Fall offers Beautiful Colors But How?????

I simply love when fall comes and the leaves all change colors. Something this year seems to be taking just a bit longer. If you live in a part of the world where nature throws a party before winter and brings out beautiful colors then to me you are lucky indeed. The shortened days and cooler temperatures helps to say goodbye to summer green foliage and welcomes autumns reds, oranges, golds, and browns. This is before the trees shed their leaves.




I love the Dolly Parton song "Gods Coloring Book" that talks about the beauty that is provided in the world. To me a crisp fall day demonstrates God's love for sure. Trees and shrubs changing their color is not totally understood. It is known that three factors determine the coloring pattern. These factors are length of night, type of autumn weather and type of leaf.




As in all color palette's pigments are needed. Pigments are also needed to increase autumn color.

Sumac trees contain chlorophyll. Photosynthesis depends on it and the chemical reaction that enables plants to use sunlight to create food. Trees store these sugars for winter during the dormant time. Carotenoids is another product present in the trees leaves. Carotenoids produce colors of yellow, orange, and brown colors. Carotenoids are present in corn, carrots, daffodils, rutabagas, buttercups and bananas.
The watery liquid of leaf cells known as Anthocyanins offers color to cranberries, red apples, concord grapes, blueberries, cherries, and plums.
Chlorophyll and carotenoids are both present in leaves through out growing season thus the green color of the leaf. The night get longer and Chlorophyll starts to produce slower and then eventually stops. The anthocyanins are produced in the autumn when the bright light and excess plant sugars within the cells of the leaf. After the chlorophyll stops being produced the carotenoids and anthocyanins are unmasked and the color appears.



Oak trees will turn red and brown. Hickories will have a beautiful golden bronze and yellow leaf color. Poplar trees will turn golden yellow. Dogwood trees will have a purplish tint of red. Maple trees are more determined by their species and are often red to orange to beautiful yellow.

The colors and their boldness are never the same. It is as though God does color each season by himself creating special touches. Temperature and moisture are the main influences of how leaves change. Warm sunny days with cool nights will offer a spectacular color leaf show. If the year provides us with a late spring or a severe summer drought the colors of the leaves will be slow coming. A warm fall will not offer such beauty either. The best colors will come from a wet spring, good summer weather and  sunny fall days with cool nights

As the nights of autumn get longer one should notice the veins of the trees to close off. The clogged veins will trap sugars and as the separation continues the leaf will get ready to change color and fall.



Look for colored leaves in parks and forests. Cities, countryside and mountains all with deciduous trees will offer beauty. Oaks, maples, beeches, sweet gums, yellow poplars, dogwoods, hickories and other trees as well. New England is popular for its autumn colors. The Appalachian, Smoky, and Rocky Mountains all are pegged with color as well. The beautiful colors can be seen in the East and west as well. There are 31 states that offer more than 3,000 miles of beautiful leaves So take a colorful drive and view all the wondrous colors. Like I said earlier we have yet to see the beauty to come to life but normally the leaves change around late September through November.

Build a Bonfire

Bonfires are not just for summer and fall. They are perfect to keep you warm anytime you will be spending time outside. Keeping warm is very important any time of the year. Knowing how to build a bonfire is very important knowledge if you ever need it



Keep in mind that the size and thickness of the wood will determine how long the fire will burn. Smaller sticks and twigs will make for a hot fire but not long fire. If you plan to cook on the fire you will want it to burn both hot and long. Using both fuel wood, smaller sticks that can be fed into the fire regularly if needed. One of the cheapest ways to start a fire is paper so make good use of that junk mail.



other source of tinder that can be used is bark, small twigs, sawdust, straw or wood shavings. Primarily anything that will burn fast and hot. Make sure that the material you use is not green or wet as they will not burn. They will either offer lots of smoke or not catch on fire at all.

Burning in the pyramid diagram will offer you a good strong foundation for your fire to burn hot and long. Small fires can be done the same way just use smaller logs. Making sure that the logs that offer fuel are thick will ensure a good long fire that will be great for cooking or providing heat.

Simply roasting marshmallows type fire would be perfect for the "teepee" design. Fanning or blowng on the fire will help it catch well. Light the end of the paper sticks on either side of fire structure and stand back

Be sure not to smother the fire because a fires one requirement is oxygen. It is a great idea to light the fire in more than one place so that it burns evenly Building fire on top of dirt is a safe idea that will keep your fire where you want it. Remember to always put out the fire before leaving as well.

Caregivers really Care




America is a great country that offers hope and promise to all of its citizens. Many families have become caregivers for older or sick members of their family. It is easy for the caregivers to forget about their own health and well being when taking care of family members. Many caregivers feel as if they owe a debt to the one that they care for.


