New Resolution + recipe

This year I am looking to change our eating style up a bit. Healthier the better and well that includes veggies in our diet even if we have to dress them up in a way that they may really love. Do you have any ideas or tips to share to make my resolution happen?


Twice Baked Cauliflower
(Makes 6-8 servings; recipe adapted slightly from The Low Carb Gourmet.)



Ingredients:
1 large head cauliflower
4 oz. low fat cream cheese (do not use fat free)
1/2 cup low fat sour cream (do not use fat free)
1/4 cup minced green onions
1/4 cup freshly grated Parmesan cheese (If you only have finely grated Parmesan, use a bit less)
6 slices bacon, cooked until very crisp, fat blotted with paper towel and then crumbled
1 cup reduced fat sharp cheddar cheese
(I used Kraft 2% milk sharp cheddar)

Instructions:

Preheat oven to 350F/180C. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling salted water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in light cream cheese, light sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon.


Spread evenly in a medium-sized glass casserole dish. Sprinkle with low-fat cheddar cheese and reserved bacon. Bake 30-35 minutes, or until hot and bubbly.

Pumpkin Dump Cake

Pumpkin Dump Cake



1 15 oz. can pumpkin puree
10 oz. evaporated milk
1 C. light brown sugar
3 eggs
3 tsp. pumpkin pie spice
1 box spice cake mix
1 C. chopped walnuts
1/2 C. Heath Toffee Bits
1 C. melted butter

In a large bowl, dump in the pumpkin puree, evap. milk, brown sugar, eggs and pumpkin pie spice. Mix well. Dump mixture into a greased, 9 x 13 baking pan.

Next, evenly sprinkle yellow cake mix over top of the pumpkin mixture.

Sprinkle nuts and toffee bits all over the top.

Finally, pour the melted butter over top of everything.

Bake for 45 to 50 minutes in 350 degree oven.

Duck Hunting in Southern Illinois

In past years the atmosphere here in southern Illinois may have looked like this. The truth this year is that things are just a bit different. There seems to be a shortage of ducks. The blame has been put on the weather and lack of rain. Whatever the reason it seems like those individuals who live off the land will be short a Christmas duck or so.

  • 3 (6-ounce) packages (18 ounces) premium white chocolate chips
  • 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 1/2 cup chopped green candied cherries (optional)
  • 1/2 cup chopped red candied cherries (optional)
Over low heat, melt chocolate with sweetened condensed milk, vanilla and salt. Remove from heat; stir in cherries. Spread into foil-lined 8 or 9-inch square pan. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off foil and cut into squares. Store covered in refrigerator.

Christmas Shoes

One of my favorite Christmas songs, always makes me cry. I have had the chance for the past few years to go see this song performed by the group that wrote it. My children know I love this song and several of them have this song as their cell phone ring tone when I call in. How sweet

Chess Pie A Favorite of Ours



Chess Pie was one that many members of the family would request. I believe it was my husbands grandmother that made the best. Now 27 years after becoming part of the family I am now responsible to make this pie. Is there a special recipe that you make for your family?
3 eggs
1 ½ c. sugar
1 stick butter
1 T. vinegar
1 t. vanilla
Directions
Beat eggs well (very, very important!). Add sugar. Chop up butter into mixture. Add vinegar and vanilla. Place in double boiler and allow butter to melt stirring constantly.
Pour into unbaked pie shell. Bake at 250 degrees for 20 minutes, then increase oven to 350 and bake 25 minutes longer.
I hope you’ll try making Chess Pie. My secret ingredient is my grandmother, but maybe you have a different one. I’d love to hear how it turns out.

Pie With A Twist




  • 1 (8-ounce) package cream cheese, softened
  • 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
  • 1/3 cup lemon juice from concentrate plus additional for dipping banana slices
  • 1 teaspoon vanilla extract
  • 3 medium bananas, divided
  • 1 (9-inch) graham cracker crumb crust
  • 1 (15-ounce) can mandarin orange segments, well drained, divided

Preparation 
    1. In large mixing bowl, beat cream cheese until fluffy.
    2. Gradually beat in sweetened condensed milk until smooth.
    3. Stir in 1/3 cup lemon juice and vanilla.
    4. Slice 2 bananas; dip in lemon juice and drain. Line crust with bananas and about 2/3 of the orange segments. Pour filling over fruit.
    5. Chill 3 hours or until set. Before serving, slice remaining banana; dip in lemon juice and drain. Garnish top with banana slices and remaining orange segments. Refrigerate leftovers.

