Pediped Gives Back and You Can As Well

 
 
Pediped footwear is no stranger to my blog. I love their shoes and their commitment to help others. Pediped footwear has now launched a program known as Pediped Rewards with "Purchases with Purpose" Fundraising sale. This program has been created to benefit the pediped foundation. The sale will run through February 5 with select styles available on Pediped.com marked down as much as 50%. Half of the sales from the selected styles will be donated to the pediped foundation to help children in need. 
 
The "Purchases with Purpose" sale is not the only great thing that Pediped has in store for the new year. A Pediped Rewards program has been launched as well. Customers who make a purchase via www.pediped.com are automatically enrolled in the pediped Rewards program, which allows for them to earn cumulative rewards for every purchase they make:

A Bit Of Sunshine Cake In All This Snowy Weather



  • Hostess Shortcakes (1 pkg. makes 4 cakes)
  • 2 peaches or nectarines
  • about 12 large strawberries
  • vanilla ice cream
  • butterscotch topping

  • DIRECTIONS: Cut the peaches or nectarines into thin wedges and slice the strawberries. Arrange the wedges on the shortcake cup in a pinwheel-type circle. This will be the rays of the sun. Make a circle of strawberries on top of the rays. Place a scoop of ice cream in the center and drizzle with butterscotch topping.

    Low Fat Chewy Fruit and Oatmeal Bars



    3/4 cup firmly packed brown sugar
    1/2 cup granulated sugar
    One 8-ounce container vanilla or plain low-fat yogurt
    2 egg whites, lightly beaten
    2 Tbsp. vegetable oil
    2 Tbsp. skim milk
    2 tsp. vanilla
    1-1/2 cups all-purpose flour
    1 tsp. baking soda
    1 tsp. ground cinnamon
    1/2 tsp. salt (optional)
    3 cups Quaker® Oats (quick or old fashioned, uncooked)
    1 cup diced dried mixed fruit, raisins, or dried cranberries

     

    Heat oven to 350°F. In large bowl, combine sugars, yogurt, egg whites, oil, milk, and vanilla; mix well. In medium bowl, combine flour, baking soda, cinnamon, and salt; mix well. Add to yogurt mixture; mix well. Stir in oats and fruit.
    Spread dough onto bottom of ungreased 13x9-inch baking pan.
    Bake 28 to 32 minutes or until light golden brown. Cool completely on wire rack. Cut into bars. Store tightly covered.

    Wednesday HodgPodge on Thursday

    1. Lake Superior University has once again banished a list of words/phrases they think should be banished from the Queen's English in 2012-

    amazing, baby bump, shared sacrifice, occupy, blowback, man cave, the new normal, pet parent, win the future, ginormous, trickeration and thank you in advance.

    Which of these words/phrases would you most like to see banished from everyday speech and why. Go here to read more about how the words were chosen.
    There are  a couple of these that would be my choice to rid of but know many others that would like to keep them > The baby bump is one that I know many people that use it but just seems a little impolite to me. A pregnant lady glows in the late months and her stomache while it may look like a bump is so much more
    The new normal is another one because it almost seems odd to have a new normal after all what was the old normal After al while does the new normal become the normal and the old become the past?
    2. Are you easily embarrassed?

    all depends on what is going on and the reason I should be embarrassed. I normally say and do things without being embarrassed but offer me them in a surrprise and you will see me blush with embarrassement

    3. what is your go-to snack?

    often chips and dip or crackers and cheese or spread

    4. Have you ever been to Washington DC? if not do you have any desire to go? What site/attraction would you most like to see in that city? If you have been what's your favorite site?