Caring for  parents, grand-parents, spouses or other family member can be both good and bad. While an honor and a privilege to give back to those that loved us it can also be a very stressful and heartbreaking experience. Baby boomers are getting older and will soon be needing care takers of their own. Boomers have given back by taking care of older family members and now need care for their selves. The difference is that just like all their lives there are more individuals living during this period of time.




November is National Family Caregivers Month More Americans are caring for loved ones with chronic conditions, disabilities or health problems as they age. The number of caregivers in America taking care of family members has increased to 90 million. The number continues to rise to include more than 30% caregivers being family. One reason the number continues up is because Alzheimer continues to grow with more than 15 million family caregivers caring for more than 5 million loved ones with Alzheimer's disease. However age does not always play a role in needing a care giver

Parents caring for children with special needs continues to increase as well. The rise in childhood disease and illness continues to rise as well. Veterans returning to civilian life also require family to provide for those coming back wounded. Issues such as traumatic brain injury, post traumatic stress disorder or other wounds and illnesses affect many returning from Iraq and Afghanistan wars. Currently family care giving takes many different stands.



Complex medical and nursing tasks needed to take care of loved ones are performed by family. Medication, wound care, and special equipment are all items that no one can predict they will ever need to know. When the time comes and the need is present family steps up and does what is needed. This care is often unpaid care provided simply for the cause of love and respect. As the number of family caregivers grows each year the role of family caregivers becomes even more important






Pomegranates are Good and Good For You (salad recipe included)


Pomegranates have been enjoyed for thousands of years. In many cultures pomegranates symbolize hope and abundance. Egyptians have been entombed with them, Babylonian soldiers dined on them prior to battle and pomegranates were also enjoyed at weddings in Persia. 
Many wonder if it was pomegranates rather than apples that grew in the Garden of Eden. The word pomegranate means "seeded apple". Pomegranates are at times called chinese apple or "jewel of the winter" Pomegranates are one of the world's most popular fruits. Here in North America they are in season during early winter. However, they are often over shadowed by more common fruits like apples and oranges 
Pomegranates are rich in antioxidants The antioxidants found in these fruits have been known to help fight various cancer cells. Extracts found in pomegranates have been shown to possibly help reduce joint pain and decrease inflammation in arthritis sufferers. Other health benefits include slowing the growth of plaque formation in arteries which leads to a boost of hearth health. 
Juicy seed sacs found inside Pomegranates are rich in fiber and adds to optimum nutritioin. 

This salad is really easy only requiring 3 main ingredients. A salad blend of arugula and spinach mixed with pomegranate seeds and almonds. Pomegranates are really nutritious and I have many friends who would dare to say that pomegranate sees are their favorite snacks as well. 

  • 5 ounces baby arugula and spinach blend
  • 1/2 cup pomegranate seeds
  • 1/3 cup sliced almonds
Lemon Garlic Dressing
  • 1 clove garlic, finely minced 
  • 2 tablespoons fresh squeezed lemon juice 
  • 1/4 cup extra virgin olive oil 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon pepper
Make the dressing first by whisking together garlic, lemon juice, olive oil and salt and pepper just until combined. Let set at room temperature for 30 minutes. 
Combine spinach, arugula, almonds and pomegranate together in a bowl. Whisk the dressing once more and drizzle over the top. Toss. Adjust seasoning with salt and pepper. Serve.

Corn Pudding






This vintage style recipe is very much alive in our family. It will be present on the holiday table this year as in the years past. My daddy grew up loving it and my children do as well. I hope that you test it out for your family as well.

We should wear and show our compassion, kindness, humility, gentleness, and patience for each other. If we all did this the world would be so much more refreshing


If we live life where we have compassion and love for each other then when a problem does a rise it will be much easier to repair. If we ever do get mad at another we should be quick to forgive and not be mad and hold that against the other. The Lord forgave us and in such we should forgive each other.

Love is and should be what binds us together. Love is one of those things that can be different between many different people.



As Christians we are all one family and we should all live with the love of Christ in our hearts. In this manner we should all live in peace



Follow God's words by following the words of the bible. As the pledge says hide the words in our hearts so that we may not sin against God. By knowing the words of God we can share with others as well as use these blessed words to help each other live within the guidelines given by the bible. Keep a good song in our hearts


No matter our walk in life may we do everything in the name of Lord Jesus. It is through him that we have been  blessed to have all that we do. Always remember to give thanks to God for all he has done

Baked Smores

Even When it gets cold , dont worry you can still enjoy the great taste of Smores. 

