Chicken with Mozzarella and Mushrooms



Looking for a tasty recipe for supper tonight? Check out this chicken recipe made with yummy mushrooms. By the way did you know that the month of September celebrates yummy mushrooms? While my favorites are morels are more popular in the spring here I also love other varieties of mushrooms. In fact there are so many different varieties that no one knows how many there are actually are.

Hope you enjoy!!!

8 boneless, skinless chicken breasts (thin-sliced)
4 cups of sliced mushrooms (or more!)
2 cans of cream of mushroom soup (10 ¾ oz cans)
3/4 cup of chicken broth
1 cup of Italian flavored bread crumbs
1 cup of shredded mozzarella cheese
2 tablespoons of butter
3 eggs, beaten
2 teaspoons of olive oil
1 teaspoon of minced garlic
1 teaspoon of garlic powder
1 teaspoon of dry basil
1 teaspoon of dry rosemary
Salt and black pepper to taste

Preheat oven to 350 degrees F. In a large skillet, heat olive oil on medium heat. Add minced garlic and mushrooms to pan. Sprinkle salt and pepper to taste. Cook until mushrooms are soft and cooked through, approximately 5-7 minutes. Remove mushrooms from heat and evenly spread inside a large, deep baking pan. Meanwhile, heat butter in a large skillet on medium-high heat. Mix eggs with garlic powder, dry basil, and dry rosemary in a small bowl. Dip chicken in egg mixture, then coat both sides entirely with bread crumbs. Place chicken in pan, and cook chicken until golden brown on both sides, approximately 3-4 minutes per side. (Tip: make sure chicken is dry before dipping in egg mixture to ensure breading stays on while cooking!) When finished cooking, place chicken over mushrooms in baking pan. Mix cream of mushroom soup with chicken broth in separate bowl, and then pour over chicken. Then, evenly sprinkle mozzarella cheese over chicken. Bake in preheated oven for 25-30 minutes. Remove from oven and then serve this delicious Chicken with Mushrooms and Mozzarella recipe!

Keep a Song In Your Heart

I believe that I knew stress way to early. The stress in every day life as a child was very much alive as I had a mother that was not always emotionally there with us. She spent days at a time in bed suffering from issues from stress related issues. As one of the oldest of 6 children I was to entertain and care for my siblings. This meant that I was to care for them as my mother would have had she been up to it which most of the time she was not. I can share stories upon stories of being that 8 year old packing around my younger 2 siblings taking them up town to get lunch, down to the neighbors to spend some time where ever I went they did to. This continued as I grew up and even after I was married.

At the young age of sixteen I was a mother of my own child and soon the house would be full having six babies by the age of 22. Through the years I would help raise many kids, help keep many teens off the streets and busy and most importantly out of trouble. I have had a partner through all of this the young 19 year old man that began that journey with me many years ago.

Now you all may be asking me why I share this story with you and the truth is because I wanted to share with you all who I am. The second reason and the reason I chose this verse to go with this post is because I do believe that without the good Lord up above I would not have made it on my journey. I know for a fact that it was others praying me through our path and the road we traveled. I learned many years ago that one way to make my day better and keep my heart happier was to keep a song in my heart and coming out my mouth. It seems to me that if you are humming a happy song it does not take long for a smile to come to your heart and for others to be happy as well.

Cherries Jubilee

September 25 is the day for the delicious dessert of Cherries Jubilee to shine. Made with cherries and liqueur which is flambéed and then the dish is served with ice cream. There are many delicious varieties of this dessert but I chose to share this one

 



Cherries Jubilee

1 lb. fresh dark cherries, pitted
1/2 cup sugar
1/4 cup orange juice
1/4 cup kirsh
2 tablespoons cornstarch

In a skillet, whisk together the sugar and cornstarch.
Stir in the water and orange juice . Continue to whisk over medium heat until thickened.
Add the cherries and simmer for 5  minutes or until cherries warm through.
Remove the skillet from the heat and pour in the kirsh.  Ignite and allow alcohol to burn off.
Spoon the cherries over ice cream and top with a dollop of whipped cream.