    I have never seen a real reason to go visit while I love politics I really have never wanted to visit but sometimes when they show how beautiful it is there when the trees bud and flower blooms in spring I dream about visiting one day

    dislike them all equally

    6. What's a small act of kindness someone did for you that you've never forgotten?

    We have been blessed and there have been many knocks on the door with little there but a basket of goodies for the kids one time a young man bought my groceries and I truly was blessed that time as well the most important thing is to pass it on

    7. Have you ever been a blood donor?

    no but my children have been I am scared of needles and therefore I have never donated but my children up to know that it is right to give

    8. My personal random thought is that with 5 children in college and 2 grandbabies as well as a little brother and his family that I love all but wow I think I will need a vacation in the end









    Irish Creme Pudding



    1 quart whole milk
    1 cup arborio rice
    2/3 cup sugar
    3/4 cup dried currants, plumped in warm water and drained
    1/2 cup Irish cream liqueur
    Butter cookies, for serving

    Preheat the oven to 300°. Butter a 9-inch square baking dish. In a medium saucepan, bring 3 cups milk to a simmer. Add the rice and sugar and stir until the sugar is dissolved. Spread the mixture in the prepared dish, cover loosely with foil and bake for 30 minutes. Stir and continue baking until the rice is tender, about 30 minutes more. Remove from the oven and stir in the remaining 1 cup milk and the currants; let cool.    Divide the pudding among 6 whiskey glasses and top with Irish cream. Serve with the cookies.

    Fancy A Ham and Cheese

    1 tablespoon whole-grain Dijon mustard
    1 tablespoon fat-free mayonnaise
    8 (1-ounce) slices Italian bread
    6 ounces thinly sliced ham
    1 cup (4 ounces) shredded Gruyère cheese
    1/4 teaspoon freshly ground black pepper
    1/2 cup egg substitute
    1/4 cup fat-free milk
    Cooking spray

    Combine mustard and mayonnaise in a small bowl. Spread 3/4 teaspoon mustard mixture over each of 4 bread slices; layer each slice with 1 1/2 ounces ham and 1/4 cup cheese. Sprinkle evenly with pepper. Spread 3/4 teaspoon mayonnaise mixture over each remaining bread slice; place, mustard side down, on top of sandwiches. Combine egg substitute and fat-free milk in a shallow dish. Dip both sides of each sandwich into the egg mixture. Heat a large nonstick griddle or skillet over medium heat. Coat pan with cooking spray. Add sandwiches to pan; cook 3 minutes on each side or until lightly browned and cheese melts.

    Slow Cooker Meatloaf



    1 cup soft bread crumbs
    1-1/2 cups spaghetti sauce, divided
    1 egg, lightly beaten
    2 tablespoons dried minced onion
    1 teaspoon salt
    1/2 teaspoon garlic powder
    1/2 teaspoon Italian seasoning
    1/4 teaspoon pepper
    2 pounds lean ground beef (90% lean)


    Cut four 20-in. x 3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 3-qt. slow cooker. Coat strips with cooking spray. In a large bowl, combine the bread crumbs, 1 cup spaghetti sauce, egg, onion, and seasonings. Crumble beef over mixture and mix well. Shape into a loaf; place in the center of the strips. Spoon remaining spaghetti sauce over meat loaf. Cover and cook on low for 3-4 hours or until a meat thermometer reads 160°. Using foil strips as handles, remove meat loaf to a platter. Yield: 8 servings.

    Treat Yourself To Nacho Dish



    1 pound ground beef
    1 cup chopped onion
    3/4 teaspoon salt
    1/4 teaspoon pepper
    Tortilla chips
    2 (16-oz.) cans refried beans
    4.5-oz. can diced green chilies
    1 cup salsa
    1 cup shredded Cheddar cheese
    1 cup shredded mozzarella cheese
    1 cup shredded Monterey Jack cheese
    12-oz. container guacamole
    1 1/2 cup sour cream
    2 1/4-oz. can sliced black olives, drained
    1/2 cup chopped green onions

    Cook ground beef and one cup onion in a skillet, stirring until beef crumbles and is no longer pink; drain well. Add salt and pepper. Layer tortilla chips in a lightly greased 13"x9" baking dish; top with beans, beef mixture, green chilies and salsa. Sprinkle with cheeses. Cover and bake at 400 degrees for 8 to 10 minutes or until cheese melts. Top with guacamole, sour cream, olives and green onions. Serve with additional tortilla chips.

