Hamburger Pie Casserole

One of the earliest recipes I shared on my blog several years ago is one of my families favorites. This casserole is so easy and tasty to make.

Hamburger Pie Casserole
1 lb hamburger or sausage
1 can corn
2 c cheese
2 c instant potatoes

Brown hamburger Drain and then layer in order given Bake 400 degrees for 20 minutes It is so good

This is one of my favorite pictures of my nephew. I took care of him quite often back when he was this age which is around the same age as my grandson now. This summer I will have the chance to get close to my grandson as well when he comes to stay with nana quite often.

1. April 15th is the deadline for Americans to file their state and federal income taxes...what's a job you do on a regular basis that could be described as 'taxing'?

I believe having to get up at 5 am every workday is very taxing. Oh my the sound of the alarm clock simply sends shivers up my spine

2. I'm participating in the April A-Z blog challenge and the Hodgepodge happens to fall on letter O this week. In keeping with that theme...olives, onions, oysters, okra...of the foods mentioned, what's your favorite O food?

It would be olives for real. I have always loved olives both black and green.
Okra and oysters would come near the bottom and oyster snack crackers and oatmeal would be daily delights for sure



3. What is something memorable you experienced as a child that your own children (or future children/nieces/nephews) will not get to experience?

Times with my dad are the times that I cherish and remember the best and even miss. My grandchildren and the new generation will never be able to meet my dad, hear his stories or feel the warmth in his bear hugs 

4. Term limits for our elected officials...your thoughts?

They are set for a reason in our community one of the newest problems is getting individuals to run for local positions. 

5. On April 18th 1775, Paul Revere made his famous 'midnight ride'....when did you last make a midnight ride? Perhaps the fate of a nation wasn't hanging in the balance, but tell us where you were headed anyway.

we used to drive at night and leave at midnight on our vacations because the traffic flow was a lot better.

6. What would freak you out more...a mouse running across your floor or a big fat hairy spider?

Probably both but is the mouse is running it will soon be gone and I wont go looking for it but the spider he may hang out for a bit long enough for me to scream for my hubby

7. I love it when people ask me____________________________.

How many children do you have??? That gives me opportunity to talk about 6 of my favorite things as that is the number of children I have
.

The weather here is beautiful and we have started ball practice. Games will start in a few weeks and we will have so much fun

Thankful thursday an awesome day to share what blessings in our life we are thankful for. It is a time to look back on our week and see that things are as grand as they seem or perhaps you will find things to be thankful for in a week that may not have seemed to have a light at the end of the tunnel. No matter what there is always something to be thankful for if you look hard enough and always remember we should be thankful for the love that our Lord Jesus offers us.

For the beautiful weather and the ability to open the windows and enjoy the warmth that is offered
For the storm that while it brings gust of wind leaves me thankful for the spring rain it brings
For my brother and his wife and their three beautiful children. Each of them playing ball this year and so excited about it
For my daughter who has realized that she to can still have dreams and meet them. For her husband who God blessed her with that helps her to achieve every dream that she strives for
For my wonderful grandchildren that I can not wait to see this weekend

Crescent Burgers

Love these no buns needed....
Crescent Burgers




1 lb hamburger meat
2 cups shredded cheddar cheese
couple drop of Worcestershire sauce
... 1 pkt dry onion soup mix
1 roll of crescent rolls
1 tsp pepper


Preheat oven to 350*
Brown and drain hamburger. In medium bowl mix hamburger and rest of ingredients (reserve 1/4 cup cheese for tops). Add a HEAPING spoonful of meat mixture to large end of unrolled crescent roll. Roll up and seal edges as best you can. Sprinkle reserved cheese on top and bake for 15 minutes til golden brown.

Kroger Helping To Make Family Dinners Possible

Recently I was able to take part in a wonderful event sponsored by Kroger and BzzzAgent. My family as many others are is very busy. Our schedules normally see us coming and going but on this one occasion we were able to take a break and sit down as a family. The great thing was that it was very easy to make and did not take a lot of time to prepare. I actually was able to come home from work and prepare a feast that allowed my family to have a decent conversation while they enjoyed the scrumptious meal.

I was delighted with the tenderlion because not only was it at a great price to start with but this week they are on sale at our local Kroger as well. We decided that we would bake our tenderlion as we have been trying to eat healthy. We seasoned the outside with a house mix which included spices such as garlic, all spice and chilli seasoning. Yes it was delicious not only the outside with the awesome spices but the juices of the meat itself was delicious.


I was delighted to find that the homestyle mashed potatoes were so easy to prepare and serve. Simply pop in microwave and in a few moments they were very tasty, fluffy and yummy. While members of our family decided to add more pepper and butter they were very tasty just as they were. kroger crescent rolls were very tasty and I personally believe they were even better than some of the leading brands.



We topped the meal off with a chocolate cake iced with vanilla icing. Yes it was a sort of black and white meal as we began once again to see others more clearly. What a great way to enjoy a delicious meal. Thanks to bzzzagent and Kroger.

Marinated Onions, Tomato and Cucumbers

    As we begin to put together the family garden my mind wanders to so many wonderful dishes that come out of the garden. This salad is one of my favorites Oh so yummy
     
     
3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil
1 teaspoon chopped fresh mint (optional)

Combine all ingredients in a large bowl. Toss well to mix. Refrigerate at least 2 hours before serving.

Fried Mozzarella Pepperoni Egg Rolls

 
I recently found this yummy recipe on facebook. How wonderful it is to be able to make a quick easy snack that the gang will love  and takes you minimal time so that you can enjoy the beautiful weather as well.
 
 
FRIED MOZZARELLA PEPPERONI EGG ROLLS
 
 

 12 pieces of string cheese
12 egg roll wrappers
36 slices of pepperoni
Oil for deep-frying
Marinara or pizza sauce

On top of an egg roll wrapper, place three pieces of pepperoni as shown in the picture. Place a piece of string cheese on top. Fold corners over cheese. Fold bottom corner over cheese and pepperoni and keep rolling until cheese is tightly sealed. Moisten corners with water to seal. Repeat with the rest of wrappers, cheese and pepperoni.

In a skillet, heat oil to 375 degrees F. Fry sticks, a few at a time, for 30-60 seconds on each side until completely brown. Drain on paper towels. Serve with sauce
