I love hummingbird cake and while blog hopping around I found a delicious recipe for it I just had to share with all ofyou. Find this recipe here

Buffalo Chicken Twice Baked Potato

4 (6-oz.) baking potatoes


1 cup (4 oz.) 2% reduced-fat shredded Cheddar cheese, divided

3/4 cup light sour cream

1 tablespoon Buffalo-style hot sauce

1 (24-oz.) package grilled chicken breast strips

1/4 cup Buffalo-style hot sauce

1 tablespoon butter

3/4 teaspoon chili powder

Toppings: chopped green onions, light sour cream, hot sauce, shredded Cheddar cheese

Wrap each potato with a piece of aluminum foil; place potatoes on a baking sheet. Bake at 425° for 1 hour or until potatoes are tender. Cut potatoes in half lengthwise; carefully scoop out pulp into a large bowl, leaving shells intact. Stir together potato pulp, 3/4 cup cheese, 3/4 cup sour cream, and 1 tablespoon hot sauce. Spoon potato mixture evenly into shells; sprinkle tops evenly with remaining 1/4 cup cheese. Return potatoes to baking sheet, and bake at 425° for 5 to 10 minutes or until Cheddar cheese is melted.
Cook chicken according to package directions for stovetop method. Stir in 1/4 cup hot sauce, butter, and chili powder. Spoon chicken mixture evenly over tops of baked potatoes. Serve with desired toppings.

Banana Cream Pie

1 refrigerated piecrust (such as Pillsbury)

2 to 3 ripe bananas, sliced into 1/4-inch rounds

2 cups Vanilla Pudding

1 cup heavy (or whipping) cream, whipped to a soft peak

chocolate shavings for garnish

Place the piecrust dough in a 9-inch pie plate. Line the pie plate with the dough, then prick the dough several times with a fork. Refrigerate for 10 minutes. Line the dough with foil, tightly fitting it into the edge and up the side. Fill with pie weights or uncooked rice and bake 15 minutes at 400° F. Remove the foil and pie weights and bake an additional 10 minutes or until golden. Let stand until cool. Line the bottom of the pie shell with the bananas. Spoon the pudding over the bananas and smooth to cover. Spread a layer of the whipped cream on top, and garnish with the chocolate shavings. Serve immediately or keep in the refrigerator until needed, for a maximum of 2 hours.

Southern Style Recipe Cheese Grits Casserole


4 cups milk


1/4 cup butter

1 cup uncooked quick-cooking grits

1 large egg, lightly beaten

2 cups (8 oz.) shredded sharp Cheddar cheese

1 teaspoon salt

1/2 teaspoon pepper

1/4 cup grated Parmesan cheese

Preheat oven to 350°. Bring milk just to a boil in a large saucepan over medium-high heat; gradually whisk in butter and grits. Reduce heat, and simmer, whisking constantly, 5 to 7 minutes or until grits are done. Remove from heat.  Stir in egg and next 3 ingredients. Pour into a lightly greased 11- x 7-inch baking dish. Sprinkle with grated Parmesan cheese.  Bake, covered, at 350° for 35 to 40 minutes or until mixture is set. Serve immediately.

You all know our little Princess who is now 2 1/2 years old.

Of course you all know that these two little ones rock our world and have directed it in a way that we would never would have realized just a few years ago.  This next picture is one of my two oldest girls, my son in law and my prince charming my middle son.


My oldest son is currently attending college in search of a degree in education. Here is a picture of him and a few of him and some of his college buds

The Adventures of My Family of 8 Tuesday Blog Hop

Suprise!!! Tuna in Chili

3 pouches (4.5 oz.) StarKist Tuna Creations® Hickory Smoke


1 Green Pepper, diced

1 Red Pepper, diced

½ Sweet Onion, diced

2 tbsp. Canola oil

1 can (16 oz.) Chili Beans

1 can (16 oz.) Light Red Kidney Beans

1 can (28 oz.) Whole Tomatoes

1 package (1.25 oz.) Chili Seasoning Mix

Heat canola oil in large sauté pan on medium heat. Add peppers and onion and sauté for about 5 minutes until just soft. Stir in chili beans, kidney beans, tomatoes and seasoning mix and cook for 10-15 minutes, stirring occasionally and breaking up tomatoes as they heat. Stir in Tuna Creations and cook for 1 -2 minutes. Add water to thin if needed

I've never been a big fan of hard bread. I was reminded of that when I went out to eat at a local Italian restaurant I hadn't been to in a long time and I had some garlic knots that were almost crunchy. That's just not how garlic knots are supposed to be though, so I thought that I would do something better and try to make one on my own.