    Crockpot Hamburger Casserole



    Crock Pot Hamburger Casserole
    2 lg. sized potatoes, sliced, unpeeled
    2 to 3 med. carrots, unpeeled
    1 (#2) can peas, drained or 1 c. frozen peas
    2 to 3 med. onions, chopped or sliced or equivalent amt. of dried onions
    1 lb. or less of turkey or chicken or lean hamburger
    2 stalks of sliced celery
    1 (10 oz.) can tomato soup
    1 (10 oz.) can water

    Place layers of vegetables in order given in crock pot. Season with salt and pepper. Put the lightly browned meat on top of celery. Mix tomato soup with water and pour into pot. Cover and set low for 6 to 8 hours or on high for 2 to 4 hours. Stir occasionally. In the absence of a slow cooking crock pot, use stew pan on top of the stove for 1 to 2 hours.

    Golden Chicken with Tomatoes and Olives

  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 2 1/2-inch pieces
  • kosher salt and black pepper
  • 1 large onion, thinly sliced
  • 1 pint grape or cherry tomatoes, halved
  • 1 cup large pimiento-stuffed olives, quartered
  • 2 cloves garlic, thinly sliced
  • 3/4 cup dry white wine
  • 3/4 cup fresh flat-leaf parsley, chopped
  • Cook the rice according to the package directions. Heat te oil in a large skillet over medium heat. Season the chicken with ½ teaspoon each salt and pepper. Cook until golden brown, 3 to 4 minutes per side. Transfer to a plate                Add the onion to the skillet and cook, stirring occasionally, until soft, 5 to 6 minutes. Add the tomatoes, olives, and garlic and cook, stirring, for 2 minutes. Return the chicken to the skillet and add the wine. Simmer until the chicken is cooked through and the sauce has slightly thickened, 4 to 6 minutes.   Stir in the parsley. Serve with the rice.

    Love and Fried Egg Sandwich

    Pocket Change shared a recipe for the ultimate fried egg sandwich and to me it looked delicious I think you should check it out. I wanted to share this recipe because I wanted to share something that happened over 26 years ago when I was dating my hubby. The first food he ever offered me and I picked out was a fried egg sandwich. Now I would love to have a delicious fried egg sandwich but back then I was (1) nervouse to eat in front of my boyfriend and (2) was not sure about an egg sandwich I had never had them before so had no idea if I would like it or not. Now days I have no problem eating with my hubby and fried egg sandwiches are often served up here.

    The hairy mellon which to me resembles a cucumber as described by food reference is a winter melon that is 6 to 10 inches long with green skin and fine hairlike fuzz that disappears when the fruit matures. Their shape varies from cylindrical to dumbbell like. It's mild subtle flavor is described as somewhat like a cucumber or summer squash. They are originally from southern China and have been cultivated there since antiquity

    Spring Semester

    Touchdown Dogs

    As football fans we enjoy a good hotdog when we watch the games. These touchdown dogs are ones that we really love because they pack a punch.

    Victorian Era Sponge Cake

    very good sponge cake
    Four eggs, one cup of flour (sifted), one cup of sugar (granulated), the juice of half a large lemon, or that of a small one; the grated rind of a lemon. Beat the whites of the eggs until they are stiff and dry, then add the sugar, beating well; then add the well-beaten yolks; then the rind and juice of the lemon; then stir in, very lightly, the sifted flour. Bake in a moderate oven.

    I just love how the victorian era recipes were simple to the point and the cook knew exactly what it meant.