You still need the same simple ingredients:
Graham crackers
Mini marshmallows
Hershey's Chocolate Bar

Lay your graham crackers out on a covered cookie sheet. I used tinfoil to cover mine. Next time I'll use parchment paper.


Sprinkle marshmallows on top of the graham crackers. Set the oven to 350 degrees and let the marshmallow get a little brown.



Immediately put the chocolate on top of the marshmallows. You need the heat from the marshmallows to melt the chocolate.


Cover with another graham cracker and enjoy!

King Tut Day




November 4th 1922 (nearly 100 years ago) an archaeologist discovered the entrance to an intact tomb of an Egyptian Pharoh. Howard Carter had made the discovery of King Tut's tomb This find would leave the world in shock and discussion.

King Tut had lived an estimated 3,000 years ago. King Tut is believed to have been a young man who only lived into his teens. Most likely he had been born out of incest between brother and sister . The young tut would reign over a kingdom of mess that would lead to his death primarily being caused by his own court.




National Adoption Month


Every year thousands of children and teenagers will be welcomed into homes of loving and supporting adopting families. Mothers and fathers who will provide boys and girls that will be their sons and daughters with security and stability. A safe environment with opportunities that may have never had. Together they ill learn to grow and love and become a family. 
My grand-parents were foster parents back in the day and while I am not a foster parent like they were I keep my doors open and let all that need a safe place to stay to come in. I have helped friends, friends of my children, my own family and so many others. Later this month on the Saturday before Thanksgiving policymakers, practitioners, and advocates will come together to finalize thousands of adoptions. The hope to raise awareness of the many still in need of a permanent home.

Coconut Pecan Sweet Potatoes



1/2 cup chopped pecans
1/2 cup flaked coconut
1/3 cup sugar
4 pounds sweet potatoes, peeled and cut into chunks
1/3 cup packed brown sugar
1/4 cup reduced-fat butter, melted
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon coconut extract
1/2 teaspoon Spice Islands®, All Natural, No Corn Syrup Added, Pure Vanilla Extract

Place sweet potatoes in a 5-qt. slow cooker coated with cooking spray. Combine the pecans, coconut, sugar,brown sugar, butter, cinnamon and salt; sprinkle over potatoes. Cover and cook on low for 4 hours or until potatoes are tender. Stir in extracts. Yield: 12 servings.

Frozen Pumpkin Mousse Pie



For the crust:


30 small gingersnap cookies (about 7-1/2 ounces) 
2 tablespoons raisins 
1 tablespoon canola oil 

For the filling:


1 cup canned pumpkin purèe 
1/3 cup packed brown sugar 
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger 
1/4 teaspoon freshly grated nutmeg 
2 pints (4 cups) frozen low-fat vanilla ice cream, softened 

 Preheat oven to 350°F. Coat a 9-inch deep-dish pie pan with cooking spray. 


To prepare crust: 
Combine gingersnaps and raisins in a food processor and pulse until finely chopped. Add oil and pulse until blended. Press evenly into the bottom and up the sides of the prepared pan. Bake the crust until set, about 10 minutes. Transfer to a wire rack to cool completely. 

To prepare filling: 
Combine pumpkin, sugar, cinnamon, ginger and nutmeg in a large bowl and mix well. Add ice cream and stir until blended. Spoon the mixture into the cooled pie crust. Freeze until firm, at least 2 hours. Let the pie soften slightly in the refrigerator for 20-30 minutes before serving.

Chocolate Chip Cheese Ball



1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1/4 teaspoon Spice Islands®, All Natural, No Corn Syrup Added, Pure Vanilla Extract
3/4 cup confectioners' sugar
2 tablespoons brown sugar
3/4 cup miniature semisweet chocolate chips
3/4 cup finely chopped pecans
Graham crackers

In a large bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour. Just before serving, roll cheese ball in pecans. Serve with graham crackers. Yield: 1 cheese ball (about 2 cups).

Easy Apple Cake



1 (9 oz.) box yellow cake mix
 1 egg
 1/2 cup water
 1 tbsp. butter
 1 large Macintosh apples 
1/2 tsp. ground cinnamon 
1/4 cup sugar 
1 pint ice cream, flavor of your choice



Preheat oven to 350 degrees. Grease a 9 by 9-inch square cake pan (can use a disposable foil cake pan) with 1 tbsp. butter. Prepare cake mix as described on cake box, with 1/2 cup water and the egg. Peel and dice apple into small bits. Sprinkle apples with cinnamon and sugar and mix well. Pour cake batter into prepared cake pan. Spread apples on top of cake batter, evenly covering the entire top of the cake. ( I tend to put a little more towards the edges so that when the cake rises in the oven the apples don't fall to the center of the cake.). Bake 20 to 25 minutes. Best if served warm with ice cream. Very good at room temperature though.