I had never made garlic knots on my own before, so I went online to try and find a good recipe that I would bale to use with my limited cooking abilities. I went online to come up with the recipe and while I was looking for one that would make soft garlic knots, I came across some information about a wireless internet service and after I read through it some, I decided to Getclearwirelessinternet for our home internet provider.

The soft garlic knots really were great and I made sure not to cook them for too long, which I think was the problem with the ones at the restaurant that I had.

Bacon and Hash Brown Egg Casserole


In 12-inch skillet, cook bacon until crisp. Using slotted spoon. Remove from pan to small bowl. Cover and refrigerate. Drain drippings, reserving 1 tablespoon in pan. Add onion, bell pepper and mushrooms; cook 4 minutes over medium heat, stirring occasionally. Stir in mustard, salt and pepper. In large bowl, beat milk and eggs with wire whisk. Spray 13x9-inch (3-quart) baking dish with cooking spray. Spread half of hash browns in baking dish. Spread onion mixture evenly on top. Sprinkle with 1 cup of the cheese. Spread remaining hash browns over top. Pour egg mixture on top. Cover; refrigerate 8 hours or overnight.  Heat oven to 325°F. Uncover; bake 50 to 60 minutes or until thermometer inserted in center reads 160°F. Sprinkle with remaining 1 cup cheese and the bacon. Bake 3 to 5 minutes longer or until knife inserted in center comes out clean, top is puffed and cheese is melted. Let stand 5 minutes.

These are the local young men who play ball for the highschool taking off for a warm up run before they play the game I remember watching these young men as boys do this same thing as they drop their gloves in a pile on the field and take off on theri run.

Slow Cooker Pork Tacos

2 cups store-bought salsa, plus more for serving




2 tablespoons chili powder

2 tablespoons dried oregano

2 tablespoons unsweetened cocoa powder

kosher salt

1 2 1/2-pound boneless pork butt or shoulder, trimmed of excess fat

18 corn tortillas

1/2 cup fresh cilantro sprigs

3/4 cup sour cream

1 lime, cut into wedges

In a 4- to 6-quart slow cooker, combine the salsa, chili powder, oregano, cocoa, and 1 teaspoon salt. Add the pork and turn to coat.
Cook, covered, until the meat is tender and pulls apart easily, on high for 4 to 5 hours or on low for 7 to 8 hours. Twenty minutes before serving, heat oven to 350° F. Stack the tortillas, wrap them in foil, and bake until warm, about 15 minutes. Meanwhile, using 2 forks, shred the pork and stir into the cooking liquid. Serve with the tortillas, cilantro, sour cream, lime, and extra salsa.


Pork Chop recipe

Pork Chop Marsalas

6 tablespoons all-purpose flour, divided

4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)

Cooking spray

1/3 cup minced shallots (about 2)

2 teaspoons bottled minced garlic

1 (8-ounce) package presliced mushrooms

2 teaspoons chopped fresh thyme

1 cup fat-free, less-sodium chicken broth

1/4 cup Marsala wine or dry sherry

1/4 teaspoon salt

1/4 teaspoon black pepper

Heat a large nonstick skillet over medium-high heat. Place 1/4 cup flour in a shallow dish. Dredge pork in flour. Coat pan with cooking spray. Add pork to pan; cook 4 minutes on each side or until browned. Remove pork from pan. Add shallots, garlic, and mushrooms to pan; sauté 3 minutes or until moisture evaporates. Add remaining 2 tablespoons flour and thyme to pan, and cook for 1 minute, stirring well. Combine chicken broth and Marsala, stirring until smooth. Gradually add broth mixture to pan, stirring constantly with a whisk; bring to a boil. Reduce heat and simmer 2 minutes or until sauce thickens. Return pork to pan; cook 2 minutes or until desired degree of doneness, turning to coat. Sprinkle with salt and pepper.



Elegant Pork Chops
4 double-cut, bone-in pork chops


Kosher salt and freshly ground 


black pepper, to taste

2 cups brown sugar

2 cups soy sauce

1 tbsp. molasses

1 3⁄4 cups ketchup

1 1⁄2 cups chili sauce, such as Heinz

2 tbsp. French dressing

1 tbsp. dry mustard

Put pork chops into a baking dish and season with salt and pepper. In a small bowl, whisk 1⁄2 cup brown sugar, soy sauce, molasses, and 1 cup water and pour over meat. Cover with plastic wrap and let pork chops marinate in the refrigerator for at least 4 hours.  Heat oven to 375°. Drain pork chops and transfer to a 9" x 13" baking dish. Whisk together remaining brown sugar, ketchup, chili sauce, French dressing, mustard, and 1⁄3 cup water in a small bowl. Pour sauce over pork chops and bake, turning pork chops and basting with sauce occasionally, until pork chops are tender and sauce has thickened, about 45 minutes. Let pork chops rest for 10 minutes before serving.