    Steaktips and Peppered Gravy



    2 cups uncooked egg noodles
    Cooking spray
    1 pound top sirloin steak, cut into 3/4-inch pieces
    1 tablespoon butter
    2 tablespoons finely chopped shallots
    1 (8-ounce) package presliced baby bella mushrooms
    1 teaspoon minced garlic
    1 tablespoon lower-sodium soy sauce
    3 tablespoons all-purpose flour
    1 1/2 cups fat-free, lower-sodium beef broth
    1/2 teaspoon black pepper
    1/4 teaspoon salt
    3 fresh thyme sprigs
    1 teaspoon fresh thyme leaves (optional)

    Cook noodles according to package directions, omitting salt and fat; drain. While noodles cook, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add steak; sauté 5 minutes, browning on all sides. Remove from pan; cover. Melt butter in pan over medium-high heat. Add shallots and mushrooms; sauté 4 minutes. Add garlic; sauté 30 seconds. Stir in soy sauce. Sprinkle flour over mushroom mixture; cook 1 minute, stirring constantly. Gradually add broth, stirring constantly. Add pepper, salt, and thyme sprigs. Bring to a boil; cook 2 minutes or until thickened. Return beef to pan; cook 1 minute or until thoroughly heated. Discard thyme sprigs. Garnish with thyme leaves, if desired.

    Whats In A Poem

    Me and my daughter have a difference of opinion on some of the old nursery rhymes (1) because some of them were not made for children or were made to scare children and now we teach our children to say them

    They send for the king's doctor,
    who sewed it on again;

    In the 16th century it was to the amusement of many to place live birds in a pie. It is also thought that perhaps the blackbirds have been seen as an allusion to monks during the period of Dissolution of the Monasteries by Henry VIII, with Catherine of Aragon representing the queen, and Anne Boleyn is maid. The rye and the birds, have been seen to represent a tribute sent to Henry VII, and on another level, the term "pocketful of rye" may in fact refer to an older term of measurement. The number 24 has been tied to the Reformation and the printing of the English Bible with 24 letters. From a folklorish tradition, the blackbird taking the maid's nose has been seen as a demon stealing her soul.[4]
    No corroborative evidence has been found to support these theories and given that the earliest version has only one verse and mentions "naughty boys" and not blackbirds, they can only be applicable if it is assumed that more recently printed versions accurately preserve an older tradition.[1]

    Spice it up for supper tonight

    Mexican Chicken Casserole
     
     
     
    3/4 lb. boneless skinless chicken breasts, cut into bite-size pieces
    1 tsp. ground cumin
    1 green pepper, chopped
    1-1/2 cups TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
    2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
    1 can (15 oz.) no-salt-added black beans, rinsed
    1 tomato, chopped
    2 whole wheat tortillas (6 inch)
    1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese, divide
     
    HEAT oven to 375ºF.
    COOK and stir chicken and cumin in nonstick skillet sprayed with cooking spray on medium heat 2 min. Add peppers; cook 2 min., stirring occasionally. Stir in salsa; cook 2 min. Add Neufchatel; cook 2 min. or until melted. Stir in beans and tomatoes.
    SPOON 1/3 of chicken mixture into 8-inch square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture; cover.
    BAKE 20 min. or until heated through. Sprinkle with remaining shredded cheese; bake, uncovered, 5 min. or until melted.    

    Mexican Bread Pudding



    1-1/4 qt. (5 cups) water
    3/4 lb. piloncillo (Mexican brown loaf sugar), coarsely chopped
    1 cinnamon stick
    4 whole cloves
    1 French baguette (1 lb.), cut into 1-inch cubes
    1/2 cup (1 stick) butter, melted
    1/2 cup raisins
    1/2 cup PLANTERS Sliced Almonds, toasted
    1-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
    2 Tbsp. KRAFT Parmesan Cheese

     

    BRING water, piloncillo, cinnamon and cloves to boil in medium saucepan; simmer on medium heat 20 min. or until syrup-like consistency, stirring occasionally. Remove from heat; keep warm.
    HEAT oven to 350ºF. Toss bread cubes with butter; spread onto baking sheet. Bake 10 min. Transfer to large bowl. Add raisins and nuts; mix lightly. Strain syrup; discard cinnamon stick and cloves. Add syrup to bread mixture; mix well. Let stand 10 min., stirring frequently. Meanwhile, combine cheeses.
    SPOON half the bread mixture into 2-qt. casserole; sprinkle with half the cheese mixture. Repeat layers; cover.
    BAKE 25 min. or until cheese is melted and golden brown, uncovering the last 5 min.

