Garden Recipe : Stuffed Zucchini
2 medium zucchinis
1 c. mushrooms, finely chopped
1 c. grated Cheddar cheese
3 slices wheat bread, torn into pieces
1/2 c. onion, chopped
1/4 t. chicken bouillon granules (I would probably use a 1/2 t. next time)
1/3 c. chicken broth
1/4 t. garlic powder
1 lb. ground turkey, browned and drained
2 tomatoes, diced (optional)
Cut zucchini in half lengthwise. Scoop out seeds and pulp, leaving 1/4 inch shell. Discard seeds. Chop pulp in medium bowl and combine remaining ingredients. Fill each zucchini shell with 1/4 of the mixture. Wrap stuffed zucchini in 2 layers of foil. Place on grill over hot coals and cook for 15 minutes. Or you can bake (uncovered) at 350 degrees for 30-40 minutes, depending on how big your zucchinis are.

Crispy Cheddar Chicken

Peanut Butter Bars
1 cup butter melted
2 cups graham cracker crumbs
2 cups confectioners' sugar
1 cup + 4 tablespoons peanut butter
1 1/2 cups semisweet chocolate chips
Directions
In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan. In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the peanut butter layer. Refrigerate for at least one hour before cutting into squares.

Sweet and Sour Chicken
The chicken
coating:
3-4 boneless chicken
breasts
salt + pepper 1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil
The sweet and sour
sauce:
3/4 cup sugar4 tbs ketchup
1/2 cup distilled white vinegar
1 tbs soy sauce
1 tsp garlic salt
Start by preheating your oven to 325 degrees. Rinse your chicken breasts in water and then cut into cubes. Season with salt and pepper to taste. Dip chicken into the cornstarch to coat then dip into the eggs. Heat your 1/4 cup oil in a large skillet and cook your chicken until browned but not cooked through. Place the chicken in a 9x13 greased baking dish. Mix all of your sweet and sour sauce ingredients in a bowl with a whisk and then pour evenly over the chicken. Bake for one hour and during the baking process you will need to turn the chicken every 15 minutes

Lane Cake
Cake:
Cream together oil, sugar and vanilla. Sift together flour, baking powder and salt. Add to creamed mixture and mix until blended. Add water and brandy and mix for 2 minutes on medium. Gently fold in egg whites until mixed in, but don’t over mix or the eggs will deflate. Use ladle to evenly pour into 4 9-inch pie pans. Bake at 325 degrees for 30-35 minutes, until center springs back. Cool thoroughly on racks.
Filling:
In saucepan mix together eggs and sugar over medium heat, stirring constantly for 6 minutes. Do not let boil. Add chopped pecans and raisins and cook for 1 minute. Add brandy and vanilla, cook another minute. Set aside to cool.
Frosting:
Assembly:
Once cake is fully cooled, place on layer on the serving plate. Add 1/3 of the filling, spread evenly. Repeat for remaining layers and then frost.

- 1 tsp vanilla
- 1 tbsp brandy or milk (add more as needed)