Welch's Grape Juice Blog Tour


 I was delighted when I found out that I had been selected to participate in the MomCentral Welch's "Paint It Purple" blog tour. For one I have loved Welch's grape juice since I was a young teen-age girl. I can remember going to band camp and we were several hours away from home the one thing I found and looked forward to each day was the delicious Welch's grape juice that was chilled and ready to drink at every meal and after the hours of practice in the hot sun. As refreshing and delicious as it was then it still is. We received two (2) 10oz. samples and were rather happy to see them come in the mail I enjoyed them with my husband we toasted each other and then that delicious flavor of the grape juice that I loved as a teen I enjoyed again. I then had to allow my children each a taste and they are very much like me and loved it as well. Now there is grape juice then there is Welch's grape juice. In my opinion Welch's stands out and above them all. Not only a trusted brand but a trusted taste that I can share with others.

We were to come up with a few ideas to "Paint It Purple" and so I thought about it and began to think about some homeschool lessons that me and my kids did together. I hope you enjoy a couple of science experiments and a delicious drink recipe.

Test for Base or Acid

Welch's grape juice

•Vinegar

•A stirring spoon

•Soap

•Jars or glasses

•Baking soda

•Lemon juice

In Give her some grape juice in two jars or glasses. The goal is to experiment to see if she can make the purple grape juice change color. While it may be like a chemical reaction the truth is it is a chemical reaction. Pour a little lemon juice into one of the glasses filled with grape juice.The lemon juice is an acid red.The grape juice is called an indicator because it will indicate (or tell) whether another liquid is an acid. Next, add two spoons of baking soda to the second glass or jar of grape juice. This time the grape juice should turn green. The baking soda is the opposite of an acid. It is what is known as a base. A base will change the color of an indicator from blue to green. Now, see what happens if you add some baking soda to the red liquid (the grape juice and lemon juice). It should change back to purple

Invisible Ink
Invisible Ink is made by mixing half teaspoon of sodium bicarbonate with 30 ml of water.Now using the combination use it to write something on a plain paper. Allow it to dry where you can not tell anything has been done to the paper. Now use Welch's grape juice to paint the paper. You should be able to tell what you have written in the paper.

To continue along on the science route Welch's has developed a site all about Grape Science





Scoop some vanilla ice cream into a milkshake glass. If you want to try a low or nonfat version, freeze 8 ounces of milk in an ice cube tray. Pour some ice-cold Welch's grape juice over the ice cream. For the alternative, add the grape juice to the blender with the frozen milk cubes and a teaspoon of vanilla and blend till smooth. Stir briefly and add a straw. Serve at once. It will be tart and slushy and full of vitamins--perfect for a hot and humid afternoon.

Sweet Easter Cut Out Cookies

Spicy Chicken Sandwiches with Cilantro-Lime Mayo

Mayo:


1/4 cup reduced-fat mayonnaise

2 tablespoons chopped fresh cilantro

1 teaspoon fresh lime juice

1 garlic clove, minced

Chicken:

1/4 cup egg substitute

3 tablespoons hot sauce (such as Tabasco)

1 teaspoon dried oregano

1/4 teaspoon salt

2 (6-ounce) skinless, boneless chicken breast halves

4 1/2 ounces baked tortilla chips (about 6 cups)

2 tablespoons olive oil

Remaining ingredients:

4 (2-ounce) Kaiser rolls, split

12 (1/8-inch-thick) red onion slices

4 lettuce leaves

To prepare mayo, combine the first 4 ingredients.
To prepare chicken, combine egg substitute, hot sauce, oregano, and salt in a large zip-top plastic bag. Cut chicken breast halves in half horizontally to form 4 cutlets. Add chicken to bag; seal. Marinate in refrigerator 2 hours or up to 8 hours, turning bag occasionally.
Place tortilla chips in a food processor; process 1 minute or until ground. Place ground chips in a shallow dish.
Working with one cutlet at a time, remove chicken from marinade, allowing excess to drip off. Coat chicken completely in chips. Set aside. Repeat procedure with remaining chicken and chips.
Heat a large nonstick skillet over medium heat. Add olive oil to pan, swirling to coat. Add chicken to pan; cook 3 minutes on each side or until browned and done. Spread mayo evenly over cut sides of rolls. Layer bottom half of each roll with 3 onion slices, 1 lettuce leaf, and 1 chicken cutlet; top with top halves of rolls.
