Breakfast Skillet


  • 1pkg. (12 oz.) Johnsonville Breakfast Sausage Links
  • 2Tbsp olive oil, divided
  • 2cups frozen Southern-style hash brown potatoes
  • 1/2cup green sweet bell pepper, chopped
  • 1/2cup red sweet bell pepper, chopped
  • 1/2cup yellow sweet bell pepper, chopped
  • 1/2cup onion, chopped
  • 8 eggs
  • 1/2cup milk
  • 1/2tsp. salt
  • 1/2tsp. dried oregano
  • 1/4tsp. fresh ground pepper
  • 1/2cup shredded cheese



  • In a large skillet, prepare breakfast sausages according to package directions.  With a knife cut cooked links into thirds and keep warm. In a separate large skillet, add 1 tablespoon of oil and fry hash browns until golden; remove and set aside. Add remaining oil to skillet, add peppers and onion, cook over medium heat until crisp-tender. In a large bowl, beat eggs, milk, salt, oregano and black pepper.  Pour into the same skillet; cook over medium heat, stirring occasionally, until eggs are set.
    Add sausage and potatoes; mix gently.  Sprinkle with cheese, remove from heat; cover for 1-2 minutes or until melted.

    Strawberry Rhubarb Meringue Pie


    1/2 cup all-purpose flour
    1/4 cup whole wheat pastry flour
    1/4 cup ground almonds
    1/2 teaspoon salt
    1/4 cup cold butter, cubed
    2 tablespoons cold water

    FILLING:
    1 egg, lightly beaten
    3/4 cup sugar
    2 tablespoons all-purpose flour
    1/4 teaspoon ground cinnamon
    2 cups chopped fresh or frozen rhubarb, thawed
    1-1/2 cups sliced fresh strawberries

    MERINGUE:
    3 egg whites
    1/4 teaspoon almond extract
    6 tablespoons sugar

    In a food processor, combine the all-purpose flour, pastry flour, almonds and salt; cover and pulse until blended. Add butter; cover and pulse until mixture resembles coarse crumbs. While processing, gradually add water until dough forms a ball. Roll out pastry to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. In a large bowl, combine the egg, sugar, flour and cinnamon; stir in rhubarb and strawberries. Transfer to prepared crust. Bake at 375° for 35-40 minutes or until filling is bubbly. Place pie on a wire rack; keep warm. Reduce heat to 350°.In a large bowl, beat egg whites and extract on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edges to crust. Bake for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving. Yield: 8 servings.

    Muddy Coal Mine



    The town I live in is just 3 miles from this very town. Our little town was built on the backs of coal miners in the past and even today coal mines are very important to our community. Thank you to those early coal miners and all involved in the industry

    Autsim Awareness



    By now most people either have someone in their family who has an autistic child or they know someone who does. Is it our environment, mercury, toxins, or maybe something else that still has to be researched. One thing is for certain, we are all in this together to help find that missing puzzle piece. The rate of autism is continuing to grow and we have read that they are now saying within 7 years it will be 1 out of every 7 young families will have an autistic child in it.

    I took several education college courses. One of these classes had a speaker come in and share with us about autism. One thing that we learned was that the autism spectrum goes from mild to strong.There is an average of 1 out of 150 children that are currently diagnosed with Autism with many of these 18 and younger.

    Is this a disease that we are creating or is has it been there and research and knowledge making it more present? Either way we must all become aware of Autism Help spread the word as April 2 is Autism awareness day and the month of April is dedicated to autism

    Introduction of April Fools Day April 1

    English pranksters on April 1, 1700 popularized the tradition of April Fool's Day. They played practical jokes on each other. Noone however is for sre who celebrated the day for sure. In fact it is thought to have been celebrated for several centuries. April Fools day is thought to be linked to the ancient festivals such as Hilaria, celebrated in Rome where individuals dressed up i disguise. Others say it is tied to the first day of spring in the Northern Hemisphere, where Mother Nature fooled people with changig unpredictable weather.
    Whatever the origins I hope that you have a great day while you see if you are fooled or not fooled