Donuts For Christmas

RECIPE FOR HOMEMADE GLAZED DONUTS



2 packets (.25 oz) active dry yeast
1/4 cup warm water
1-1/2 cups lukewarm milk
1/2 cup white sugar
1 tsp salt
2 eggs
1/3 cup Crisco vegetable shortening
5 cups flour

Glaze
1/3 homemade unsalted butter
2 cups homemade powdered sugar
2 tsp homemade pure vanilla extract
4 TBS hot water

vegetable oil for frying, approximately 1 quart

In a small bowl, add the yeast to the warm water. Let stand until done proofing; approximately 5 to 10 minutes.

In a large mixing bowl, add the proofed yeast mixture with the lukewarm milk, sugar, salt, eggs, shortening; mix well. Add two cups of flour and mix for a few minutes at low speed; or mix with a wooden spoon. Beat in the remaining flour, 1/2 cup at a time, or until the dough no longer sticks to the side of the bowl.

Roll out on a lightly floured surface and knead for 5 to 10 minutes; or until smooth and elastic. Place the dough in a greased bowl, turn over to cover dough with grease. Cover and place in a warm area to rise; approximately 1-1/2 to 2 hours. Poke the dough with a finger and if the indentation remains, the dough is ready.

Turn the dough out again on a floured surface and gently roll out to 1/2 inch thickness. Cut donuts out with a floured donut cutter. Cover with a cloth, and let donuts rise again until doubled in size.

PREHEAT oil in a deep fryer or large heavy skillet to 350 degrees.

Meanwhile, melt butter in a small saucepan, and add the powdered sugar. Stir until smooth and remove from heat. Add the vanilla and stir in hot water, one tablespoon at a time, until glaze is thin (but not watery). Set aside.

Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown.

Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier clean up. Ready to go. You better save yourself a few because they will be gone in no time.... 

Christmas Cookies Bring Back Memories


  • This Taste of Home recipe brings back memories of the early years of my marriage. My mom in law loved this type of cookie and made them every year. Oh so yummy and I know that loved was packed in each and every one of them as well. What is your favorite cookie? 

  • 1/2 cup egg whites (about 3)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1-1/4 cups Imperial Sugar® / Dixie Crystals® Granulated Sugar
  • 3 cups flaked coconut
  • 30 red or green candied cherries, halved, optional
  • In a large bowl, beat the egg whites, vanilla and salt on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved, about 6 minutes. Fold in coconut.
  • Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Top each with a candied cherry half if desired. Bake at 325° for 20-23 minutes or until firm to the touch. Remove to wire racks to cool. Store in an airtight container. Yield: 5 dozen.

SnowMan Mashed Potatoes



  • For the potatoes:
    • 6 pounds of potatoes, peeled and quartered
    • About 1 cup whole milk or heavy cream
    • 1/4 cup butter
    • Salt and Pepper
    To adorn the snowman:
    • 1 long carrot
    • 1 baby carrot
    • 3 raisins
    • 2 small radishes

Preparation:

This recipe makes 15 to 20 servings.
Place the quartered potatoes into a large pot. Don't overcrowd the potatoes. You may need to use two pots if you don't have one that's big enough.
Cover the potatoes with salted water, bring the water to a boil on the stove and cook at a gentle boil until the potato pieces are fork tender, about 15 minutes.
Transfer the potatoes to a large bowl and mash with a hand masher until smooth, adding the milk or cream, butter, salt and pepper as you go. Be careful not to add too much milk or cream. You don't want the potatoes to be runny.
Set a large serving tray (preferably not a white one) next to your bowl of mashed potatoes.
Scoop the potatoes onto the tray, starting with the large, bottom "snowball." Scoop a slightly smaller amount of potatoes onto the tray above the first snowball to create the snowman's midsection. Then, add the smallest helping of potatoes on top for the head. Smooth out the potatoes with the back of a spoon.
Scrape off the tips of the radishes with a potato peeler and place them scraped-side-up on the snowman's face for eyes.
Insert the baby carrot for the nose and the raisins as buttons.
Working in long motions, peel off two thin layers of the large carrot with your potato peeler and drape the carrot strips across the snowman's neck like a scarf. You could also snip the ends of the carrot peels with kitchen shears to make the scarf look like it has fringe.
Serve warm.


Candy Cane Popcorn



4 quarts popcorn
2 cups whole nuts (pecans, cashews, peanuts, etc.)
3 cups miniature marshmallows
1 1/2 cups spiced gum drops (omit the black ones)
1 cup butter
1 1/3 cups granulated sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract

Mix popcorn, nuts, marshmallows and gum drops in large bowl.

Melt butter in heavy saucepan. Add sugar, corn syrup and bring to a boil. Stirring, simmer for 3 minutes.

Add vanilla extract. Blend well. Pour over popcorn. Mix, let stand 2 minutes to cool.

With wet hands, shape into cane. Wrap in plastic. Store in cool place.