Apple Pie Scented Play Dough

I believe that each season has its own personality. Personality that has its own scents, attributes as things that are down primarily in that season. From the clothing styles we wear to the food we eat normally you will find each season to have its own look and feel. I love living here in Illinois where I can enjoy 4 seasons each year. One of my favorite seasons is fall. From the bonfires to apple picking time the crispness in the air is a favorite time of mine. Why not bring a little bit of that great fall inside to the little ones
 
 
 
Apple Pie Scented Play Dough

1 cup flour
¼ cup salt
½ Tbsp. vegetable oil
1 tsp. cream of tartar
½ tsp. nutmeg
1 tsp. cinnamon
1 tsp. red food color
1 cup water
 
In a large pot, combine all dry ingredients and mix well.
Add in vegetable oil, food color, and water, stir.
Cook over medium heat until the dough pulls away from pot and starts to become dry.
Turn off heat, let cool, and knead.
Notes
If the dough feels too sticky, knead in a tablespoon of flour.

Pumpkin Spice Puppy Chow


Are you ready for fall? Soon harvest season will be here and that always means that a lot of fun is to be had. Try this yummy snack and see what you think


Pumpkin Spice Puppy Chow
Makes 9 cups Puppy Chow
Ingredients:
  • 2 1/2 cups powdered sugar
  • 1 12-ounce package white baking chips
  • 1/2 cup (heaping!) Biscoff spread (creamy or crunchy will work)
  • 1 teaspoon pumpkin pie spice
  • 9 cups rice Chex cereal
Directions
  1. Place powdered sugar in a large sealable plastic bag. Set aside.
  2. Combine white baking chips and Biscoff spread in a microwavable safe bowl and microwave on high for one minute. Stir. Microwave for an additional 30 seconds and stir.
  3. Stir pumpkin pie spice into Biscoff mixture. Fold in Chex cereal and toss to coat.
  4. Pour Chex into plastic bag and shake to coat the cereal in powdered sugar.
  5. Remove coated cereal from bag and serve. Enjoy!

Pumpkin Butter



1 can pumpkin puree (not pumpkin pie mix)
A small lemon
Table sugar (regular granulated or turbinado)
Brown Sugar
Cinnamon
Pumpkin Pie spice (blend of cinnamon, ground ginger, lemon peel, nutmeg, cloves, and cardamom)

In crockpot you will need to mix sugar, spices, and pumpkin puree cook on low setting Use spice amounts that fit your taste that means you can use more or less whatever you prefer.

Start by using this measurement
• 3 cups pumpkin puree (one CAN is usually 15 ounces)
• 3 cups brown sugar
• 3+ Tablespoons lemon juice (half of a small lemon)
• 1/2 teaspoon cinnamon
• 1/4 teaspoon pumpkin pie spices (make sure you add this slowly, in case you don't like the cloves or other spices in it).

Pour the pumpkin puree and spices into the crock pot.  After you put all the ingredients in the pot, mix away. I used a potato masher to fully mix the spices in, and to mash down any larger pieces of the pumpkin still left. Cover the mixture with the crock pot lid and step away. The butter should not burn or smoke but should bubble down for hour or so.

 If you want to do this on a stovetop instead of a crock pot, you can! Combine everything in a saucepan and stir. Then bring the mix to a boil carefully watching to ensure you don't burn the pumpkin! Reduce heat to a simmer, and leave uncovered for 30 minutes or so until the mixture has started to thicken and turns more brown.

After hour or so mixture should cook down and start to turn brown and get thicker if not at that point cook another hour or so. Once it is thicker and darker in color it is time to take the lid off and let it thicken even more. Cook another hour or two in crockpot. It will resemble the thickness of peanut butter. Let butter cool just a bit

Now time to store butter so you can have some now and a bit more later. Simply scoop out the butter and fill container you choose to use whether jar or another dish. Then seal. Stays in fridge good for up to 1 week or in freezer for 6 months. You can also can if you choose.