Mini Pumpkin Muffin Mix

Mini Pumpkin Muffin Mix




3 cups all-purpose flour
4 teaspoons baking powder
1 1/2 teaspoons salt
1 cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup raisins, sweetened dried cranberries, or chopped nuts (optional)
1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin


COMBINE all ingredients, except pumpkin, in large bowl. Pour into 1-quart resealable plastic bag; seal. Wrap muffin mix and can of pumpkin in fabric; tie with ribbon or twine.

National Fig Week and a Fig Stuffing Perfect for Thanksgiving


National Fig Week occurs the first week of November. Figs offer more than just a delicious taste. They have romance, nutritional superiority and array of creativity built inside of each one. Nutrients including fiber, calcium, iron, potassium and antioxidants Figs are perfect for cheese trays, salads, entrees, side dishes and desserts. You also can eat them directly out of the bag. Figs also provide a tasty, quick energy source

  1. 1 loaf Italian bread (about 16 cups/about 1 pound)
  2. 6-8 tablespoons unsalted butter
  3. 2 onions, minced (about 1-1/4 cups)
  4. 4 stalks celery (about 2 cups)
  5. 4-5 cloves garlic (about 3 tablespoons minced)
  6. Sea salt, to taste
  7. Freshly ground black pepper, to taste
  8. 1/2 cup white grape juice (low sugar content)
  9. 1- 1/4 cup dried figs, roughly chopped and stems removed
  10. 1/2 cup pine nuts
  11. Few sprigs fresh thyme, chopped or whole
  12. Few sprigs fresh sage, chopped or whole
  13. 2 and 1/2 cups chicken broth
  14. 2 large eggs, beaten
Instructions
  1. Preheat oven to 375° F.
  2. Cut bread loaf into 1/2-inch pieces then into cubes and place on baking sheets in the oven for about 10 minutes.
  3. Butter a large oven-safe dish. Butter the foil you'll put on top of the dish so the melted butter will drip down into the stuffing.
  4. Next, use a large sauté pan to heat the butter and add the onions, cooking down for about a minute or two.
  5. Next, add the diced celery and garlic. Cook for an additional minute or two to soften. You can brown them slightly if you choose to, as well, which just requires a few more minutes of cooking. Add the juice to sweeten the dish. Evaporate most of the juice, leaving about 2 tablespoons. Remove from heat immediately and set aside.
  6. Pour the chicken broth into the baking dish. Add the remaining ingredients and the two beaten eggs. Mix together.
  7. Bake in 350° F oven for 20 minutes, covered. Remove covering and bake for an additional 30 minutes. Remove from oven immediately and serve as a side dish or stuff inside a fully cooked turkey or chicken for presentation.

Pumpkin Pie Dessert Lasagna



  • 1 sleeve graham crackers
  • 6 ounces melted butter
  • 8 ounces low fat cream cheese
  • 1/4 cup heavy cream
  • 1 cup powdered sugar
  • 3/4 can pumpkin puree (not pumpkin pie filling)
  • 1/2 Tablespoon pumpkin pie spice
  • 2 8 ounce containers of lite Cool Whip plus another 1/2 container (4 ounces) cool whip
  • 15 ladyfinger cookies
  • 6 ounces good quality white chocolate, melted
  • 1 cup pumpkin spice chips (if you can’t find these, white chocolate chips would also be delicious!)
  • 1 cup chopped pecans (optional)
Preheat oven to 350F
Place the graham crackers in a gallon ziplock bag (sealed) and crush using a rolling pin. Crush into as small of pieces as possible. Pour melted butter into bag and reseal, then knead the butter into the grahams until well combined. Pour graham mixture into the bottom of a 9x13 baking dish and press firmly into the bottom of the pan. This will be your crust. Bake for 6-8 minutes or until golden brown. Allow to cool.
Using an electric mixer, beat the cream cheese until smooth and fluffy. Add heavy cream and whisk until well combined. Add powdered sugar, pumpkin, and pumpkin pie spice. Mix until well combined. Add one container of cool whip and whisk on high for 1-2 minutes until fluffy and completely smooth. Set aside.
In a separate bowl, combine the other 8 ounce container of cool whip with the melted white chocolate. Whisk until completely combined and smooth. Set aside.
Once your crust is cooled, top with half of the pumpkin mousse and spread it around to form an even layer. Top with lady fingers (put them into even rows) and then top with the rest of the pumpkin mousse. Top the mousse with the white chocolate whip cream and spread out evenly. Spread a thin layer of regular cool whip (the half a container from above) over everything and sprinkle on pumpkin spice chips and pecans.
Chill in fridge for at least 2 hours before serving. You can also freeze if you prefer it to be less creamy. If freezing, take out of freezer 30 minutes before serving.