    Rachael Ray Texas Turkey Chili



    1/4 cup extra-virgin olive oil
    1 bell pepper, finely chopped
    1 onion, finely chopped
    1/4 cup tomato paste
    1 tablespoon chili powder
    3/4 pound ground turkey
    Salt and pepper
    One 14.5-ounce can fire-roasted crushed tomatoes
    One 12-ounce bottle beer
    One 15.5-ounce can kidney beans, rinsed

    Frozen assets
    Store cooled leftovers in an airtight container and freeze for up to one month.

    In a large Dutch oven, heat the olive oil over medium-high heat. Set aside 2 tablespoons chopped bell pepper and add the remaining bell pepper and the onion to the Dutch oven; cook, stirring, until softened, about 5 minutes. Stir in the tomato paste and chili powder. Add the turkey, season with salt and cook, breaking it up and stirring to combine, 3 to 4 minutes.   Pour in the crushed tomatoes and beer, bring to a boil, then lower the heat and simmer, stirring occasionally, for 10 minutes. Add the kidney beans and cook until heated through, about 5 minutes more. Season with salt and pepper. Serve in bowls, topped with the reserved bell pepper.

    German Butter Cake

    1 tablespoon active dry yeast
    1/2 cup sugar
    1/2 cup lukewarm water
    1 teaspoon salt
    1/2 cup unsalted butter
    3/4 cup milk
    1 vanilla bean, split
    Grated zest of 1 lemon
    3 large eggs
    4 cups all-purpose flour
    Topping:
    3/4 cup unsalted butter, softened
    1/2 cup sugar
    3/4 cup packed brown sugar
    1/3 cup ground almonds
    1/3 cup ground walnuts
    1/2 teaspoon ground cinnamon
    1/2 teaspoon vanilla extract
    Butter a 13 x 9 x 2-inch baking pan.
    FOR THE CAKE: In a small bowl, combine the yeast, 1 tablespoon of the sugar, and the warm water and set aside in a warm place for 15 minutes, or until bubbles appear. In another bowl combine the remaining scant 1/2 cup sugar, and the salt, and butter. Pour the milk into a saucepan, add the vanilla bean and bring to a boil. Remove from the heat, scrape out the seeds, discard the vanilla bean, and stir the milk into the butter mixture. Let the mixture stand until it is lukewarm. Stir in the yeast mixture and lemon zest. Add the eggs, one at a time, beating well after each addition. Fold in the flour, a little at a time. Beat the dough for 5 minutes, or until smooth.
    Spread the dough into the prepared pan. Cover loosely with a tea towel and set aside in a warm place for 30-45 minutes to allow the mixture to rise, almost doubling in size.
    Preheat the oven to 400 degrees F .
    FOR THE TOPPING: Cream the butter, sugar, and brown sugar until light and fluffy. Stir in the almonds, walnuts, cinnamon, and vanilla. Drop teaspoonfuls of the topping onto the dough.
    Bake the cake for 35 minutes, or until the top is golden and a skewer inserted in the middle comes out clean. Allow the cake to cool completely in the pan.
    Cut into wedges and serve with butter.

    Rice and Beans

    1 tbsp olive oil
    1 onion, chopped
    2 cloves garlic, minced
    1/4 tsp. black pepper (to taste)
    Dash cayenne (just a little, to taste)
    1 grated carrot
    1 chopped tomato
    1/2 lb. of rice
    2 cups of water
    14 oz. cooked black beans.
     
    Sauté in the olive oil the chopped onion.
    Add garlic, black pepper, dash cayenne, carrot, the chopped tomato, and cook for 3 minutes.
    Add and mix well the rice, add the water, reduce the heat to low, cover and cook for 15-20 minutes or until rice is tender and the liquid absorbed. Remove from heat and fluff with a fork.
    Meanwhile, put the black beans in another saucepan with a little water and cook over a low heat, stirring from time to time, until heated through.
    Once the rice is cooked, add the drained black beans.

