet. (Roll into 1″ balls with your hands, if you do not have a scoop.)
    Press down with the back of a fork and then press again from the opposite direction, to form the criss-cross pattern on top.
    Bake for 12 minutes and then let cool on the tray for 1-2 minutes before removing to a wire rack to finish cooling. Store in an airtight container.
