Sweet Turkey and Stuffing
This would be such a great idea for thanksgiving. For centerpiece or for dessert either way I am sure that the family would love.
All In One Holiday Bundt Cake
Every year it seems as it comes close to the holidays our family starts to think of all the great foods that we will share. One of the best classes is the desserts everyone loves them and there is never enough. It is always fun to see who brings what and what new ones will be brought to the dinner. This bundt cake will make its first appearance to the holiday table. As a child my mother would always bring a delicious tea ring. The adults would enjoy with a cup of joe and the young ones like myself would have a sliver with a cup of milk. I am hoping to bring about the same tradition.
All-in-One Holiday Bundt Cake
from Baking From My Home To Yours, by Dorie GreenspanIngredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp ground cinnamon
- 1/4 tsp freshly grated nutmeg
- Pinch of salt
- 1 1/2 tsp grated fresh ginger (or 1 tsp ground ginger)
- 1 1/4 sticks (10 tbsp) unsalted butter, at room temperature
- 1 cup sugar
- 1/2 cup (packed) light brown sugar
- 2 large eggs, at room temperature
- 1 tsp pure vanilla extract
- 1 1/4 cups canned unsweetened pumpkin puree
- 1 large apple, peeled, cored and finely chopped
- 1 cup cranberries, halved or coarsely chopped (I used Craisins instead for extra sweetness)
- 1 cup pecans, coarsely chopped
- Confectioners’ sugar, for dusting
Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt and ground ginger, if you’re using it (not the grated ginger).
Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter and both sugars together at medium speed until light and fluffy. Add the eggs one at a time, and beat for 1 minute after each addition. Beat in the vanilla. Reduce the mixer speed to low and add the pumpkin, chopped apple and grated ginger, if you’re using it-don’t be concerned if the mixture looks curdled. Still on low speed, add the dry ingredients, mixing only until they are incorporated. With a rubber spatula, stir in the cranberries and pecans. Scrape the batter into the pan and smooth the top with the rubber spatula.
Bake for 60 to 70 minutes, or until a thin knife inserted into the center of the cake comes out clean. Transfer the cake to a rack and cool for 10 minutes before unmolding, then cool to room temperature on the rack.
Just before bringing the cake to the table, dust it with confectioners’ sugar.

Strawberry Banana Popcorn Ball
Thanksgiving is the time of year to give thanks. The characters and friends of Charlie Brown and Snoopy celebrated thanksgiving a bit different than many of us will but the thought and meaning was there. So they celebrated with popcorn, jelly beans, toast and pretzels I thought I would share a delicious popcorn treat with you. I am sure that your guest will not only be a bit surprised but love them as well.
1 cup corn syrup
1 cup sugar
20 cups of plain popped popcorn
3 oz box of strawberry-banana jello (or any other flavor)
medium size lollipop sticks
*yields about 24 popcorn balls
On the stove top, bring corn syrup and sugar to a boil. Remove from stove and add jello mix, mix well. If you would like the flavor to me more subtle, use only 2oz of jello. Add mixture to popcorn and mix till well coated. Form into balls. Use about one cup of the popcorn mixture per ball. You'll want to work quickly. The mixture hardens up roughly the same way rice crispy treats do. With one hand hold onto the popcorn ball when you place the lolipop stick down the center of it. You might need to form the ball again, if it begins to break. Let set up for about an hour.
Yummy Appetizer : Cowboy Caviar
Cowboy Cavier
1 15-oz can black-eyed peas, drained and rinsed
1 15-oz can black beans, drained and rinsed
1 orange bell pepper, diced
1 1/2 cups frozen corn kernels
2 Tbls red wine vinegar
1 tsp canola oil
juice of 1 lime
1 garlic clove, minced
2/3 cup chopped fresh cilantro
2/3 cup thinly sliced green onions
salt and pepper to taste
In a large bowl combine black-eyed peas, black beans, and bell pepper. Run corn kernels under hot water and drain. Repeat and let sit for a few minutes. Add vinegar, oil, lime juice, minced garlic, cilantro, and green onions to bean mixture. Stir to combine. Mix in corn and season to taste with salt and pepper. Serve in tortilla chips.

Pumpkin Roll
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup pure pumpkin puree
1 cup walnuts, chopped
1 package (8 ounces) cream cheese, at room temperature
1 cup powdered sugar, sifted
6 tablespoons butter or margarine, softened
1 teaspoon vanilla extract
Powdered sugar
Preheat oven to 375° F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar.
Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl; set aside. In the bowl of a stand mixer fitted with the paddle attachment beat eggs and granulated sugar until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with walnuts.
Bake in preheated oven 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off wax paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
To make the filling cream cheese, combine powdered sugar, butter and vanilla extract in the bowl of a stand mixer fitted with the paddle attachment until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving.