    Sloppy Joe Squares

    1 lb lean (at least 80%) ground beef
    1 can (15.5 oz) sloppy joe sauce
    2 cans (12 oz each) Pillsbury® refrigerated Big & Buttery crescent dinner rolls
    2 cups shredded Cheddar cheese (8 oz)
    1 tablespoon sesame seed
    Heat oven to 350°F. In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in sauce. Heat to boiling, stirring occasionally.
    Unroll 1 can of the dough; place in ungreased 13x9-inch (3-quart) glass baking dish. Press in bottom and 1/2 inch up sides of dish. Spread beef mixture over dough; sprinkle with cheese. Unroll second can of dough; place over cheese. Sprinkle with sesame seed.
    Bake 30 to 35 minutes or until mixture is bubbly and dough is golden brown. Cut into squares to serve.

    Warm Apple Buttermilk Custard Pie



    Crust:
    1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury)
    Cooking spray

    Streusel:
    1/3 cup all purpose flour
    1/3 cup packed brown sugar
    1/2 teaspoon ground cinnamon
    2 1/2 tablespoons chilled butter, cut into small pieces

    Filling:
    5 cups sliced peeled Granny Smith apple (about 2 pounds)
    1 cup granulated sugar, divided
    1/2 teaspoon ground cinnamon
    2 tablespoons all-purpose flour
    1/4 teaspoon salt
    3 large eggs
    1 3/4 cups fat-free buttermilk
    1 teaspoon vanilla extract

    Preheat oven to 325º.

    To prepare crust, roll dough into a 14-inch circle; fit into a 9-inch deepdish pie plate coated with cookig spray. Fold edges under; flute. Place pie plate in refrigerator until ready to use.

    To prepare streusel, lightly spoon 1/3 cup flour into a dry measuring cup; level with a knife. Combine 1/3 cup flour, brown sugar, and 1/2 teaspoon cinnamon in a medium bowl; cut in butter with a pastry blender or 2 knives until the mixture resembles coarse meal. Place streusel in refrigerator.

    To prepare the filling, heat a large nonstrick skillet coated with cookig spray over medium heat. Add sliced apple, 1/4 cup granulated sugar, and 1/2 teaspoon cinnamon; cook 10 minutes or until the apple is tender, sitrring mixture occasionally. Spoon the apple mixture into prepared crust.
    Combine remaining 3/4 cup granulated sugar, 2 tablespoons flour, salt, and eggs, stirring with a whisk. Stir in buttermilk and vanilla. Pour over apple mixture. Bake at 325º for 30 minutes. Reduce oven temperature to 300º (do not remove pie from oven); sprinkle streusel over pie. Bake at 300º for 40 minutes or until set. Let stand 1 hour before serving.

    Cure a Cold Soup

    2 pieces skinless, boneless chicken breast
    2 onions, 1 halved and 1 chopped
    2 cloves garlic, crushed
    1 bay leaf
    2 tablespoons extra-virgin olive oil (EVOO)
    3 carrots, chopped or thinly sliced
    4 small ribs celery, finely chopped
    1 teaspoon sugar
    Salt and pepper
    One 32-ounce container (4 cups) chicken broth
    1/3 pound wide egg noodles
    4 scallions, thinly sliced on an angle
    1/4 cup finely chopped flat-leaf parsley
    1/4 cup fresh dill, chopped
    Grated peel of 1 lemon

    In a large saucepan, combine the chicken, halved onion, garlic, bay leaf and enough water to cover. Bring to a boil, then lower the heat and simmer gently until the chicken is cooked through, 15 to 20 minutes.   While the chicken is cooking, in a soup pot or Dutch oven, heat the EVOO, 2 turns of the pan, over medium heat. Add the chopped onion, carrots and celery; add the sugar and season with salt and pepper. Cover the pot and cook until the vegetables are softened, about 8 minutes.   Add the chicken broth and 2 cups water to the pot and bring to a boil. Shred the poached chicken into pieces and add to the soup. Stir in the egg noodles and cook until al dente, about 5 minutes. Turn off the heat and stir in the scallions, parsley, dill and lemon peel. Season with salt and pepper.
