Thankful For ....

Today I am thakful for the warmth inside. Warm socks on my feet and the peace within my house. What a great day to take a nap, relax and enjoy my day off.

I am also thankful for my niece who turned 5 today. She is a bundle of joy to be around and so pretty as well

I can remember the many times that her mommy said a little prayer, worried about her little one before she was born and simply could not wait til her little gal was here. Precious bundle of joy she was when I first met her. Her brothers could not wait to see her. You could not have asked more for a prouder daddy than the one she has.

I simply think she is beautiful in this picture. This picture was taken by her mommy at the not so distance Christmas Concert. This little gal was to be a valentine baby and decided to stay a bit longer inside the safest spot she may ever know. Not a problem though as she has always been a little sweetheart.

Cherry Pie on National Cherry Pie Day

My daddy loved his cherry pie. It was what he preffered each and every time when offered a choice. My mom would often cook him cherry pie on his birthday which is in the middle of summer and no where near national cherry day.

Pastry for 1 piecrust
6 cups sour cherries, pitted
1/4 cup cornstarch
1 1/4 cups sugar
1/4 teaspoon ground cinnamon
1/4 cup shelled green pistachios, coarsely chopped
1 egg, beaten $1 pint pistachio ice cream

Heat oven to 400° F. Roll the piecrust into a 13-inch circle and fit it in a 9-inch pie plate, allowing the extra pastry to drape over the edge. In a medium bowl, combine the cherries, comstarch, sugar, and cinnamon; spoon into the pastry and scatter with the pistachios. Fold the extra pastry over the filling, pleating it so that it lies flat. Brush the pastry with the egg and sprinkle with additional sugar (about 1 tablespoon). Bake 40 to 45 minutes or until the crust is golden. Cool on a rack for 45 minutes. Serve with the ice cream.

Note: If using Bing cherries, reduce the sugar to 3/4 cup.

Make the Holiday Special with Great Recipes

When I was a kid we had many people in our lives who would help make the holidays extra special. Holidays were a sort of disney land for us with gifts and goodies to eat and great surprises. I can remember my mother making a fun bunny rabbit salad like this one that I found on the blog Sandy Toes and Popsicles

how to make a bunny salad

what you need:
pear halves
pretzels
chocolate chips or raisins
cherry
nutmeg
lettuce leaf

directions:
place a lettuce leaf on a plate. slice a pear half into wedges for the ears. place two on the lettuce leaf. then place one whole pear half on top (a large can of pears made four bunnies). carefully sprinkle nutmeg where the bunny's mouth will be. for the nose, place 1/4 of the cherry. add pretzels for the whiskers and chocolate chips or raisins for the eyes. and whala! bunny salad.

or perhaps they would share this carrot pineapple salad from Meatless Mama with us with the hint that the carrots were left from the easter bunnies visit. So they must be yummy and make room for it in our tummies.

3 carrots, shredded
1 C. finely diced fresh pineapple
3 diced medjool dates
1 T. slivered almonds
1 T. unsweetened shredded coconut
juice of 1 orange

Combine ingredients and enjoy.

Whatever you make up for your kids make it special I am sure they will love it. What treat to do you try to make your families for the holidays