Recalling Typing Class


Recall typing class in the 1980's. It was a mandated class that we all had to take. It was believed that the typewriter would be a very useful tool of the future. Learning the keys on the typewriter is what allows me to use the keyboard on my laptop so quickly. It was the repeated process of typing each letter, word, and repeated steps that built the skills of keyboarding in.

Vegetarian Recipe Kids Will Love===== GI Joes



1 cup boiling water
1/2 cup sun-dried tomatoes, packed without oil
1 tablespoon olive oil
1 1/2 cups chopped onion
1 cup chopped red bell pepper
garlic cloves, minced
1 tablespoon low-sodium soy sauce
1 tablespoon balsamic vinegar
1 teaspoon sugar
1 teaspoon chili powder
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1/8 teaspoon salt
(28-ounce) can crushed tomatoes, undrained
(12-ounce) bag frozen soy crumbles, thawed (such as Morningstar Farms)
(2-ounce) Kaiser rolls or hamburger buns
Combine boiling water and sun-dried tomatoes in a bowl, and let stand 5 minutes or until tomatoes are soft. Drain and chop tomatoes.
Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, red bell pepper, and garlic; sauté 3 minutes or until vegetables are tender. Stir in the sun-dried tomatoes, soy sauce, and the next 8 ingredients (soy sauce through crushed tomatoes). Bring mixture to a boil; reduce heat, and simmer 20 minutes or until slightly thick, stirring the mixture occasionally. Stir in soy crumbles; cook 2 minutes or until thoroughly heated, stirring frequently. Spoon about 2/3 cup crumbles mixture onto bottom half of each roll; top with top halves of rolls.

Jellyfish




Jellyfish look very weird when you spot one either floating around or washed up on the beach. They jiggle like gelatin and look like small clear blogs. Jellyfish varry in size and color. They will all have tentacles that hang down under them, Jellyfish use those tentacles to sting sea creatures that they will use for food. Unfortunately they will also sting humans that are swimming in the ocean. Even dead jellyfish have the tendency to sting a person. The stings hurt but not necesarrily emergencies. Pain, red marks, itching, numbness or tingling are results of jellyfish stings. Jellyfish from Australia, Philippines, the Indian Ocean and central Pacific Ocean are very dangerous and can cause individuals to become sick.

Jellyfish are found in every ocean from surface to the deep sea Jellyfish have roamed the seas for more than 500 million years. They are the oldest multi organ animal. Jellyfish are not true fish because they are invertebrates. Jellyfish live in blooms or swarms. A bloom is a large group in a small area. Jellyfish in a swarm are smaller in number.


I would one day love to visit the ocean and see jellyfish. Have you ever saw these beautiful creatures??













Who is up for Goat Sandwich




The hex of the goat is now gone and the goat knew he was in trouble. SO he tried to send a cry out so someone would help. Finally, the Cubs won the world series and now the curse of the goat is gone.



So if the curse is gone goat must be good at something so try this delicious pulled pork goat sandwich. How delicious this is to enjoy knowing the Cubs are World Season Champ






Two tablespoons olive oil
Four American lamb foreshanks
One and one-half teaspoons salt
One teaspoon freshly ground pepper
Two medium yellow onions, peeled, cored and sliced in 1/2-inch thick wedges
Four cups fat-free chicken broth
Two teaspoons dried oregano leaves, crushed
Three-fourths cup prepared barbecue sauce
Six crusty rolls

Preheat the oven to 375 degrees Fahrenheit.
In a large ovenproof sauté pan, heat the olive oil over high heat.
Pat the shanks dry with a paper towel. Season with salt and pepper. Brown shanks in the oil on all sides.
Place shanks in a roasting pan, then add the onion, chicken broth and oregano. Roast in the oven for two hours, turning the shanks every 30 minutes.
After two hours, check that the meat is cooked through. If not, continue to cook until tender but not falling off the bone. Remove the pan from the oven and remove the shanks from the broth; allow the shanks to cool.
Strain the broth, reserving the onions and a quarter-cup of the broth. Refrigerate or freeze the remaining broth for use in soups or stews.
Remove the meat from the shank bones; shred the meat, discarding any fat.
In a pan, combine the pulled lamb, barbecue sauce and two tablespoons of the reserved broth. If needed, add all of the reserved broth. Heat, stirring to combine sauce and lamb.
Split the rolls, spoon on the meat and serve.