NO Bake Peanut Butter Pie
One thing that our family loves at holiday gatherings and my daughter has been famous for bringing is peanut butter pie. I have all ready heard it muttered more than a few times that they cant wait to get a piece of that delicious pb pie. Oh yes and the great thing it is truly easy to make but for some reason I have never seen anyone make it like my daughter does. Check it out perhaps you will treat your family as well
1 chocolate graham cracker or cookie pie crust (homemade or store-bought)
8 oz. cream cheese
1 c. peanut butter
... ½ c. granulated sugar
1 tsp. pure vanilla extract
8 oz. frozen whipped topping, thawed
whipped cream, chocolate syrup, and grated chocolate; optional garnishes
With an electric mixer, beat cream cheese and sugar until smooth. Blend in peanut butter and vanilla. Fold in whipped topping. Spoon mixture into prepared pie crust. Refrigerate for at least 4 hours. Garnish with whipped cream and chocolate syrup, with a sprinkling of grated chocolate. Keep refrigerated

Pet Owners Beware
While we may all want our pets to be involved in the holiday on-goings there are dangers that may hurt them as well. Be sure to take safety measures and avoid objects like:
Turkey skin, drippings, or gravy. While many think that these items may be delicious and a treat of source for our pets the truth is that it may harm them. Items such as these can lead to our pet having pancreatitis or inflammation of the stomach or intestines.
Turkey twine (the string used to tie the turkey legs) can be harmful to our pets. It may be deadly to cats that get hold of what seems at first to be a tasteful play toy. It may lead to intestinal blockage
Turkey bones are extremely brittle and are never good for our pets. While we have always heard of giving the pet the bones its their part of the great dinner the truth is that it may be the last dinner. The bones have the ability to puncture and break inside their digestive tract They should NEVER be given to our pet.
Believe it or not corn on the cob is another danger for our pets. It has the ability to lead to intestinal blockages
Beware of the onions and garlic in stuffing as it and many of the spices such as sage is extremely toxic and upsetting to pets
Never offer dogs anything that has raisins or grapes in it as they bother the dogs kidneys Likewise mushrooms can cause damage in a dogs internal organs such as kidneys, liver, and its nervous system. Mushroom may lead to seizures, coma, vomiting, even death
Mashed potatoes and candied yams can lead to pancreatitis because of the butter and fat found in these dishes
Little temptations of ours such as chocolate and alcohol can be terrible for our pets. So beware of these as well

Cranberry Salad
Thanksgiving Cranberry Salad
1 package cranberries, washed and ground
1/2 cup sugar
6 oz and 3 oz packages, raspberry or orange Jell-O
1/2 cup chopped nuts
1/2 cup celery, diced
1/2 cup apples, diced
1 medium can crushed pineapple
2 ½ cups hot water
1 cup cold water
Dissolve both boxes of Jell-O in the hot water. Add the cold water and stir until Jell-O is dissolved. Drain pineapple; add juice to the Jell-O and chill Jell-O until slightly jelled. Then combine all ingredients with the Jell-O and mix. Chill.

This is the recipe that we will be sharing with the first graders in my grand-daughters class. They are I am sure going to be pleased. Now this recipe is a bit different than the one that we will have for Thanksgiving I am sure that the younger bunch should love this
1 package cranberries, washed and ground
1/2 cup sugar
6 oz and 3 oz packages, raspberry or orange Jell-O
1/2 cup chopped nuts
1/2 cup celery, diced
1/2 cup apples, diced
1 medium can crushed pineapple
2 ½ cups hot water
1 cup cold water
Dissolve both boxes of Jell-O in the hot water. Add the cold water and stir until Jell-O is dissolved. Drain pineapple; add juice to the Jell-O and chill Jell-O until slightly jelled. Then combine all ingredients with the Jell-O and mix. Chill.

Oklahoma Joe Beans
Today is the date in 1907 that Oklahoma became a state. No better way to celebrate than with Oklahoma Joe beans.

Recipe from: Joe Davidson
2 – 15 ounce cans of Pork & Beans
1 – 15 ounce can of Dark Red Kidney Beans
1 – 15 ounce can of Black Beans
1 – small red onion (diced)
1 – green bell pepper (diced)
1 – red bell pepper (diced)
1 – Jalapeno Pepper (diced)
2 – Cups-Golden brown sugar
18 ounces of BBQ sauce
1 pound chopped bbq brisket (optional but recommended for best results)
Preheat oven to 350 degrees
Drain beans and place in an aluminum foil pan
Remove seeds and dice peppers and onion
Place in aluminum pan
Mix in remainder of ingredients
Place pan on a cookie sheet and cook at 350 degrees for 2 hours
Remove from heat and let stand 30 minutes before serving