No Bake Eggnog Cheesecake

No Bake Eggnog Cheesecake



Save this recipe for the holidays, 'cause when your oven is full of roasted turkey or glazed ham and all the trimmings, it's nice to 
know you can make a cheesecake that doesn't need any baking!

Serves: 9

Chilling Time: 3 hr
What You'll Need:

3/4 cup graham cracker crumbs
1/2 cup sugar, divided
1/2 teaspoon ground nutmeg
1/4 cup (½ stick) butter, melted
1 (0.25 ounces) envelope unflavored gelatin
1/4 cup cold water
1 (8 ounces) package cream cheese, softened
1 cup eggnog
1 cup (½ pint) heavy cream

What To Do:

In small bowl, combine graham cracker crumbs, 1/4 cup sugar, nutmeg, and butter; mix well. Press into bottom of 8-inch-square baking dish; set aside.

In small saucepan, combine gelatin and water; stir over low heat 3 to 4 minutes, until dissolved. Remove from heat; set aside.

In large bowl, with an electric beater on medium speed, beat cream cheese and the remaining 1/4 cup sugar until well blended. Stir in dissolved gelatin and eggnog until well blended. Refrigerate 8 to 10 minutes, until slightly thickened.

In a medium-sized bowl, whip cream. Fold whipped cream into eggnog mixture, then pour over prepared crust, cover, and chill 3 to 4 hours before serving.


Notes

For an extra-special holiday look, sprinkle the top with some additional nutmeg.

Cinnamon Rolls

Ingredients
  • Dough::~
  • 4 C all-purpose flour
  • 1 tsp salt
  • C. granulated sugar
  • 1 TBSP active dry yeast
  • C. warm hot milk (very important)
  • 3 eggs, room temp
  • cup unsalted butter, cut in 12 pieces, room temp.
  • Cinnamon Butter::~
  • 1 cup light brown sugar
  • cup all-purpose flour
  • 2½ tsp ground cinnamon
  • Pinch of Salt
  • cup unsalted butter, softened
  • Glaze:::~
  • 1¼ C. powdered sugar
  • 3 TBS Heavy Whipping Cream
  • 6 TBS water
Instructions
  1. For Dough: mix flour, salt and sugar together in a medium bowl, set aside. Give your eggs a quick wisk to mix them
  2. In small bowl mix milk and yeast and stir very well with a wisk until the yeast is dissolved in the milk. If it clumps, your milk is too cold. Let sit for 4-5 minutes.
  3. Add yeast/milk mixture to stand mixer bowl with flat paddle attachment and with the speed on 1, add the eggs and mix for 2 minutes
  4. Flip the speed up to 2 and add the flour mixture ½ C. at a time. your mixture will be dry flaky, that is ok.
  5. Change the attachment to the dough hook and start adding your butter one piece at a time. Mix this for 4-5 minutes until you get a nice big dough ball. Set ball in a large bowl and cover, and let this rise for 1 1.2 hours.
  6. Cinnamon Butter: Add all ingredients to stand mixer with flat paddle attachment and mix low-med speed until smooth. By smooth I mean ready to spread on bread, this will take 3-4 minutes.
  7. Uncover your dough and work out the air bubbles and turn the dough onto a floured surface.
  8. Roll the dough into an 11X18 rectangle
  9. Spread cinnamon butter evenly on the dough. and yes, you can lick the spatula.
  10. Roll the dough on the long side like a jelly roll, and use a bench scraper to slice your dough. Place rolls on pan and cover with plastic wrap, let rise 1 hour.
  11. Preheat oven to 350. Bake rolls for about 35 minutes or when they are golden brown. leave in pan on cooling rack for 5 minutes.
  12. Prepare glaze by mixing the sugar and cream and then the water 2 TBS at a time to thin until it reaches icing consistency. pour on still warm rolls.

Candy Cane Meringue Cookies



Candy Cane Kisses

Makes 70
 

2 egg whites
 
pinch cream of tartar
 
1/4 teaspoon peppermint extract
 
1/2 cup sugar
 
red or green paste food coloring
 

Line 2 baking sheets with parchment and set aside.
 In a medium bowl, beat egg whites with cream of tartar until soft peaks form. Beat in peppermint, then sugar about 2 tablespoons at a time, until stiff glossy peaks form. 

Fit a pastry bag with 1/4 inch plain tip. Use a small clean paintbrush or cotton swab to brush the inside of the bag with 2 stripes of the food coloring, opposite one another.
 Preheat oven to 200F. Spoon meringue into pastry bag. Pipe 1 inch cookie kisses onto baking sheets, 1 inch apart.

Bake until cookies are dry, about 1 1/2 hours. Turn off the oven and let cookies remain in the oven another 30 minutes. Transfer to a wire rack and let cool completely.
 Cookies will keep up to 1 week stored in an air tight container.