Pull-Apart Cinnamon Sugar Pumpkin Bread with Buttered Rum Glaze
Ingredients
Bread2 Tbsp unsalted butter
1/2 cup milk
2 1/4 teaspoons (1 envelope) active dry yeast
3/4 cup pumpkin puree
1/4 cup white sugar
1 tsp salt
2 1/2 cups bread flour
1 cup granulated sugar
2 tsp ground cinnamon
1/2 tsp fresh ground nutmeg
2 Tbsp unsalted butter
Buttered Rum Glaze
2 Tbsp unsalted butter
1/8 cup brown sugar
1 1/2 Tbsp milk
3/4 cup powdered sugar
1/4 t rum
In a saucepan over medium-high heat, brown 2 tablespoons of butter, letting it bubble up and turn a dark golden brown but being careful not to allow it burn (turn black). Once browned, remove the pan from the heat and carefully add the milk, return to stove and heat through.**** Pour the milk and butter into the bowl of standing mixer (fitted with a dough hook) and allow to cool so it is no longer hot but also not cool (about 100-110 degrees F). Once it has reached a warm but not hot temperature add the yeast and 1/4 cup of sugar and allow to proof (this can take up to 8 minutes, the top will look foamy and the liquid cloudy). Then add the the pumpkin, salt, and 1 cup of flour. Stir until combined then add the rest of the flour 1/2 cup at a time and knead for 6 minutes, until the dough is smooth and elastic and just slightly sticky. If the dough is too moist, add extra flour 1 tablespoon at a time.
Move dough to a lightly oiled bowl and cover with a clean towel. Allow to rise in a warm place for 60-90 minutes or until doubled in size.
While dough is rising, brown another 2 tablespoons of butter. Add the sugar, cinnamon, and nutmeg and mix well.** Making sure sugar evenly absorbs the butter. Set aside. Next, grease and flour a 9x5 loaf pan and set aside.
When the dough has doubled in size, punch it down and flip out onto a clean floured surface and knead with hands for 1-2 minutes. Roll dough into a 20x12 inch rectangle.*** Evenly sprinkle the dough with the cinnamon sugar mixture and press into dough with palms of the hand. Cut the rectangle into 6 strips. Lay strips on top of each other and cut each strip into 6 even squares (cut in half then each half into thirds). Stack strips vertically into the loaf pan. Cover the pan with a clean towel and let rise for 30-45 minutes.
In the meantime preheat an oven to 350 degrees. After rising in the pan bake for 30-40 minutes (mine took 37 exactly) or until top is a very deep golden brown.
To prepare the glaze, heat the butter, milk, and brown sugar in a small saucepan. Bring to boil then immediately remove the pan from the heat and stir in the rum and powdered sugar

Strawberry Freezer Jam
Prep Time: 30 min
Total Time: 24 hr 30 min
Makes: About 7 (1-cup) containers or 112 servings, 1 Tbsp. each
3-1/4 cups prepared fruit (buy about 2 qt. fully ripe strawberries) |
1/4 cup fresh lemon juice |
1 box MCP Pectin |
1 cup corn syrup |
4-1/2 cups sugar, measured into separate bowl |
RINSE clean plastic containers and lids with boiling water. Dry thoroughly. |
CRUSH strawberries thoroughly, one layer at a time. Measure exactly 3-1/4 cups crushed strawberries into large bowl. Stir in lemon juice. Stir in pectin; let stand 30 min., stirring every 5 min. Stir in corn syrup. Gradually add sugar, stirring until well blended. Stir an additional 3 min. or until sugar is completely dissolved and no longer grainy. (A few sugar crystals may remain.) |
FILL all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Crockpot Bacon Cheese Potatoes
I love using my crockpot all year round. In the summer it saves on heating the house up and helps create a yummy meal. I also love the crockpot when I don't have time to fix a meal that can actually fix itself in the crockpot
1/4 pound bacon, diced – I bake it first in the oven so that it is “done” and browned then I dice it and place in the crock pot.
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced (or if you use a new potato then halve)
1/2 pound cheddar cheese, thinly sliced (shredded is fine)
salt and pepper
butter
Green Onions (optional)
- Line crockpot with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to steam the potatoes.
- Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste with salt and pepper and dot with (real) butter.
- Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
- Cover with remaining foil.
- Cover and cook on low for 10-12 hours.

Blackberry-Peach Cobbler with Praline-Pecan Streusel
STREUSEL
3/4 cup firmly packed light brown sugar
1/2 cup butter, melted
1/8 teaspoon salt
1 1/2 cups all-purpose flour
1 cup coarsely chopped pecans
FILLING
4 cups peeled and sliced fresh peaches (about 4 large)
1/2 cup granulated sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
2 cups fresh blackberries
1. Prepare Streusel: Stir together first 3 ingredients in a large bowl; add flour and pecans, and stir until blended. Let stand 20 minutes or until mixture is firm enough to crumble into small pieces. 2. Meanwhile, prepare Filling: Preheat oven to 375°. Stir together peaches and next 3 ingredients in a large saucepan; bring to a boil over medium-high heat. Reduce heat to medium, and boil, stirring occasionally, 6 to 7 minutes or until juices have thickened. Remove from heat, and stir in blackberries. Spoon mixture into a lightly greased 9-inch square baking dish. Crumble streusel over hot peach mixture. 3. Bake at 375° for 30 to 35 minutes or until bubbly and golden brown.
